From your kitchen, tested and approved in ours. One of our Danish fans, Henrik Dan Jensen, perfected this classic meal and says, "White wine, my special ingredient, adds a tiny spark to the sweet clams."

Steps:
- In a large pot of salted boiling water, cook pasta 1 minute less than package instructions for al dente. Reserve 1/2 cup pasta water; drain pasta. Set aside.
- While pasta cooks, heat oil over medium in a Dutch oven or 5-quart heavy pot with a lid. Add onion, garlic, and red-pepper flakes. Cook, stirring occasionally, until onion is soft, 5 to 7 minutes.
- Add wine, and bring to a boil; cook, stirring occasionally, until reduced by half, about 2 minutes.
- Add clams; cover, and simmer, shaking pot occasionally, until clams open wide, 3 to 5 minutes. (Discard any that havent opened after 5 minutes.)
- Add pasta to clam mixture in pot; continue to cook until pasta is al dente, about 2 minutes. Remove from heat, and stir in butter and parsley. Add some reserved pasta water to thin sauce if necessary; season with salt.
LINGUINE WITH CLAMS AND PEPPERS
For this pasta dish, you may serve the clams in their shells, with a bowl on the table to collect them. Or, if you prefer, you can remove them beforehand.

Steps:
- Bring a large pot of salted water to a boil, and cook pasta until just al dente. Drain.
- Meanwhile, heat oil in a large skillet over medium-high heat. Add garlic, shallot, Cubanelle pepper, and red-pepper flakes; saute until translucent, about 4 minutes. Add wine; bring to a boil, scraping up browned bits. Add clam juice; return to a boil. Add clams, cover, and cook just until they open, about 5 minutes (start checking after 4 minutes, and discard any clams that have not opened after 6 minutes).
- Add linguine, tossing with tongs to combine with clams. Season with salt if necessary (depending on saltiness of clams), remove from heat, and add parsley. Serve immediately.

EASY WHITE CLAM SAUCE (WITH A KICK)!
A very spicy and garlicky but easy white clam (or any shellfish) sauce for pasta, but obviously the spice level can be altered. Even "toned down", it's absolutely delicious! Serve it with a crusty baguette and a salad - yum yum yum... and so, so easy!!

Steps:
- Heat olive oil in a large skillet, add onions and chile pepper flakes, and sweat until onion is soft (do not brown).
- Add garlic and parsley and saute for another minute or two, until garlic aroma is apparent.
- Add reserved clam juice, and simmer for 15-20 minutes.
- Add whipping cream and simmer over low heat until hot, but do not let come to a boil.
- Add drained clams and heat until warm. Do not overcook at this point or your clams will get tough and rubbery - cook just until until well heated.
- Serve over pasta and top with shredded parmesan. Asiago works as well!
- Enjoy with your crusty bread dipped in the juice!
PASTA WITH WHITE CLAM SAUCE
Garlic and oregano enhance the seafood flavor of this delicious main dish. "An Italian friend of my mom's passed on the recipe to her, and I began preparing it when I was 14," writes Kelli Soike of Tallahassee, Florida. "For convenience, it can be made in advance...and leftovers are just as good."
