MEDITERRANEAN SPREAD
This is the number one requested thing for me to make, which is great because it is sooo easy! This is the best if you spread it on thick bread such as French or farmers bread. Also good with crackers.

SOUTHERN MEDITERRANEAN GOAT CHEESE SPREAD OR DIP
This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

Steps:
- In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened only and stir into goat cheese.
- Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted pita wedges, Syrian bread or anything you wish.
- * 1/4 cup in total. Mix the herb amounts to your preference but you might want to make the parsley the main herb with smaller amounts of the remaining 3.
MEDITERRANEAN GOAT CHEESE SPREAD (WW)
Sun-dried tomatoes are a favorite of ours, so this dip was a must. You can buy herb-flavored goat cheese and experiment with different flavors. NOTE: Gently fold the olives and tomatoes into the cheese mixture; over-mixing may turn the spread an unappetizing purplish pink color. From "WW 5-Ingredient-15 Minute Recipes" and = 1 point. Served on 1 melba toast round = 2 points.

- Combine tomatoes and water in a microwave-safe bowl. Microwave on HIGH one (1) minute or until water boils. Remove from microwave;' cover with plastic wrap and let stand 10 minutes to soften.
- Meanwhile, place cheese in a microwave-safe bowl; microwave on HIGH 15 seconds or until soft. Add sour cream and salt; stir until well blended. Fold in olives.
- Drain tomatoes; finely chop, and fold gently into goat cheese mixture.
- Serve immediately, or cover and chill until ready to serve.

MEDITERRANEAN WALNUT SPREAD

- Drain garbanzo beans, reserving the liquid. In a blender or food processor bowl combine beans and 2 tablespoons of the reserved liquid, the walnuts, basil leaves, olive oil, lemon juice, salt and pepper. Cover and blend until nearly smooth (scrap down sides and add additional reserved liquid if mixture appears stiff).

- Preheat an outdoor grill for high heat, and lightly oil the grate.
- Arrange red bell pepper, eggplant, and onion slices on on the preheated grill; cook until red pepper is charred and eggplant and onion are tender with grill marks, 5 to 7 minutes per side. Place red pepper in a paper bag and close tightly to 'sweat', about 10 minutes; peel the charred skin off the pepper.

MEDITERRANEAN WHITE BEAN SPREAD WITH FRESH HERBS
This spread or dip is a bit different than others I've tried. The flavor reminds me of herbed olive oil that you dip bread into. Fresh herbs are a must, but any white bean can be used in place of the cannellini beans. I used purple basil, which gave the spread a nice color. It is good any way you'd normally use hummus or most any dip, but I think it is especially good on crostini or crackers, or as a sandwich spread. This is adapted from a recipe from Kraft.
