A perfect snack to serve at holiday gatherings, this pecan-coated cheese ball is a party favorite. Serve it with raw vegetables and crisp crackers.

1 pound cream cheese, at room temperature
8 ounces sharp cheddar cheese, finely grated (about 2 1/2 cups)
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Ground pepper
1 cup finely chopped pecans

Steps:

  • In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
  • Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.

This reinterpretation of meatballs combines breakfast sausage, cheddar cheese, and onion for a very flavorful holiday appetizer, enough for a crowd of hungry folks.

1 1/4 cups all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
1/2 teaspoon cayenne pepper
1 1/2 teaspoons baking powder
2 cups grated cheddar (1/2 pound)
1 pound bulk breakfast sausage
1/2 large yellow onion, grated on large holes of a box grater
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar and toss to coat. Add sausage, onion, and butter. With your hands, mix until well combined and roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. Bake until balls are golden and cooked through, 25 minutes. Serve warm.

One base recipe you divide into three. I made this last night for a jewelry party. Had major recipe requests. These are delicious! Am taking to a party this weekend, and one of my guests from last night asked me to bring to her Christmas. From Martha Stewart Living December 05 issue.

1/2 cup unsalted butter, softened
3 (8 ounce) packages cream cheese, softened
2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
5 dashes Tabasco sauce
1/2 teaspoon coarse salt
1/4 teaspoon fresh ground white pepper
8 ounces orange sharp cheddar cheese, finely shredded
2 tablespoons chutney (I used bottled mango chutney from grocery store)
3/4 cup dried cranberries, finely chopped
6 ounces Roquefort cheese
1 shallot, minced
2 teaspoons brandy (optional)
1 cup toasted walnuts, coarsely chopped
8 ounces goat cheese
2 tablespoons finely chopped scallions
1/3 cup fresh curly-leaf parsley, finely chopped
1 English cucumber, cut into 1/8-inch thick slices
vegetable chips (such as Terra Chips Sweets & Beets)
water crackers

Steps:

  • Put butter, cream cheese, lemon juice, Worcestershire sauce, hot sauce, salt, and pepper into bowl of electric mixer fitted with paddle attachment; mix on medium speed until combined. Divide equally among 3 medium bowls.
  • Stir cheddar cheese and chutney with base mixture in the first bowl. Form into a ball and refrigerate up to 3 days or freeze up to one month. After thoroughly chilled, smooth into perfectly round ball with hands and roll in cranberries to coat before serving. Serve with crackers.
  • Stir blue cheese and shallot with base mixture in second bowl; add brandy. Form into ball and chill as above. Roll in walnuts to coat before serving. Serve with chips.
  • Stir goat cheese and scallions with base mixture in remaining bowl. Form into a ball and chill as above. Roll inparsley to coat before serving. Serve with cucumber slices.

OLD SCHOOL CHEESE BALL



Old School Cheese Ball image

Gotta love this recipe. . .totally from a past generation, but not forgotten. I make this frequently and got the recipe from a co-worker named Karen about 8 years ago. Simple, yet a crowd-pleaser; the kids will even eat it! I have frozen this cheese ball with great results, so feel free to make 1 for now and 1 for later - just don't roll it in nuts until it has been thawed out.

2 (8 ounce) packages cream cheese (not low fat or non-fat because it needs to be thick)
1 (5 ounce) jar Kraft Old English cheese spread (sometimes I add an extra jar of this and make it into 2 balls)
1 (5 ounce) jar Kraft roka blue spread
1 teaspoon garlic powder (or more to taste)
1 tablespoon Worcestershire sauce
1 cup chopped pecans

Steps:

  • Let all three cheeses get to room temperature.
  • With a blender, mix together all ingredients EXCEPT the nuts.
  • Shape into 1 or 2 balls (I always do 2 so that there are more nuts to go around).
  • Roll each cheese ball in nuts, place on a piece of waxed paper and put in the fridge to set up.
  • Serve with buttery crackers on the side.

SHARP CHEDDAR CHEESE BALL

This is a must at any family event my grandmother hosts! It's always out on the counter the whole time we're there...but it never lasts long.

1/4 cup French onion dip
2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon parsley flakes
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Combine all ingredients (can use electric hand mixer) and shape into ball.
  • Refrigerate, but let set out at room temperature before serving.
  • Serve with crackers.
