"Mashed Potatoes with Ham evolved from scalloped potatoes, which are tasty but time-consuming to bake. "I warmed up leftover mashed potatoes, then decided to throw in some ham to save a dish," Kathy explains. "The next time I made it, I added a cheese and crumb topping to give this casserole an appealing golden look."

1/2 cup finely chopped onion
2 tablespoons butter, divided
3-1/2 to 4 cups hot mashed potatoes (prepared with milk with butter)
1-1/2 cups cubed fully cooked ham
1/4 teaspoon onion salt
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese
1/3 cup crushed cornflakes

Steps:

  • In a large microwave-safe bowl, combine onion and 1 tablespoon of butter. Microwave, uncovered, on high for 2 minutes or until tender, stirring once. Add potatoes, ham, onion salt and pepper; mix well. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with cheese and cornflakes; dot with remaining butter. Bake, uncovered, at 375° for 15 minutes or until heated through.

1 1/2 pounds small new potatoes (as close to the same size as possible)
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
2 tablespoons butter
3 ounces thinly sliced country ham, diced (see Cook's Note)
1 medium onion, diced
1 red bell pepper, diced
1 teaspoon lemon or orange zest

Steps:

  • Place the potatoes in a large saucepan and add cold water to cover by 1 inch. Salt the water generously and bring to a boil over medium heat. Reduce the heat to medium-low and simmer until the potatoes are fork-tender, 7 to 10 minutes, depending on size. Drain and set aside.
  • Meanwhile, heat 1 tablespoon of the vegetable oil in a large cast-iron skillet over medium heat. Add the ham and saute, stirring occasionally, until crispy, about 4 minutes; transfer to a bowl. Add the onions and red peppers to the skillet and saute, stirring occasionally, until tender, 5 to 7 minutes; transfer to another bowl.
  • While the vegetables are cooking, smash the boiled potatoes down by hand. Add the remaining tablespoon oil and the butter to the skillet. When the butter is foaming, add the potatoes in a single layer and sear until very golden brown and crispy, 2 to 4 minutes per side. Stir in the crispy ham, onion mixture and lemon zest. Add salt and pepper to taste. Serve immediately.

This recipe is often requested during Thanksgiving. It's totally tasty and everyone will rave! For a variation, serve in a casserole dish, and refrigerate overnight. Sprinkle extra Parmesan cheese and butter over potatoes and reheat in the oven.

5 pounds Yukon Gold potatoes
½ cup butter
2 cups Parmesan cheese
1 cup chopped fresh chives
1 ½ cups cream cheese
½ medium head garlic, peeled and minced
1 pinch salt and pepper to taste

Steps:

  • Bring a pot of salted water to a boil. Add potatoes; cook until tender but still firm. Drain and return to stove over low heat to dry for 1 to 2 minutes.
  • Add butter, Parmesan cheese, chives, cream cheese, garlic, salt, and pepper. Use a potato masher to mash until smooth, and serve.

Oh my gosh, this is the cheapest, quickest and tastiest main dish ever. We have this at least once a week. I like to brown my ham in butter before adding to casserole. It just makes the ham a little crisp. You will not be disappointed.

3 1/3 cups water
1 teaspoon salt
5 teaspoons butter
1 1/4 cups milk
3 1/3 cups instant potato flakes
1 teaspoon parsley flakes
1 teaspoon dried basil (optional)
3/4 cup grated parmesan cheese (optional)
1 lb shredded virginia baked deli ham
2 cups shredded cheddar cheese

Steps:

  • Combine water, salt, butter, garlic powder and parsley flakes and heat to a boil.
  • Remove from heat.
  • Add cold milk.
  • Stir instant potato flakes gently and stir until smooth.
  • Pour instant potatoes into well greased casserole dish.
  • Top potatoes with Virginia Baked Deli Ham (I like to brown my ham in butter in a skillet before adding to casserole; just makes ham crisp. I only do this if I have time. Just as good without browning the ham -- ).
  • Top Ham with shredded cheese.
  • Broil 4-6 inches from heat for 60 seconds or until golden brown.

3 pounds Yukon Gold potatoes
1 cup diced onion
8 tablespoons butter, softened, divided
1 teaspoon salt
¼ teaspoon freshly ground black pepper
2 eggs, lightly beaten
1 ½ cups Smithfield Ham slices, diced
¼ cup fresh chives, chopped
¾ cup bread crumbs
1 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F. Peel potatoes (if desired) and place in large sauce pot and cover with cold water by 1 inch. Bring to a boil and reduce to simmer, cooking for 30-35 minutes or until potatoes are tender-soft.
  • Meanwhile, in skillet over medium-high heat, melt 2 tablespoons butter and cook onion for 10-12 minutes or until soft and translucent. Drain potatoes thoroughly and place in large bowl with remaining butter, salt and pepper. With mixer or potato masher, blend potatoes and butter until mixed while retaining a slightly chunky texture. Fold in cooked onion, eggs, ham and chives.
  • Line baking sheet with parchment or lightly grease. In ring mold or biscuit cutter, sprinkle bottom interior with bread crumbs and fill mold with potato mixture until top is slightly rounded, topping again with bread crumbs. Remove ring and repeat with remaining potato mixture, spacing cakes about 1 inch apart. Bake for 20-30 minutes or until tops are golden brown and beginning to crisp. Top with Parmesan cheese and serve hot.
