Ready, Set, Cook! Special Edition Contest Entry: A mix of Mediterranean flavors that can be eaten for breakfast or dinner. This recipe came from a few different recipes combined and a little tweak here and there. A one-pot meal that is healthy, fresh and packed with flavor.

12 ounces Simply Potatoes Diced Potatoes with Onion
3/4 cup sun-dried tomato (chopped)
1 red bell pepper (chopped)
1/2 cup red onion (chopped)
4 eggs (scrambled)
1 tablespoon milk
8 ounces fresh spinach (rinsed)
3/4 cup olive (kalamata or black) (optional)
6 ounces goat cheese (can be substituted with feta cheese)
1 teaspoon oregano (dried)
1 teaspoon garlic (granulated or can use minced or fresh as well)
1 tablespoon olive oil
salt and pepper

Steps:

  • Warm saute pan with olive oil. Saute bell pepper, onion, sundried tomatoes, olives, garlic, salt and pepper in saute pan until onion and peppers are soft (about 8 min). Add thawed potatoes (follow directions on bag of Simply Potatoes for thawing instructions) and oregano (until potatoes are heated through). Add spinach and cook for 5 minutes until wilted. Remove pan from heat and add crumbled goat cheese and mix.
  • In separate pan, scramble eggs with a splash of milk. Season with salt and pepper.
  • Add scrambled eggs to top of hash. Enjoy!

A storecupboard, vegetarian fry-up with beans, sweetcorn, avocado and eggs, served with soured cream and tortillas

280g new or waxy potato , cut into cubes
2 tbsp butter
2 tbsp olive oil
1 red chilli , half sliced, half deseeded and finely chopped
1 garlic clove , chopped
1 tsp Cajun seasoning
198g can sweetcorn , drained and rinsed
200g black bean (from a can), drained and rinsed well
2 eggs
1 ripe avocado , chopped
lime wedges, soured cream and warm tortillas, to serve (optional)

Steps:

  • Cook the potatoes in boiling salted water for 5 mins, then drain and let steam-dry. Heat half the butter and oil in the pan and fry the potatoes for about 10-15 mins until golden. Add the chopped chilli, garlic, Cajun seasoning, sweetcorn and black beans, and heat through for about 5 mins, then season.
  • Keep warm in a low oven while you fry the eggs in the rest of the butter and oil until cooked to your liking. Divide the potatoes between 2 bowls and top with an egg, some chopped avocado and the sliced chilli. Serve with lime wedges, soured cream and warm tortillas, if you like.
