An easy rolled, refrigerator, no bake cookie!

1 baking potato
4 cups confectioners' sugar
1 cup peanut butter

Steps:

  • Boil unpeeled potato until soft. Let cool slightly then peel and mash.
  • Stir in confectioners' sugar into the mashed potato and mix until stiff. On a piece of waxed paper or plastic wrap roll out potato mixture into 1/4 inch thick rectangle. Spread peanut butter over entire area (adjust thickness to suit taste). Roll up jellyroll-fashion wrap with plastic wrap and refrigerate for few hours. Cut into slices to serve.

Mashed potatoes in cookies?! Unbelievable?! Sshhh, let's keep the secret to these can't-get-enough-of-'em Chocolate Potato Cookies until everybody tastes 'em! I got this tasty recipe from Mr. Food.

1 c packed brown sugar
1/2 c vegetable shortening
1 egg
1 tsp almond extract
1/2 c semisweet chocolate chips, melted
1/2 c unseasoned mashed potatoes, (actual potatoes)at room temperature
1 1/2 c all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
1/4 c milk
1/2 c chopped walnuts or pecans
(1) 16 oz container chocolate fudge frosting
1/4 c nonpareil candies

Steps:

  • 1. Preheat oven to 400 degrees F. Coat baking sheets with cooking spray. In a large bowl, cream together brown sugar and shortening until light and fluffy. Beat in egg and almond extract, mixing well. Add melted chocolate and mashed potatoes, beating until smooth. In a small bowl, combine flour, salt, and baking soda. Alternately add flour mixture and milk to brown sugar mixture, stirring until smooth.

Drop by rounded teaspoonfuls 2 inches apart onto prepared baking sheets. Bake 10 minutes, or until cookies spring back when touched lightly with a finger. ¼ cup mashed potatoes
2 tablespoons milk
1 teaspoon vanilla extract
1 pinch salt
1 (16 ounce) package confectioners' sugar
1 tablespoon confectioners' sugar for dusting, or as needed
⅓ cup peanut butter, or as needed

Steps:

  • Combine mashed potatoes, milk, vanilla extract, and salt in a bowl.
  • Stir confectioners' sugar into potato mixture until a dough consistency is reached. Refrigerate dough until chilled, about 1 hour.
  • Sprinkle confectioners' sugar on a cutting board or waxed paper.
  • Roll dough into a large rectangular shape on prepared surface.
  • Spread enough peanut butter on top layer of dough to cover.
  • Roll dough into a jelly roll shape; refrigerate roll for 1 hour. Slice dough into pinwheels to serve.

2 stick melted butter
3 eggs, whisked slightly
1 1/2 c sugar
2 tsp cream of tartar
1 tsp soda
1/2 tsp salt
1 tsp coconut flavoring
1/2 tsp vanilla
1 1/2 c flour
1 c coconut
3/4 c semi-sweet mini choc chips
2 c instant mash potato flakes

Steps:

  • 1. while the butter is melting in the microwave, whip the eggs to combine. add the sugar, cream of tartar, soda, salt, flavorings. add the butter, mashed potato flakes, flour. fold in the coconut, chips. ref 1 hr and bake on greased cookie sheet at 350 for 10 min. let set on cookie sheet a minute before removing.

5 cups coconut
1 cup chopped walnuts
1 teaspoon vanilla
4 ounces bitter baking chocolate
2 cups chocolate chips
2 ounces paraffin wax

  • Cook potatoes until tender, drain and mash.
  • Mix together with coconut,walnuts sugar and vanilla.
  • Chill.

1 cup milk chocolate chips
1 1/2 cups brown sugar
2 teaspoons vanilla extract
2 1/2 cups Simply Potatoes Traditional Mashed Potatoes

Steps:

  • Cook potatoes according to directions on package. Place in refrigerator to cool while preparing the remaining ingredients.
  • Place peanut butter, chocolate chips, brown sugar and vanilla extract in a large saucepan. Heat over medium burner, stirring gently, until ingredients have melted and you have a smooth batter. Fold in cooled mashed potatoes until just blended.
  • Place in refrigerator and chill dough for 30 minutes. Dough should be firm but pliable at this point. Remove chilled dough and preheat oven to 375 degrees. Roll dough into small balls and place on greased cookie sheets. Press cookies flat with a fork. Bake at 375 for 8-10 minutes until golden brown. Cool for about 5 minutes before removing from cookie sheet.
