Meatloaf with salsa, barbeque sauce, and ketchup. This recipe won the 'Meatloaf' contest at our community hospital; now it's the meatloaf our patients receive!

1 ½ pounds ground beef
2 eggs
½ cup chopped onion
½ cup Italian bread crumbs
½ cup salsa
¼ cup ketchup
¼ cup barbeque sauce
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon celery salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.
  • Bake in the preheated oven until golden brown on top, about 1 hour.

This is a unique meatloaf recipe. Very moist. My friend gave me this recipe and I know she got it out of a magazine but neither one of us know which one! It called for more cilantro and onions and I did cut these back. This is not a pretty meatloaf....just a great tasting one!

2 lbs ground beef
3 eggs
1 cup breadcrumbs
4 garlic cloves, minced
1 small red onion, minced
2 -3 plum tomatoes, chopped
1 1/2 cups shredded monterey jack cheese
1/4 cup brown sugar
1/4 cup cilantro
1/4 cup Worcestershire sauce
2 tablespoons hot sauce
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Mix all ingredients together well.
  • Bake at 350F for 45 minutes.
  • Increase oven temperature to 425°F
  • Bake for 15 minutes more.
  • Let rest 10 minutes before serving.
