Number Of Ingredients 7

8 tablespoons butter
8 ounces dates, pitted and chopped
2 egg yolks
¾ cup white sugar
1 cup crisp rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat combine the butter, dates, egg yolks and sugar. Bring to a boil and cook for 2 minutes. Remove from heat stir in the rice cereal, chopped pecans and vanilla. Stir and let cool.
  • When you can handle roll into small balls then roll in confectioners' sugar.

1 cup butter
1 cup firmly packed brown sugar
8 ounces chopped dates
1 egg
3 cups crisp rice cereal
4 cups sweetened flaked coconut
1/2 cup chopped maraschino cherry, drained
1 tablespoon vanilla

Steps:

  • Melt butter in 10-inch skillet; stir in brown sugar and dates. Remove from heat. Stir in egg; return to heat. Cook over medium heat, stirring constantly, until mixture comes to a full boil (4 to 6 minutes). Boil, stirring constantly, 1 minute.
  • Remove from heat; stir in 1 cup coconut and all remaining ingredients until moistened. Let stand 10 minutes.
  • Shape rounded teaspoonfuls into 1-inch balls; roll in remaining coconut.

1/4 cup margarine
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 cup pecans, chopped
1 cup dates, chopped
2 tablespoons white syrup
1 teaspoon vanilla
3 cups Rice Krispies
1 (14 ounce) bag coconut

Steps:

  • Cook the first 7 ingredients over medium head for 8 minutes.
  • Stir constantly.
  • Add vanilla and rice krispies and shape into balls.
  • Roll in coconut, let cool.

I got this recipe from my younger sister. She calls them Angel Cookies. The filling will be very hot so use caution when rolling. I love them because they are sweet, chewy and crispy.

8-10 oz dates, chopped
1 c sugar
1/2 c butter
1 tsp vanilla extract
2 c rice krispies
1/2 c pecans, chopped
1 c coconut, flaked
NOTE: MAY DECREASE RICE KRISPIES BY 1/4 -1/2 CUP TO BE ABLE TO FORM BALLS BETTER WITHOUT THEM GETTING TOO DRY. ALSO SOME PEOPLE USE AN EGG IN THEIR RECIPE, THIS ONE DOES NOT CALL FOR AN EGG BUT YOU MAY ADD ONE IF YOU LIKE.

Steps:

  • 1. Melt butter in large heavy skillet. Add chopped dates and sugar. Cook over low heat, stirring frequently for about 4-5 minutes, until thick and bubbly.
  • 2. Remove from heat; add vanilla, rice cereal and pecans.
  • 3. When just cool enough to handle, form into small balls and roll in coconut.

1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup fat-free milk
1 cup chopped dates

Steps:

  • In a bowl, cream butter and brown sugar. Add egg; mix well. Combine the flours, lemon zest, baking powder, cinnamon, nutmeg and salt; add to creamed mixture alternately with milk, beating well after each addition. Stir in dates., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325° for 13-15 minutes or until golden brown. Remove to wire racks to cool. Store in an airtight container.
