During World War II, when meat was rationed and had to be purchased with tokens, this recipe went a long way in feeding a family. To this day, I still reach for it whenever I want something different from regular hamburgers. Steps:
- Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

MEATBALLS OR MEAT SQUARES
Do you like meatballs - but hate the work? Well here is an easy way to fix that problem - using a rectangle baking sheet form the meatball mixture into a square and bake them. This is a nice recipe to make ahead and freeze.

Steps:
- Heat oven to 425 degrees.
- Line a 15x10x1 baking pan with foil; spray the foil with nonstick cooking spray.
- In a large bowl beat eggs, stir in remaining ingredients making sure to mix well.
- Shape beef mixture into the baking pan.
- Cut into squares; do not separate.
- Bake 425 for 20 25 minutes or until meatballs are thoroughly cooked and no longer pink.
- Cut apart and ta-da you have meat squares without the muss and fuss!
- These may be frozen for use at a later time.

CRISPY POTATO SQUARES
I found this recipe in a Cooking Clips recipe folder that I've had for a looong time! No idea where it is originally from but it's another great way to make potatoes!

Steps:
- Preheat oven to 425 degrees.
- Pour 3 T. oil into an 8 inch square pan and heat in preheated oven while preparing potatoes.
- Drain potatoes and onions thoroughly and pat dry with paper towels, if necessary.
- Mix potatoes and onion with egg yolks, flour, salt and pepper.
- Beat egg whites until stiff but still moist peaks form; gently fold into potato mixture.
- Remove pan from oven and spoon in potatoes; smooth top and drizzle with remaining tablespoon of oil on top.
- Bake in oven for 45 to 60 minutes or until tender and crusty.
- Serve hot.

EASY CHEESY GOLDEN POTATO SQUARES
Since my DH and DS could make a meal just on taters, I'm always searching for new and great tater recipes, this one happens to be a really good one. If you like some heat add in some cayenne pepper or chopped jalapeno.

Steps:
- Peel the potatoes and place in cold water to prevent turning dark; set aside.
- Set oven to 350 degrees.
- Grease a 13 x 9-inch baking dish.
- Melt butter in a large skillet.
- Add in onion and garlic; saute until soft (about 5-6 minutes).
- Add in the evaporated milk and bring to a boil, then remove from heat.
- In a large bowl, combine the eggs, salt and pepper; beat until frothy.
- Shred the potatoes, and add to the egg mixture; toss to combine.
- Add in the milk mixture; stir to combine.
- Set aside about 1 cup of cheese and add the rest to the potato mixture, and mix well.
- Transfer the mixture to prepared baking dish.
- Bake for about 45 minutes.
- Remove from oven and sprinkle the remaining cheese on top and return to oven, bake for an additional 25-30 minutes.
- Cut into squares and serve hot.

- Peel 4 medium large potatoes and grate directly into 1 cup of milk in a well buttered 8 inch square baking pan.
- Grate a small onion into the milk and add 3 Tbsp chopped green pepper, grated cheddar cheese, salt and pepper to taste. Beat 3 eggs well and combine. Dot with 2 tsp of butter.
- Bake at 350 F for about 50 minutes to 1 hour or until the pudding is richly browned.
- Cut into squares to serve.
