I often serve these meatballs as an appetizer at parties or over steamed rice as a main entree for dinner.

1 egg
1 medium onion, finely chopped
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound lean ground beef (90% lean)
2 tablespoons canola oil
SAUCE:
1 can (20 ounces) pineapple chunks, undrained
2 medium green peppers, julienned
1/2 cup sugar
3 tablespoons cider vinegar
1 tablespoon canola oil
1 tablespoon soy sauce
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown meatballs in oil, turning often. Remove with a slotted spoon and set aside; drain., To the skillet, add the pineapple, green peppers, sugar, vinegar, oil and soy sauce. Cover and simmer until tender, about 5 minutes. Return meatballs to skillet; simmer until meat is no longer pink. , Combine cornstarch and water until smooth. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened.

1 can (20 ounces) pineapple chunks
1/3 cup water
3 tablespoons vinegar
1 tablespoon soy sauce
1/2 cup packed brown sugar
3 tablespoons cornstarch
30 frozen fully cooked Italian meatballs (about 15 ounces)
1 large green pepper, cut into 1-inch pieces
Hot cooked rice

Steps:

  • Drain pineapple, reserving juice. Set pineapple aside. Add water to juice if needed to measure 1 cup; pour into a large skillet. Add 1/3 cup water, vinegar, soy sauce, brown sugar and cornstarch; stir until smooth. , Cook over medium heat until thick, stirring constantly. Add the pineapple, meatballs and green pepper. , Simmer, uncovered, until heated through, about 20 minutes. Serve with rice.

1/2 lb frozen meatballs (anykind)
1 (8 1/4 ounce) can pineapple chunks
2 cups sodium-reduced chicken stock
3/4 cup ketchup
1/2 cup onion, finely chopped
2 sweet bell peppers, cubed (any color)
3 tablespoons white vinegar
2 tablespoons sodium-reduced soy sauce
1 tablespoon cornstarch
2 cups minute rice instant rice
2 green onions, chopped (optional)

Steps:

  • Combine the meatballs, pineapple, chicken stock, ketchup, onion, peppers and vinegar in a Dutch oven. In a small bowl, whisk the soy sauce with the cornstarch until smooth. Stir into the meatball mixture.
  • Cook over medium-high heat, stirring often, for 10 minutes, or until the mixture comes to a boil and the sauce is thickened slightly. Stir in the rice and return to a boil. Remove from the heat.
  • Cover and let stand for 10 minutes. Stir in the green onions (if using).

1 pound ground beef
2 tablespoons finely chopped onion
1 large egg, beaten
3 ½ tablespoons cornstarch, divided
¾ teaspoon salt
1 dash ground black pepper
1 tablespoon vegetable oil
1 (8 ounce) can pineapple chunks, undrained
1 cup pineapple juice, or as needed
¾ cup white sugar
½ cup water
1 tablespoon water
¼ cup white vinegar
2 tablespoons white vinegar
1 ½ tablespoons soy sauce
2 green bell peppers, cut into thin strips
2 cups hot cooked white rice

Steps:

  • Combine ground beef, onion, egg, 1 tablespoon cornstarch, salt, and pepper in a bowl. Use a cookie scoop to shape into meatballs.
  • Heat oil in a large skillet over medium heat. Add meatballs and cook, turning often, until browned and no longer pink in the centers, 7 to 10 minutes. Remove meatballs from the skillet and drain oil, reserving 1 1/2 tablespoons of drippings.
  • Drain pineapple chunks from the can, reserving juice; set pineapple aside. Add enough additional pineapple juice to make 1 1/2 cups total.
  • Combine pineapple juice, sugar, 1/2 cup plus 1 tablespoon water, 1/4 cup plus 2 tablespoons vinegar, soy sauce, and remaining 2 1/2 tablespoons cornstarch in a bowl; mix well. Stir into drippings in the skillet.
  • Cook over medium heat, stirring constantly, until smooth and thickened. Add meatballs, pineapple chunks, and bell peppers. Cook until thoroughly heated, coating well, about 5 minutes. Serve over hot cooked rice.

I got this recipe from my Granny and it is one of my favourites. Best served over rice or egg noodles.

1 lb ground beef or 1 lb pork
2 tablespoons steak or 2 tablespoons Worcestershire sauce
1 egg (lightly beaten)
1/2 cup soft breadcrumbs
1/2 teaspoon garlic powder
1 teaspoon salt
1 (8 ounce) can pineapple chunks in juice
1 cup carrot (sliced)
1 cup celery (sliced)
3/4 cup beef broth
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 tablespoon cider vinegar
1/4 teaspoon ginger powder
1 teaspoon cornstarch
1 large green pepper (cut in strips)

Steps:

  • Combine ingredients for meatballs and form into balls (approx. 36).
  • In oiled skillet on medium heat, brown meatballs.
  • After meatballs have been browned, add all other ingredients except the green peppers.
  • Reduce heat, cover and simmer for 7 minutes.
  • Add green peppers and cook for an additional 6 minutes or so uncovered until meatballs are completely cooked and veggies are to desired tenderness.
  • Serve over rice or egg noodles.
  • Enjoy!

This is a family favourite; my teenage son eats at least 2 servings himself. Cooking time includes the browning of the meatballs, although you can brown them in the oven on a cookie sheet and make the sauce at the same time, saving yourself a little time.

2 lbs lean ground beef
2 large eggs
1/2 cup fine dry breadcrumb
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1 cup packed brown sugar
3 tablespoons cornstarch
1 3/4 cups reserved pineapple juice, plus water if necessary to measure (it will be)
1/4 cup white vinegar
1 1/2 tablespoons soy sauce
1 1/2 teaspoons Worcestershire sauce
1 (14 ounce) can pineapple tidbits, juice drained and reserved (see above)

Steps:

  • Preheat oven to 350F degrees.
  • First, make the meatballs: combine all meatball ingredients (there's 7, beef to garlic powder) in a bowl and mix well; shape into 1-inch balls.
  • Brown them in a nonstick frying pan (I do it in 3 batches) until browned all over; drain on paper towel then place in a large ungreased casserole dish.
  • To make sauce, combine brown sugar and cornstarch in a large saucepan, then whisk in the 1-3/4 cup pineapple juice/water combination until mixture is smooth.
  • Add vinegar, soy sauce and worcestershire sauce; stir.
  • Simmer, uncovered, on medium-low heat for about 8 minutes, or until thickened.
  • Pour sauce over meatballs and add pineapple tidbits; stir gently to combine until meatballs are coated with sauce.
  • Bake in preheated oven for 30 minutes.
  • If you want a lot, this recipe doubles well.
