This is another meatloaf--everyone makes them. I think it should be proclaimed the national food of the USA. But, this recipe is very good--simple but good. It must be the combination of all that is in it. I like things that are easy. The sauce that goes over this adds to the flavor. I have one other meatloaf that I have listed and both are great. This makes a huge one. If you don't want it as big as it is, see my recipe for Italian Stuffed Pepper (made out of Meatloaf Recipe #102545) and you can use part of this mixture in that recipe which is out of this world.

Number Of Ingredients 14

3 3/4 lbs hamburger
2 slices bread, made into crumbs
1/3 cup oatmeal
4 eggs (beaten)
2 teaspoons salt
1 tablespoon prepared mustard
1 cup tomato sauce
1 medium onion (chopped)
1 (5 ounce) can evaporated milk
4 tablespoons dark brown sugar
1 cup tomato sauce
1/2 cup milk
4 tablespoons prepared mustard
4 tablespoons vinegar

Steps:

  • MEATLOAF:.
  • Mix all the ingredients together.
  • Shape into a loaf in a large greased baking dish.
  • Bake 400 degree oven for 1 hour, basing occasionally with pan juices.
  • SAUCE:.
  • In a saucepan, on the stove, mix the ingredients for the sauce.
  • Bring to a medium boil and simmer for about 3-5 minutes.
  • Serve warm at the table.

Number Of Ingredients 15

2 lb ground beef
1 lb ground pork (unseasoned, not sausage)
1 medium onion, diced or grated
2 to 4 clove garlic, minced
1 large potato, peeled and grated
2 medium zucchini, grated
2 - 3 carrots, grated
1/2 bell pepper, diced or grated
1 c uncooked old fashioned oatmeal
3 large eggs
2/3 c milk
1/2 c ketchup
1 - 2 Tbsp brown sugar
salt to taste (i use kosher salt)
pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees F. Crumble the ground beef and ground pork into a large mixing bowl. Add all ingredients and mix well with your hands. (Disposable kitchen gloves come in handy and help keep your manicure nice for this step but aren't a necessity.)
  • 2. Shape into two large loaves. Bake side by side in a 13x9 inch pan, leaving at least a couple inches between the loaves. (I always use a glass pan but metal works as well) for 1-1/2 to 2 hrs.
  • 3. Let stand for ten minutes after removing from oven.
  • 4. This recipe makes two good sized loaves. It is our tradition that the day after a meatloaf dinner, the leftovers are sliced and fried in a cast iron skillet for sandwiches (on white bread with ketchup), and in order to have leftovers I had to increase the size of the recipe to what you see here.

VENISON MEATLOAF SUPREME

2 pounds venison burger
2 cups soft bread crumbs
1/2 cup venison stock or beef stock base
1/2 cup onion, chopped
2 large eggs, slightly beaten
1 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon sugar
1/4 teaspoon celery salt
1/4 teaspoon dried crushed sage leaves
1/4 teaspoon dried oregano
1/4 teaspoon pepper
2 small tomatoes, peeled, seeded, and halved

Steps:

  • Preheat a 10" Dutch oven to about 350°F. Grease a 9" x 5" loaf pan; set aside. In a large mixing bowl, combine all ingredients but the tomatoes and mix well. Put half of the meat mixture into the loaf pan. Arrange the tomatoes in the middle of the mixture, leaving ½ inch around the edges of the pan. Spread the remaining mixture over the tomatoes, pressing around the edges to seal. Bake until well browned, about 90 minutes. Let stand 10 minutes. Remove to a serving platter. Serves 6 to 8

This is a meatloaf recipe that I got from a friend who I used to work with. It is an awesome recipe and gets your protein and veggies in at the same time. I haven't found a receipe for meatloaf yet that is better than this one.

Number Of Ingredients 12

2 eggs
2/3 cup milk
2 teaspoons salt
1/4 teaspoon pepper
3 slices bread, crumbled
1 onion, chopped
1/2 cup shredded raw carrot
1 cup shredded cheddar cheese
1 -1 1/2 lb lean ground beef
1/4 cup brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard (I use dry)

Steps:

  • Beat eggs lightly, add milk, salt, pepper and bread.
  • Mix until bread is disintergrated.
  • Add onion, carrot, cheese and beef. Mix well.
  • Put into a 9x5" loaf pan.
  • Combine brown sugar, ketchup and mustard. Spread over loaf.
  • Bake at 350oF for 1 hour.
  • Note: I sometimes don't put in as much cheese or use low-fat. Also, I use dry mustard rather than the prepared mustard.

This will be your go to recipe when making a meat loaf. Those whom we have shared this with state it's the best they have ever eaten.

1lb Ground beef
1 lb (Farmland Brand) Pork & Bacon pork sausage
2 Extra large eggs (lightly beaten)
1/2 C Milk
3/4 Sleeve (Ritz) crackers (crushed)
1 Pkg (McCormick) Meat Loaf Seasoning Mix
2 Stalks celery (diced)
1 Med size onion (diced)
2 tbs Butter
1/2 tsp Seasoning salt

Steps:

  • In a large mixing bowl, mix meats well, set aside. In a skillet over med heat melt butter; add celery and onions, cook (saute') until onions appear glassy. In another bowl, add eggs, and milk, mix well; pour over meat and mix well with meat. Add Seasoning Mix to meat mixture. Mix well. Add celery, onions, and cracker crumbs, to meat mixture, mix well.Sprinkle Seasoning salt over meat mixture and mix well one last time.Place meat mixture in an ungreased 9 x 5 inch loaf pan, press and shape mixture into a loaf.Bake in 375F oven for 1 hour 20 minutes or until cooked through.
