Everyone raves about my meatloaf recipe and you'll see why. Serve it with real mashed potatoes or you'll love it the next day in a fantastic meat loaf sandwich. Be sure to use a baking sheet and not a loaf pan so any grease can run off and all sides can brown. - Jenny Jones

Number Of Ingredients 16

1 teaspoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1/4 teaspoon dried thyme leaves
1/2 cup quick-cooking oats
1/3 cup milk (reduced fat or whole milk)
1/4 cup finely chopped red pepper
1/4 cup finely chopped green pepper
1/4 cup shredded carrot
1/2 cup ketchup
1 egg
1/4 cup chopped fresh parsley
1 teaspoon Dijon mustard
1/2 teaspoon salt
pepper to taste
1 1/2 pounds extra lean ground beef

Steps:

  • Preheat oven to 350° F. Line a baking sheet with foil or parchment paper and set aside.
  • In a small pan sauté the onion, garlic and thyme in oil over medium-high heat for 5 minutes. Set aside to cool.
  • In a large bowl combine all the ingredients, including cooled onion mixture, except the meat. When mixture is well blended add the meat by hand but do not overwork it.
  • Place on baking sheet and shape into a 9 by 5-inch loaf. Bake for about an hour or until the center reaches 160° F. Let rest 10 minutes.

Meatloaf Recipe With Crackers image

This is the best meatloaf recipe with crackers you'll find and it is such an easy classic dish. It'll quickly become a family favorite!

2 lbs ground beef (or ground turkey)
1 cup Ritz crackers (crushed)
1 egg (beaten)
1 cup milk
1/2 cup ketchup
1/3 cup onion (finely chopped (or 1 Tbsp dried minced onion))
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
3/4 cup ketchup
1/4 cup brown sugar
1/4 cup apricot preserves
1 tbsp Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F. Coat a 5×9 loaf pan with cooking spray and set aside. In a large bowl, combine the ground beef, crackers, egg, milk, 1/2 cup ketchup, onion, salt, pepper and garlic powder. Mix together with your hands until thoroughly combined.
  • Pour the mixture into the prepared pan and spread evenly. Place the pan on a rimmed baking sheet and bake in the preheated oven for 1 1/2 hours.
  • In a small bowl, combine ¾ cup ketchup, brown sugar, apricot preserves and Worcestershire sauce. Mix well. Spread half of the mixture evenly over the meatloaf halfway through baking. Reserve the remainder of the sauce for dipping/topping. Let meatloaf sit for 15 minutes before slicing and serving.

1 pound ground beef chuck
1/2 pound ground pork
2 large eggs, lightly beaten
1 medium onion, finely chopped
1 cup plain dried breadcrumbs
1 green bell pepper (ribs and seeds removed), finely chopped
1/2 cup heavy cream
Coarse salt and ground pepper
1 tablespoon Creole Seasoning
8 ounces fresh chorizo sausage (not smoked)
1/2 cup bottled chili sauce

Steps:

  • Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil; set aside. In a large bowl, combine beef, pork, eggs, onion, breadcrumbs, bell pepper, cream, 1 1/4 teaspoons salt, 1/2 teaspoon pepper, and creole seasoning. Gently mix to combine (do not overmix).
  • Place half of meat mixture on prepared sheet; form into a 9-by-4-inch loaf. Using a paring knife, remove casing from chorizo (keeping the shape intact). Place chorizo lengthwise down center of loaf. Cover with rest of meat mixture, enclosing the chorizo and patting to adhere.
  • Brush chili sauce over meatloaf. Bake, basting occasionally with pan juices, until an instant-read thermometer inserted in center of loaf registers 160 degrees, about 1 hour. Let rest 15 minutes before serving.

This family recipe was almost lost. Grandma gave this recipe to Mary S. after the dementia set in. Sarah was at Mary's after Grandma's funeral getting a recipe. This recipe fell out of Mary's box and Sarah picked it up, recognizing her mother's handwriting. Mary pled with Sarah to let her keep it saying that Grandma had given it to her. Sarah made her a copy and the original recipe is in Sarah's recipe box and now here.

1 cup firmly packed brown sugar
1 cup sugar
1 cup margarine (stick margarine, no tub)
1 cup canola oil
1 large egg
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup Rice Krispies
1 cup flaked coconut
1 cup rolled oats
1/2 cup nuts
3 1/2 cups flour

Steps:

1/2 lb pork sausage (any style/flavor)
2 slices bread (wheat or white)
3/4 cup seasoned stuffing mix (dry)
1/2 cup milk
2 eggs
1/2 onion, chopped
salt
pepper
sage
garlic powder
red pepper flakes
parsley flakes

Steps:

  • Preheat oven to 350F degrees.
  • Tear bread into small pieces& place into large mixing bowl.
  • Add dry stuffing mix& milk.
  • Let sit until all or most of milk is absorbed.
  • Add ground beef, sausage, onion& seasonings.
  • Add eggs& combine with meat mixture.
  • Mix with hands in order to get even consistency.
  • Place meat mixture in pan,& form into one large loaf or smaller individual loaves.
  • Bake for approximately 1 hour.
  • During last 5-10 minutes, place under broiler to brown top.
