During World War II, when meat was rationed and had to be purchased with tokens, this recipe went a long way in feeding a family. To this day, I still reach for it whenever I want something different from regular hamburgers. - Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

HAMBURGER CASSEROLE WITH MASHED POTATOES
Steps:
- Gather the ingredients. Heat the oven to 350 F.
- In a small bowl, soak the breadcrumbs in milk.
- In a large bowl, mix the ground beef with the bread crumb mixture, along with the salt, pepper, onion, and the beaten egg .
- Pat the meat mixture into a 9-inch pie plate. Bake in the preheated oven for 30 minutes. Remove the ground beef from the oven and carefully pour off the excess fat.
- Top the meat with the mashed potatoes; sprinkle with cheese. If desired, sprinkle lightly with paprika.
- Return to oven for about 15 minutes longer, or until the cheese is melted and potatoes are thoroughly heated.

HAMBURGER GRAVY WITH MASHED POTATOES
This is my hubby's all time favorite recipe! He never had it growing up; how can that be? I thought it was a "staple" that every 50's housewife had. I know my Mom (rest her soul) made this alot when I was growing up. Anyway, he and the kids just love this. Hope you like it too.

- 1. In a large skillet w/ 2 tsp olive oil brown the hamburger and chopped onion. Add salt and pepper to taste. Stir until ground meat is no longer pink and the onions are soft.
- 2. Stir in the flour and add the milk, stirring constantly until gravy starts to thicken. Add Kitchen Bouquet for color (opt) and if not as thick as you would like stir 4-tbls flour into a cup of hot water and stir until flour absorbed. Then slowly add to your gravy as much as you need. Be careful of adding too much because then you will need to add more milk! Salt and pepper again if needed.
- 3. Serve over your mashed potatoes. My family likes this served with green beans. Enjoy!

- Make the masher: place the potatoes in a saucepan and cover by 1 inch with water.
- Place over high heat and bring up to a bubble.
- Add some salt and boil the potatoes until tender, about 12 minutes.
- Turn off the heat.
- Drain the potatoes and return to the pot; let them sit for a minute to dry out.
- Add the cream, the butter, and egg.
- Mash with a potato masher or fork.
- Add the chives and season with salt and pepper; continue to mash to a fairly smooth consistency.
- While the potatoes are cooking, start on the burgers-in a large bowl, combine the beef, Worcestershire sauce, parsley, and the grated onion (grate it right over the bowl so the juices fall into the meat); season with salt and pepper and mix thoroughly.
- Score the mixture into 4 equal portions and form them into patties slightly thinner at the center that at the edges.
- Heat the oil in a large skillet over med-high heat.
- Cook the burgers, flipping once, 10 minutes for medium.
- Slather the roll bottoms with mustard and top with the watercress, burgers, and a pile of mashers.
- The mashers will be the glue to hold the roll tops in place.

- Preheat the oven to 350 degrees F (175 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add yellow onion, bell peppers, celery, and 1/2 of the green onion; saute until vegetables are soft, about 5 minutes. Add garlic, tomato sauce, 1/2 of the parsley, paprika, garlic powder, onion powder, red pepper flakes, meat tenderizer, salt, and pepper; cook until fragrant, about 1 minute. Stir in Worcestershire sauce and browning sauce. Drain oil and remove from the heat.
- Line the prepared baking dish with refrigerated biscuits; divide them evenly and spread out to cover the pan, overlapping if necessary. Spread drained ground beef mixture evenly on top of the biscuits. Spread diced tomatoes over the beef, then evenly scatter frozen vegetables. Spread mashed potatoes over the top, and sprinkle with remaining green onions, Cheddar cheese, and remaining parsley. Cover with foil.
- Bake in the preheated oven for 25 to 30 minutes. Remove foil and bake until cheese is golden and melted, another 5 minutes. Serve immediately.

- Brown ground beef and drain fat.
- Add the soup and green beans.
- Spoon into a casserole dish.
- Prepare the mashed potatoes according to package directions.
- Spread over the top of casserole ingredients.
- Sprinkle with the cheese.
- Bake at 350°F for 30 minutes, or until cheese is bubbly.
- Note: You can be creative.
- Add chili powder or cumin and chopped jalapeño pepper for a Mexican flair.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium skillet over medium heat, brown the ground beef; drain fat.
- In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.
- Alternately layer the potatoes, soup mixture and meat in a 11x7 inch (2 quart) baking dish. Bake in the preheated oven for 1 to 1 1/2 hours, or until potatoes are tender. Top with Cheddar cheese, and continue baking until cheese is melted.
