E-Z 3 ingredient Marshmallow Whip Frosting image

This frosting is delicious and so very easy to make. As written it is also quite a low calorie option. To make it more special, you can cream 8 oz light cream cheese, then add the marshmallow fluff and continue with the Cool Whip and vanilla. Family all love it, and no one realizes I'm cutting some calories from the desert.

1 medium tub of cool whip (i use the light version)
1/2 medium jar marshmallow fluff
1 Tbsp vanilla

Steps:

  • 1. Beat the marshmallow fluff in the mixer until very smooth & creamy.
  • 2. Scrape beaters; fold in the Cool Whip til all is combined. Add vanilla.
  • 3. This will frost a two layer cake, but there isn't enough for a filling. I usually make another 1/2 of the above recipe extra just to be sure I will not have to skimp.

1 envelope unflavored gelatin (2 1/2 teaspoons)
1/3 cup cold water, for gelatin,plus
1/4 cup water for syrup
1 cup sugar

Steps:

  • In the bowl of an electric mixer, sprinkle gelatin over 1/3 cup cold water.
  • Allow gelatin to soften, about 5 minutes.
  • In a small saucepan, combine 1/4 cup water and sugar, and stir over medium-high heat until sugar is dissolved.
  • Stop stirring, and place a candy thermometer into sugar water; wipe sides of pan with a wet brush if sugar crystals have splattered up.
  • Boil sugar until temperature reaches the soft-ball stage (238º).
  • Remove syrup from heat; add to softened gelatin.
  • Using the whisk attachment of an electric mixer, hand-stir the mixture a few minutes to cool; place bowl on the mixer stand.
  • Beat on medium high with the whisk attachment until soft peaks form and the marshmallow mixture holds shape, 8 to 10 minutes.
  • Transfer marshmallow mixture to a large (14-inch) pastry bag fitted with a 1/2 inch (#11Ateco) tip, and use immediately.

2 lbs peeled cantaloupes
1 lb mini marshmallows
1 (16 ounce) container Cool Whip

Steps:

  • Cut peeled cantaloupe into 1/4 or 1/2 inch cubes.
  • Put into large bowl.
  • Mix in mini marshmallows and Cool Whip.
  • Stir and mix well.
  • Serve chilled.

No holiday is complete without ube pie. Ube is a purple yam from the Philippines used in many sweet dishes which gives the pie a deep shade of violet.

Number Of Ingredients 12

1 disk Our Favorite Pie Dough
All-purpose flour (for dusting)
2 large eggs
1 (12-oz.) jar ube halaya (such as Monika)
¾ cup unsweetened coconut milk (preferably Thai Kitchen)
¼ cup granulated sugar
½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
½ tsp. vanilla extract
½ tsp. ube extract (optional)
1 cup heavy cream
¼ cup Marshmallow Fluff
1 Tbsp. powdered sugar

Steps:

  • Roll out dough on a lightly floured surface to a 12" round. Wrap dough around rolling pin and transfer to a standard 9"-diameter pie dish. Unfurl into dish, then lift edges and allow dough to slump down into edges. Trim overhang to 1". Fold overhang under to create a thick crust that is flush with rim; crimp as desired. Lightly prick bottom all over with a fork. Chill until firm, about 30 minutes.
  • Place a rack in middle of oven; preheat to 350°F. Line crust with parchment paper or foil and fill with pie weights or dried beans. Place on a rimmed baking sheet. Bake until edges are beginning to brown, 20-25 minutes. Carefully lift out parchment and weights. Return crust to oven and bake until golden brown all over, 10-15 minutes. Transfer to a wire rack and let cool.
  • Using an electric mixer on medium speed, beat eggs, ube halaya, coconut milk, granulated sugar, salt, vanilla extract, and ube extract (if using) in a large bowl until smooth, about 1 minute. Pour filling into pie crust.
  • Bake pie until edges of filling are set but center still jiggles slightly, 55-65 minutes. (Filling will puff as it bakes but will settle as it cools.) Transfer to a wire rack and let cool at least 2 hours. Pie can be served slightly warm or room temperature.
  • Using an electric mixer on medium-low speed, beat cream, Marshmallow Fluff, and powdered sugar in a medium bowl until medium peaks form, about 3 minutes. Transfer to a pastry bag fitted with a large star tip (or a resealable plastic bag with a corner snipped off). Chill marshmallow whip until ready to serve.
  • Pipe 8 dollops of marshmallow whip around edges of filling. Slice pie and transfer to plates. Serve with remaining marshmallow whip alongside. Do ahead: Crust can be baked 3 days ahead; store tightly wrapped at room temperature. Marshmallow whip can be made 8 hours ahead; keep chilled. Pie can be baked 1 day ahead; cover and chill. Bring to room temperature and top with marshmallow whip just before serving.

Graham Cracker Crust:
40 squares of graham crackers (crushed)
1/2 cup sugar
1/2 cup butter or margarine (melted)
Mix above ingredients. Press into top and sides of 9 x 13' greased pan. Reserve 1/2 cup for top.

Steps:

  • Filling: 10 1/2 oz. large marshmallows (40 marshmallows) 3/4 cup milk 2 - 8-oz. packages of cream cheese 12-oz. Container of fat-free Cool Whip Melt marshmallows and milk over low heat. Beat cream cheese; add marshmallow mixture. Cool. Fold in Cool Whip. Spread into crust and sprinkle with remaining graham cracker crust. Refrigerate until set.
