THE MASTER MIX (HOMEMADE BISQUICK SUBSTITUTE)
This recipe is in response to a discussion on the boards about Bisquick. Bisquick is apparently not available in the country where the originator of the thread lives. I prefer to use this in recipes that call for 'Bisquick' rather than purchase it, myself. If stored in the freezer, this will keep for several months. I hope you find this as handy as I do, since I could never keep 'Bisquick' on hand before. If I recall correctly, I think this came from one of my Make a Mix Cookery cookbooks.

- In a large pan, stir the dry milk, baking powder, sugar and salt into the flour; mix thoroughly.

DRY CHIMICHURRI MASTER MIX/RUB

She says to rub the dry mixture into meats before grilling or roasting, use with vegetables, sprinkle over pizza before cooking, create chimichurri hamburgers or add to salads or dressings. - In your largest bowl, stir together the flour, baking soda, salt, brown sugar, and white sugar. Add the shortening and stir until mixture is mealy. Lightly stir in the chocolate chips and butterscotch chips until they are distributed evenly. Place 4 cups of the master mix into each 1 quart jar.
- Attach the following directions to the jar: Preheat oven to 375 degrees F (190 degrees C). In a medium bowl, beat 2 eggs and 1 teaspoon of vanilla until well blended. Add entire contents of the jar to the bowl, stir until combined. Drop by teaspoonfuls onto cookie sheet and bake in the preheated oven for 10 to 12 minutes. This recipe makes about 2 dozen.

MASTER SCONE MIX
I got this scone recipe from Ana Olsen's bake show. Its lovely and rich. Then I decided to make a dry master mix to store in the cupboard ( like Bisquick). Then when I want to make scones, I just measure out the wet ingredients, and mix with the measured dry ingredients, bake and there you are. Fast, and delicious! This mix makes 3 batches.

- Mix the dry ingredients and the lemon zest together.
- Add the cold butter that has been cut into small pieces.
- Slide your hands though the mixture making curls of the butter,.
- ( this will make a flaky product).
- Store in a cupboard up to one month.

ZUCCHINI MASTER MIX FOR- MEATBALLS, BURGERS, MEATLOAF !
I made up this recipe to save money and time... and make a healthier version of our family favorites! We sometimes make the burgers on the outdoor grill or in a skillet in the kitchen... either way is good. I saved money by using zucchini to "pump up the volume" I saved time by making a few different things from one recipe. I made it healthier by adding the veggies! *** Sometimes we add additions things like peppers and minced mushrooms. It is moist and tasty for all of the recipes made from this Master Recipe!

- In a very large bowl (a roast pan will work too), put in onions and zucchini you prepared. Tilt the bowl by placing a folded towel under the end where the veggies are at. Add the eggs to the zucchini liquid. Beat together well. Add the spices and garlic, beat together and stir in the bread crumbs (the bread crumbs will soak up the liquid and be thick) Mix the veggies in well. (Depending on size and thickness of bread slices, you may need to add more bread). This should be about the same thickness as the meats.
- Add the two meats in and knead with your hands to blend all together well. Let this sit for five minutes.
- BURGERS: Form 14 of the size patties you like. Either cook on the outdoor grill or in a skillet. Make them into burgers on a bun the way you like them, or make Salisbury Steaks of them by making a thick gravy to go over them and serve with mashed potatoes and veggies.
- Place patties on metal baking sheet. Freeze.
- When totally frozen, place the patties into zipper bags with wax paper between the patties. Place back into the freezer until ready to use them.
- MEATLOAF: Form into a loaf shape and bake in a 8x8 or 9x9 inch pan (be sure to leave room all the way around the "loaf" for fat drippings). Place in a 350 degree oven and bake for 45 minutes or until done to your liking. Cool and Freeze until needed. Or if serving right away, During the last 15 minutes of baking, drain the oil from the pan and pour either a large can of tomato soup or a large can of spaghetti sauce over the top of the meatloaf and return it to oven to finish baking. Serve with mashed potatoes and corn.
- *** You can make many recipes using this meat mixture. *** Sometimes when I am in a hurry, I just freeze the raw mixture in zipper bags for future use.
GROUND BEEF MASTER MIX

- Set oven to 350 degrees.
- In a 8-quart oven-proof skillet, or roaster, melt butter over low heat.
- Crumble beef into skillet and increase heat.
- Cook until no more pink remains; add in onions, garlic (if using), green pepper and celery.
- Cook just until veggies are tender.
- Add soup, tomato sauce, salt and pepper; cover and bake in 350 degree oven for 1/2- 3/4 of an hour, stirring occasionally.

- Mix together the flour, sugar, powdered buttermilk and salt in a large bowl, making sure to mix well.
- Measure out 3 1/2 cups of the mixture into quart-size zipper bags. If you have a few Tbs of mix left over after measuring out the 6 bags, just divide it between the bags.
- Put the bags of mix in a 2 gallon freezer bag, or into two 1 gallon freezer bags. Seal, label and freeze. Or, put the entire mix in an air-tight rigid container, and store the whole thing in the freezer.
- Remove a the bag of mixture from freezer.
- Allow it to come to room temperature.
- Place the following ingredients in your bread machine in the order recommended by the manufacturer: 1 Cup warm water, 1 egg, 2 Tbs butter or cooking oil, bread mix, 1 1/2 tsp active dry yeast.
- Set your bread machine to the appropriate setting and press start. Makes a 1-1/2 pound loaf.

ALL-BRAN MUFFINS MASTER MIX
These are the most moist, delicious, large bran muffins. Keep the mix in your refridgerator and add whatever you like. Make a couple blueberry muffins, raspberry white chocolate chip or a couple chocolate chip walnut muffins, or whatever suits your fancy. These are great! I make 3-4 a day and then they're always fresh! I usually cut the recipe in half and make about 12-15 large muffins. To make mini muffins bake at 400 degrees for about 11-12 minutes.

MY MASTER MIX TACO SEASONING
I have 2 recipes for homemade taco seasoning. I call this one my Master Mix because this is the one I use the most and usually make a large batch of it. My family loves Mexican and Tex-Mex.....but they don't like it spicy. This recipe uses flour as a filler that makes it thicker, less spicy, and closer to the commercial brands....

- 1. Combine all ingredients. Mix well. Store in a container with a tight-fitting lid in a cool, dry place for up to about 6 months.
- 2. Makes about 1/2 cup. The large batch makes approximately 3 1/2 cups and fills up a cleaned prego jar. 2 tablespoons of this mix is the equivalent of one (1.25 oz. envelope of purchased mix)
- 3. To use: Use in place a an envelope of purchased seasoning.
- 4. Or use to flavor ground beef. Combine 2 tablespoons seasoning mixture with 1 pound cooked and drained ground beef and 3/4 cup of water. Bring to a boil, then reduce heat and simmer for 15 minutes.

MY MASTER MIX
This is Purdue's Master Mix, enriched with whole dried milk. Use 5 lbs. of flour and 2 pounds of shortening - no need to use measuring cups! Substitute whole wheat (pastry) flour for up to half of the all-purpose flour, if desired.

- Stir the flour, dry milk, salt,baking powder, cream of tartar and sugar together until well blended.
- Cut in the shortening with a pastry blender or rub your hands until it is evenly distributed and the mixture resembles coarse meal.
- Makes about 29 cups of mix.
- Store this mix in an air tight container such as glass jars, or in plastic or metal containers.
- Be careful not to pack the mix. Tighten the lids and store at room temperature in a dark place.
