Italian Cheese-Stuffed Meatloaf image

Cut slices of this juicy meatloaf, intensely flavored with herbs and prepared roasted peppers, to reveal a luscious center of melted cheeses.

2 eggs
1 1/2 lb lean (at least 80%) ground beef
2 cups soft French bread crumbs
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup chopped fresh basil or 1 1/2 teaspoons dried basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
4 cloves garlic, minced
1 can (8 oz) pizza sauce
1 1/2 cups shredded provolone cheese (6 oz)
1 jar (7.25 oz) roasted red bell peppers, drained, chopped
1/4 cup chopped ripe olives

Steps:

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.
  • Bake 40 minutes. Remove from oven; spoon remaining pizza sauce over loaf. Insert meat thermometer so bulb reaches center of loaf.
  • Return to oven; bake 15 to 20 minutes longer or until loaf is thoroughly cooked in center and thermometer reads 160°F. Let stand 10 minutes before slicing.

2 pounds lean ground beef
1 cup pasta sauce
½ cup Italian-style bread crumbs, or more as needed
¼ cup minced onion
¼ cup ketchup
1 egg, beaten
2 large cloves garlic, minced
½ teaspoon oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.
  • Spread 1/2 the meat mixture into the bottom of a loaf pan. Spread mozzarella cheese over the center of the meat. Spread remaining meat mixture over the cheese, pressing edges of meat together on the sides to seal in the cheese.
  • Bake in the preheated oven until meat is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 1/2 lb ground beef
1 egg
3/4 c. crushed saltine crackers
1/2 c. chopped onion
2 cans tomato sauce (8 oz each)
1 tsp salt
1/8 tsp ground black pepper
1/2 tsp dried oregano
2 c. shredded Mozzarella cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl combine all ingredients EXCEPT cheese and 1 can tomato sauce. Shape mixture into a 10'' x 12'' rectangle on a piece of wax paper. Sprinkle 1 1/34 c. cheese over the meat.
  • Roll up the meat, beginning on the long side of the rectangle and pulling back the wax paper as you go. Press ends to seal. Place on large baking sheet.
  • Bake for 1 hour. Drain off grease. Pour remaining tomato sauce over loaf and sprinkle with remaining cheese. Bake 15 more minutes or until cheese is melted.

2 pounds ground beef
2 eggs
1 cup bread crumbs (up to 1 1/2 cups)
1 cup grated Parmesan
1 tablespoon Italian seasoning
1 tablespoon black pepper
2 tablespoons fresh chopped parsley leaves
2 cloves garlic, minced or pressed
1 onion, diced
1/2 cup ketchup
1/4 cup Worcestershire sauce
1 cup milk
8 slices cheddar
8 slices baked ham
8 slices bacon

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, breadcrumbs, Parmesan cheese, herbs, garlic, onion, ketchup, Worcestershire. Mix well, gradually adding the milk (if it seems too moist, add bread crumbs until it is a consistency that will form a loaf without flattening. Spray a large baking or roasting pan with a non-stick spray and press the meatloaf out. Layer cheese slices and ham, covering the center line of the meatloaf, then close it together and tuck in the ends, forming a loaf which is oblong. Criss-cross the bacon strips to cover the loaf. Bake for 35 to 45 minutes or until the meat thermometer registers 160 degrees F.
  • Let rest 15 minutes, then cut and serve. Gravy is optional.

100 g pasta (like rotini, or lasagne, or spaghetti)
1/4 cup breadcrumbs
1 tablespoon white wine
12 ounces ground round
12 ounces ground turkey
2 garlic cloves, finely chopped
3 1/2 ounces mushrooms, finely chopped
2 eggs, beaten
1 tablespoon italian seasoning
1/4 cup sour cream
4 green onions, finely chopped
2 tablespoons parsley, finely chopped
1/4-1/2 cup spaghetti sauce

Steps:

  • Grease loaf pan.
  • Cook pasta until al dente (good way to use up leftover pasta), drain set aside.
  • Soak breadcrumbs in wine.
  • Add beef, turkey, eggs, garlic, mushrooms, Italian seasoning, green onions and sour cream to breadcrumb mixture.
  • Place half the meat mixture into greased loaf pan.
  • Form a trough through the meat along the length of the loaf pan.
  • Fill the trough with the pasta and two tablespoons of sauce.
  • Cover with remaining meat mixture.
  • Top with spaghetti sauce.
  • Bake for 50-60 minutes draining excess fat and juices at least twice.
  • Cool at least 5 minutes before serving.

2 large onions, finely chopped
2 carrots, peeled and finely chopped
3 celery stalks, finely chopped
2 tablespoons chopped fresh rosemary leaves
3 garlic cloves, chopped
2 (7.4-ounce) jars roasted peeled whole chestnuts, coarsely broken
1/4 cup chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Whisk the first 7 ingredients in a large bowl to blend. Stir in the Parmesan and bread crumbs. Mix in the beef, pork, and veal. Pack half of the meat mixture into a 9 by 5 by 3-inch loaf pan. Spoon the stuffing over the meat in the pan, leaving a 1-inch border around the edges. Top with the remaining meat mixture, enclosing the stuffing completely and pressing firmly.   • Preheat oven to 350 degrees F.
  • Butter a 15 by 10 by 2-inch glass baking dish. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the pancetta and saute until crisp and golden, about 10 minutes. Using a slotted spoon, transfer the pancetta to a large bowl. Melt the remaining butter in the same skillet over medium-high heat. Add the onions, carrots, celery, rosemary, and garlic. 2 lbs ground sirloin (I also added 1/3 lb ground turkey breast)
1 large egg white
1 cup tomato juice
salt and pepper
1 teaspoon garlic, minced
1 teaspoon dried oregano leaves
1 onion, chopped
4 ounces mozzarella cheese (I used shredded Mozzarella) or 4 ounces provolone cheese (I used shredded Mozzarella)
1/2 cup frozen spinach (I used chopped fresh)
1/2 cup red pepper, roasted, jarred, chopped (I roasted my own fresh with olive oil spray 10 min at 425 degrees)

Steps:

  • Preheat oven to 350 degrees.
  • Combine in large bowl: sirloin/turkey, egg, tomato juice, salt and pepper, garlic, oregano, onion.
  • Put 1/2 mixture in 9x5x3 loaf pan coated with cooking spray. (I could only find 11x5x3 sorry!).
  • Layer on Cheese, Spinach, Peppers.
  • Cover with remaining meat mixture.
  • Bake for 1 hr, until meatloaf is done.
  • cool to room temp, wrap, freeze up to 3 months.
  • remove from freezer, thaw.
  • bake at 350 degrees for abt 20-30 min until heated through.
  • OR, slice and re heat in microwave.
  • can top with a bit of spaghetti sauce if desired.
