MEATLOAF WITH CARAMELIZED ONIONS
I couldn't find a recipe on this site (or elsewhere) for basic meatloaf with caramelized onions in the mix-not meatloaf with a topping of caramelized onions or "stuffed". Because I wanted the caramelized onions to take center stage, for that reason, you won't find any tomato sauce, mushrooms, no cheese, no strips of bacon on top, etc. in this recipe. The recipe was found on lifeisaplate.com and modified to my specifications. You can substitute other types of ground meat or use other meat in combination: turkey, chicken, buffalo, turkey, etc. Use any preferable binder of your choice, for example-finely ground breadcrumbs, almond or walnut meal, masa harina, rice flour. Brown rice was the binder I chose and it was ground to medium-coarse consistency (similar to cornmeal). The recipe was cut in half because I like meatloaf on the small size and save the larger size when I am need of a doorstop.

Steps:
- Melt the butter in a large pan on medium-low heat. Add the onions and sugar; cook until brown and sweet-approximately 20-30 minutes. Lower the heat if the onions are browning too quickly.
- In a large mixing bowl, combine the meatloaf ingredients with the caramelized onions (including all those browned bits at the bottom of the pan!); Do not overmix.
- Transfer the meatloaf mixture to an oiled or parchment-lined loaf pan. (I used a large soup spoon, patting the mixture down and into the corners of the pan. Use the back of the spoon to smooth the top of the loaf.) If desired, lightly sprinkle the top of the loaf with dried parsley.
- Bake at 375 for 45-60 minutes or until the meatloaf is not longer pink in the center.
- Servings are estimated. Cooking time includes caramelizing the onions.

Steps:
- 1. Preheat oven to 350. Spray a large rimmed baking sheet with cooking spray
- 2. Heat 1 teaspoon of the oil in nonstick skillet over medium high heat. Add onion, garlic, sugar, cook stirring occasionally until golden about 10 minutes.
- 3. Transfer to a large bowl. Heat the remaining 1 teaspoon of oil in same skillet. Add mushrooms and cook stirring occasionally until browned about 6-7 minutes. Add to the bowl with the onion allow to cool 5 minutes.
- 4. Stir in the beef, 1/2 cup of the tomato sauce, bread crumbs, egg whites, basil, salt, pepper. until well combined. I like to use my hands to mix it thoroughly.
- 5. Transfer mixture to the baking sheet and form into a 4x9 inch loaf. Spread the remaining 1/2 cup of tomato sauce over the top. You could use brown gravy instead of the tomato sauce if desired. Bake for 45-55 minutes.
- 6. Cut into slices. Tip: If you like a crispier textured loaf, cut slices, and place laying flat on baking sheet. place slices in broiler for about 5 minutes on each side.
HORSERADISH MEATLOAF WITH CARAMELIZED ONIONS

Steps:
- Heat oil in heavy pan, add onions, turn heat to low and let onions cook and caramelize, stirring every few minute until onions are nicely brown (about 30-40 min., don't rush this step, be careful not to burn onions), add garlic & thyme; cook about 2 minute more. When onions have cooked 15 min., preheat oven to 375.
- While onions are cooking put ground beef in a medium bowl, let come to room temp, mix together eggs, sour cream horseradish and worcestershire sauce.
- When onions are done, add bread crumbs and onion mixture to meat, season with salt and pepper, then add egg/sour cream mixture. Use your hands to GENTLY combine until all ingredients are mixed. Handle meat as litttle as possible.
- Spray broiler or roasting pan with non-stick spray, form meat into a loaf shape and place on pan.
- Bake about 1 1/2 hours or until meatloaf is nicely browned on the outside and internal temperature is 155-160 degrees.
- Let meatloaf rest 10-15 minutes before cutting; while it rests, stir together sour cream, may and horseradish to make a sauce.
- Freezes well.
MUSHROOM MEATLOAF
This meatloaf is extremely juicy, and the mushrooms give it an interesting flavor!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
- Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.

My DH loves meatloaf and I have many recipes for it. This is now his favorite - the caramelized onions really add a nice flavor. It does make a large loaf and takes some time to prepare it, but it is worth the work!

- Preheat oven to 350°F
- Oil 13x9x2-inch roasting pan.
- Heat 2 tablespoons oil in large nonstick skillet over medium-high heat.
- Add onions and sugar; sauté until onions are deep golden brown, about 15 minutes.
- Stir in oregano and garlic.
- Add vinegar; cook until evaporated, about 2 minutes.
- Transfer to large bowl and cool.
- Add ground beef, pork, 1 cup crushed tomatoes and next 6 ingredients to onions.
- Mix with fork until just blended.
- Form meat mixture into 10-by-5-inch loaf shape in prepared pan.
- Bake 45 minutes.
- Spread remaining crushed tomatoes over meat loaf.
- Drizzle with 1 tablespoon oil.
- Bake until thermometer inserted into center registers 155°F, about 1 hour.
- Cool 15 minutes.
- Meanwhile, heat 2 tablespoons oil in large skillet over medium-high heat.
- Add mushrooms; sauté until tender, about 12 minutes.
- Season to taste with salt and pepper.
- Cut meat loaf into thick slices.
- Spoon mushrooms and pan juices over.
