Creamy, slightly sweet, and a great low-carb alternative to mashed potatoes. The broth infuses the mashed rutabaga with wonderful flavor.

1 large rutabaga, peeled and cubed
3 cups chicken broth, or as needed
¼ cup evaporated milk, or as needed
3 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Place rutabaga in a medium pot and add enough chicken broth to cover. Bring to a boil; reduce heat, cover, and cook until tender, about 40 minutes.
  • Transfer rutabaga to a colander and drain well. Place into a deep bowl; add evaporated milk and butter a little at a time until desired consistency is reached. Use an electric hand blender to get a creamy, non-fibrous texture. Season with salt and pepper.

This is great with Apricot Glazed Turkey and Green Beans With Walnuts And Walnut Oil. This dish can be made one day ahead. The broth made in this recipe can be used as stock for turkey soup.

7 cups low-sodium chicken broth
3 pounds potatoes, peeled and cubed
1 ½ pounds rutabagas, peeled and cubed
1 ¼ pounds parsnips, peeled and cut into 1 1/2 inch pieces
8 cloves garlic
1 bay leaf
1 teaspoon dried thyme
¾ cup butter, softened
3 onions, thinly sliced
salt to taste
ground black pepper to taste

Steps:

  • Combine chicken broth, potatoes, rutabagas, parsnips, cloves, bay leaf, and thyme in a large pot. Bring to a boil. Reduce heat, and cover partially. Simmer until vegetables are very tender, about 30 minutes. Drain.
  • Transfer vegetables to large bowl. Add 1/2 cup butter or margarine . Use an electric mixer, beat mixture until mashed but still chunky. Season with salt and pepper. Transfer mashed vegetables to a buttered 13 x 9 x 2 inch baking dish.
  • Melt remaining 1/4 cup butter or margarine in a heavy large skillet over medium-high heat. Add sliced onions. Saute until beginning to brown, about 5 minutes. Reduce heat to medium-low. Saute until onions are tender and golden brown, about 15 minutes. Season with salt and pepper. Spread onions evenly over mashed vegetables. Casserole can be prepared up to 1 day ahead. Cover and refrigerate.
  • Preheat oven to 375 degrees F (190 degrees C). Bake, uncovered, for 25 minutes, or until heated through and top begins to crisp.

1 large rutabaga, waxy skin removed and cut into 1-inch chunks
Kosher salt
4 large Yukon gold potatoes, cut into 1-inch chunks
3/4 cup heavy cream
1 stick cold butter, cut into 5 to 6 pats

Steps:

  • Toss the rutabagas into a large pot and cover generously with water. Season the water generously with salt.
  • Bring the water to a boil, reduce to a simmer and simmer for 45 minutes. Toss in the potatoes and simmer until the potatoes are fork tender, another 20 minutes.
  • Strain the rutabagas and potatoes from the water and pass through a food mill into a large bowl.
  • In a small saucepot, bring the cream to a boil and turn off.
  • Take 1 to 2 pats of butter and a splash of hot cream and whip them into the potato mixture. Continue this until all the butter and cream are incorporated. Taste and re-season with salt if needed. Serve immediately or keep warm in a low oven.

The whole meal is: Swedish Corned Pork Roast, Swedish Sauerkraut, Swedish Green Split Peas with Bacon, Mashed Rutabaga, Turnip, and Potato & Sweet and Hot Mustard, served with Rye Bread. I expected not to like anything and ended up LOVING everything!

1 1/2 lbs turnips, peeled and quartered
1 lb russet potato, peeled and quartered
4 tablespoons butter, melted (1/2 a cube)
1/2 cup whipping cream
salt & freshly ground black pepper, to taste

Steps:

  • Place the rutabaga in a 6 quart pot with ample water and a pinch of salt. Boil for 15 minutes.
  • Add the turnips and potatoes and boil 15 minutes more, until all the vegetables are tender.
  • Drain well.
  • Mash the vegetables with the remaining ingredients. (I do it right in the pot.) You can also use an immersion blender to puree them.

2 lbs thin skinned boiling potatoes
salt
1 lb rutabaga, about 1 medium
1/4 cup flour
2 eggs
2 teaspoons salt
1/2-1 cup hot milk or 1/2-1 cup light cream
1 tablespoon butter
1/4 cup fine dry breadcrumb

Steps:

  • Put the potatoes in a large pot and cover them with water. Add 1 teaspoon salt for each quart of water. Heat to boiling and cook for 20 to 25 minutes, until the potatoes are tender. Drain, peel, and mash the cooked potatoes.
  • Meanwhile, pare the rutabaga and cut it into 1-inch pieces. Place in a saucepan, cover with water, and bring to a boil. Simmer until tender, 25 to 30 minutes. Drain, mash, and add the cooked rutabaga to the potatoes. Beat with an electric mixer until the potatoes and rutabagas are smooth and fluffy. Beat in the flour, eggs, salt, and milk or cream.

1 1/2 cups light olive oil or 1 1/2 cups vegetable oil
3 tablespoons unsalted butter
2 large yellow turnips, about 4 pounds (also called rutabagas or swedes)
1 cup milk
6 tablespoons unsalted butter
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Slice the shallots crosswise into very thin rings.
  • In a saucepan, heat the oil with 3 tablespoons butter over medium-low heat until it begins to bubble.
  • Reduce the heat to low, add the shallots and cook until they are a rich golden brown, about 30-40 minutes; stir the shallots occasionally while they are cooking to make sure they brown evenly.
  • Remove the shallots from the oil with a slotted spoon and drain on paper towels.
  • Once the shallots have dried and crisped, in about 15 minutes, they can be stored in a cool place, covered, for several days.
  • Serve the shallots at room temperature.
  • Peel the turnips to remove their waxy skins, and cut them into generous 1-inch chunks.

  • Partially cover the pot and bring the water to a boil over medium-high heat. Boil the rutabaga for 40 minutes; rutabagas take a long time to bring out their natural sweetness. Add the potatoes to the pot and cook until the potatoes are fork tender, about 15 minutes.
  • Heat the cream in a small saucepan over medium heat.
  • Drain the rutabagas and potatoes from the water and pass through a food mill. Add half the hot cream and cold butter into the milled rutabaga/potato mixture and stir vigorously to combine. Repeat this with the remaining cream and butter. Taste to make sure the seasoning is correct.

2 oz. (4 Tbs.) unsalted butter, softened; more for the baking dish
5 medium Yukon Gold potatoes (1-3/4 lb.), peeled and cut into 1- to 1-1/2-inch chunks
1 large rutabaga (about 1-1/2 lb.), peeled and cut into 1-inch chunks
Kosher salt
8 oz. cream cheese, cut into 4 chunks, softened
1/2 tsp. dry mustard
1/2 cup (2 oz.) finely grated pecorino cheese
Whole milk, as needed

Steps:

  • Butter an 8x11-inch baking dish and set aside. Put the potatoes and rutabaga in a 5- to 6-quart saucepan or Dutch oven and cover with cool water by about 1 inch (the rutabaga will float to the top). Add 1/2 tsp. salt and bring to a boil over medium-high heat. Reduce the heat to medium, cover partially, and cook until the potatoes are very tender and the rutabaga is soft, about 25 minutes. Drain the vegetables and return them to the pot. Set over medium heat for a minute or two, shaking and stirring to rid them of excess moisture and steam. Transfer the vegetables to a stand mixer fitted with the paddle attachment (or use a large mixing bowl and an electric hand mixer). 2 pounds Yukon gold potatoes, peeled and quartered
12 tablespoons unsalted butter, at room temperature
1 1/2 cups half-and-half, warmed
Kosher salt
1 tablespoon extra-virgin olive oil
1 1/2 tablespoons finely grated lemon zest
8 scallions, white and green parts, chopped, plus extra, whole, for garnish
1/3 cup finely chopped fresh parsley
1 1/2 cups fresh, unseasoned breadcrumbs

  • Cover the rutabaga and potatoes with cold, generously salted water in a large pot and bring to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are fork-tender, about 30 minutes.
  • Drain the vegetables and return to the pot over low heat. Stir in 8 tablespoons butter. Mash with a potato masher, ricer or food mill until smooth, adding the warm half-and-half and 2 teaspoons salt. Keep warm while preparing breadcrumbs.

Rosemay sprigs for garnish

Steps:

  • 1. Butter an 8x11 baking dish. 2. In 5-6 quart saucepan cover potatoes & rutabaga with cool water by 1" (rutabaga will float). 3. Add 1/2 tsp salt, 2-3 sprigs of rosemay and bring to boil over med-high heat. Reduce heat to medium, cover partially, and cuul until tender and soft, about 25 mins. 4. Drain, remove rosemary sprigs, return to pot over medium heat for 2 mins, shaking and stirring to rid of excess moisture. (Don't worry if some loose rosemary leaves are included.) 5. Transfer to a stand mixer fitted with paddle attachment. On low speed, break up vegs untilpotatoes are smooth and rutabage is in small chunks. 6. Gradually add cream cheese, increase speed to medium and beat until absorbed. 7. Gradually add butter and beat until absorbed. 8. Add mustard, half the rosemary leaves, and half the cheese, and beat until combined. 9. If too dry, add some milk to make light & fluffy, but not wet. Season to taste with salt & pepper. 10. Transfer to prepared baking dish, smoothing the top with a spatula. Sprinkle remaining cheese and rosemary leaves on top. - May be prepared to this point up to 2 days ahead. Cover and refrigerate. 11. Preheat over to 375 degree F. If refrigerated, let gratin sit at room temperature while oven is heating. 12. Bake uncovered in middle of over until heated through and top is golden. About 40 mins if refrigerated or 20 mins for freshly made. 13. Garnish with sprigs of rosemary and let sit for 15 mins before serving.

  • Cook 2 diced peeled rutabagas and 2 smashed garlic cloves in salted boiling water until tender, 20 to 30 minutes; drain. Heat 1 tablespoon coconut oil in the same pot over medium heat. Add 1 teaspoon each curry powder and grated fresh ginger and a pinch of cinnamon; stir 30 seconds. Add 3/4 cup coconut milk and 2 teaspoons maple syrup; bring to a simmer. Add the rutabaga and mash. Season with salt and pepper. Top with cilantro.

1 small rutabaga
4 carrots
2 tablespoons brown sugar
2 tablespoons frozen orange juice concentrate, undiluted
1 tablespoon butter
1 pinch nutmeg
salt
fresh ground pepper
chopped parsley

Steps:

  • Peel rutabaga and carrots.
  • Cut int 3/4 inch chunks.
  • Cook separately in boiling water until tender, drain.
  • Mash each, either with potato masher or in a food processor.
  • Combine rutabaga carrots, sugar, orange juice, butter, nutmeg and salt and pepper to taste.
  • Sprinkle with parsley, if using.
  • Serve immediately or cover and reheat before serving.
