A rich, crisp, sugar type cookie that is easy to make. The mayonnaise takes the place of the shortening and eggs. My son says it is possibly the world's best cookie.

Number Of Ingredients 6

1 cup white sugar
2 cups all-purpose flour
1 cup mayonnaise
1 teaspoon baking soda
1 pinch salt
1 teaspoon vanilla extract

Steps:

  • Mix together sugar, flour, baking soda, and salt. Add mayonnaise and vanilla. Mix together very well.
  • Shape into walnut sized balls. (The dough will be crumbly). Mash with a fork, sprinkle with sugar. Bake 12 minutes in a 350 degree F (175 degrees C) oven.

I got this recipe from my niece who made them in her first cookery class at school. Very simple and unusual.

Yield 20-30 biscuits

Number Of Ingredients 7

500 g flour
250 g sugar
250 ml mayonnaise
1 teaspoon vanilla bean paste
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup sugar, extra

Steps:

  • Sieve flour and baking powder, set aside.
  • Mix the mayonnaise, sugar, salt and vanilla paste.
  • Add the flour to the mayonnaise and mix well.
  • Depending on the brand of mayonnaise you may need to add an extra tablespoon of flour if it is still sticky.
  • Form into small balls and roll in extra sugar.
  • Place onto baking tray and bake for 10-12 minutes.
