1/2 cup vegetable oil
3/4 cup all-purpose flour
4 tablespoons creole seasoning
1 cup onion, diced
1/2 cup red bell pepper, diced
1/2 cup celery, diced
1 1/2 cups andouille sausages, diced
3 tablespoons garlic, chopped
1 cup okra, trimmed and sliced
6 cups cold chicken stock
2 bay leaves
4 chicken thighs (large size, deboned, cut into 1 inch cubes and seasoned liberally with Creole Seasoning)
2 tablespoons Worcestershire sauce
hot sauce, to taste
kosher salt, if necessary
2 tablespoons Italian parsley, chopped
1/4 cup green onion, thinly Sliced
creole boiled rice, for serving

Steps:

  • Mix your onion, celery, and bell pepper together: The Holy Trinity.
  • Heat the oil in a cast iron dutch oven over medium heat, whisk in the flour to make a milk chocolate colored Roux.
  • Add the Andouille, 1 Tbsp of Seasoning, and 3/4 of the Holy Trinity, cook, stirring often, for about ten minutes or until the vegetables soften, add the cold stock, remaining seasoning, okra, remaining trinity, and Garlic.
  • Bring to a boil then bring this down to a simmer, add the thigh meat and let it go for at least 2 hours, stirring occasionally. About 10-15 minutes before you're ready to serve add the Worcestershire, hot sauce, and 1/2 of the Green Onions.
  • Serve with Creole Boiled Rice, crusty French bread.
  • Garnish with green onions, and the parsley.

I'm a coward when it comes to okra. Yes, I know it is used for its thickening qualities, but I just can't bring myself to use this vegetable.

1/4 cup flour
1 teaspoon salt
1 (3 lb) chicken, cut into 8 pieces
1/4 cup vegetable oil
1 1/2 cups onions, chopped
1 cup celery, chopped
1 cup green onion, chopped
3 garlic cloves, pressed
1 quart chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 bay leaf
2 teaspoons pepper sauce, Original TABASCO brand
1 (10 ounce) package frozen whole okra
hot cooked rice

Steps:

  • Combine flour and salt in a plastic or paper bag.
  • Add chicken pieces, close bag, and shake to coat well.
  • Heat oil in a large, heavy Dutch oven over medium-high heat.
  • Shake excess flour from chicken and place in hot oil, cook until browned on all sides, about 10 minutes.
  • Remove chicken from pot and set aside.
  • Add onion, celery, green onion, and garlic to pot and cook 5 minutes, stirring often.
  • Return chicken to pot.
  • Stir in broth, tomatoes, bay leaf, and TABASCO Sauce and bring to a boil; reduce heat and simmer, uncovered, 45 minutes, stirring occasionally.
  • Add okra and cook 10 minutes longer.
  • Serve in bowls and top each serving with a scoop of rice.

OKRA AND TOMATOES (A.K.A. OKRA GUMBO)

I havent seen too many Okra recipes on Zaar, so i decided to post my favorite. My Grandmother taught me how to make this dish when I was 11, and I've been making it ever since. Its a great along side smothered steak and mashed potatoes, or rice.

8 slices bacon
1 large onion, chopped
2 (16 ounce) bags frozen cut okra (or 2lb. fresh okra, sliced into 1/2 inch pieces)
2 (14 ounce) cans diced tomatoes, undrained
salt and pepper

Steps:

  • Fry bacon in a large skillet that can be covered, until crisp. Remove from skillet and drain on paper towels. Saute onion in bacon drippings until tender. Add okra and tomatoes, stir to blend. Cover, reduce to low heat. Cook for about an hour, or until okra is tender, stirring occasionally. Do not stir too much or too briskly, because the okra will fall apart. Season with salt and pepper, to taste.
  • **Note: Nanny diced the bacon and fried it and the onion together. My family doesn't like the bacon cooked into it because the bacon becomes soft. If you do it my way, you can sprinkle the bacon on right before serving.

3 teaspoons butter
1 medium onion (diced)
3 plum tomatoes (diced)
1 teaspoon minced garlic
1/2 cup v- 8 vegetable juice
1 teaspoon sugar
2 cups frozen cut okra
2 cups long grain rice
1 lb ham steak

Steps:

  • In a saucepan over medium heat, add butter and diced onions.
  • Cook onions until translucent, turn heat to low.
  • Stir in V-8 juice and sugar, cover.
  • In a deep frying pan over medium heat add butter and ham.
  • Brown ham on both sides, then add tomatoes, okra and V-8 and onions.
  • Stir, cover and simmer on low heat.
  • Cook 2 cups of rice according to package directions.
  • After rice is cooked, place on platter. Remove ham steak, cut in four pieces and lay on top on top of rice.
  • Pour tomato and okra mixture on rice and ham.
  • Garnish with fresh parsley.
