GARAM MASALA SPICED NUTS
Just go nuts!!! Adapted from one by Tara Mataraza Desmond, co-author of Almost Meatless. The pecans are especially good.

Steps:
- Preheat oven to 300 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
- Whisk together the egg white and 1 teaspoon water until a sturdy froth forms. Stir in the sugar, garam masala and nuts. Mix everything together to coat the nuts well.
- Spread the nuts on the baking sheet. Transfer to the oven and bake until crispy and golden, stirring occasionally, about 30 minutes.
- Remove from the oven, let cool completely, and break apart into pieces to serve.
- Store in an airtight container.

SPICED GLAZED NUTS
This recipe is a great combination of sweet and savory. Use any kind of nuts you like; my favorite combination is cashews, almonds and pecan halves. Be sure to use fresh spices. It makes a huge difference. I make this for Christmas gifts. It ships well and everyone likes it!

- Preheat oven to 250.
- Combine sugar, cinnamon, allspice, seasoned salt, nutmeg, and black pepper in a large bowl. Set aside.
- Beat egg white until foamy. Add nuts, tossing to coat. Add to spice mixture tossing to coat evenly.
- Spread nuts on a greased baking sheet (a baking stone works great for this) in a single layer. Bake one hour, stirring once. Cool slightly on the baking sheet and break apart, if need be. Cool completely and then store in an airtight container up to two weeks.

CHAAT MASALA MIXED NUTS WITH CORNFLAKES
These spiced nuts with chaat masala are tangy, spicy, and the perfect thing to nibble on with drinks during the holidays.

- Whisk chaat masala, cayenne, and sugar in a small bowl to blend. Combine cornflakes, almonds, cashews, and pecans in a medium bowl.
- Heat oil in a large saucepan over medium. Add cornflake mixture and toss to coat. Cook, tossing often, until fragrant and beginning to turn golden brown, about 5 minutes.
- Transfer cornflake mixture to a rimmed baking sheet and sprinkle half of chaat masala mixture over; toss to coat. Sprinkle remaining chaat masala mixture over and toss to coat again. Let cool, then transfer to a large bowl. Do ahead: Nut mix can be made 1 week ahead. Store airtight at room temperature.
MIXED MASALA NUTS WITH RAISINS
Almonds, pistachios, cashews and raisins get baked with a curry and masala spice blend for a flavorful snack reminiscent of masala kaju.

- Mix together the coconut, sugar, garam masala, curry powder, turmeric if using and 1 1/2 teaspoons salt in a small bowl and set aside.
- Preheat the oven to 350 degrees F. Lightly coat a rimmed baking sheet with oil.
- Put the egg white in a large bowl and whisk until frothy. Add the almonds, cashews, pistachios and walnuts and toss to coat in the egg white. Add the spice blend and toss to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15 to 20 minutes. Let cool on the baking sheet, stir in the raisins and transfer to a large bowl.
