MARSHMALLOW WEB APPLES

4 Granny Smith apples
Nonstick cooking spray, for the parchment paper
2 cups mini marshmallows

Steps:

  • Wash and dry the apples and remove the stems. Insert a wooden apple skewer or paper straw into each about halfway through (pierce first with a skewer if using straws). Line a baking sheet with parchment paper and spray it with nonstick cooking spray.
  • Microwave the marshmallows in a microwave-safe bowl for 30 seconds, then stir. Continue to microwave in 10-second increments, stirring after each, until fully melted. Let cool until just slightly warm to the touch, not hot.
  • Using both hands, grab the melted marshmallows with your fingertips and pull apart to create a "webbed" look. Wrap webs around each apple (see Cook's Note).

Fresh fruit awaits you in these chocolate-dipped webbed treats. Thick slices of tart apple stand in for candy. Wrap them in cellophane bags, tie with a decorative bow and feel semi-wholesome about passing them out.

2 large Granny Smith apples, stemmed
4 ounces chopped bittersweet chocolate
2 teaspoons coconut oil
4 ounces chopped white chocolate

Steps:

  • Line a baking sheet with parchment or a silicon baking mat.
  • Cut the apples lengthwise (stem to bottom) into 4 thick slices each. Remove any visible seeds and keep the core intact. The end slices will be rounded; cut a thin slice off so they lay flat. Poke a small hole in the bottom of each slice with a wooden ice-pop stick and push halfway into the apple.
  • Combine the bittersweet chocolate and 1 teaspoon of the coconut oil in a medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth. Add the white chocolate and remaining 1 teaspoon coconut oil to another medium microwave-safe bowl and microwave at 50 percent power for 30-second increments, stirring in between, until melted and smooth.
  • Dip half of the apple slices completely in the bittersweet chocolate, letting the excess drip back into the bowl, and place on the prepared baking sheet. Dip the remaining apple slices in the white chocolate. Let sit at room temperature so the chocolate thickens a bit, 10 to 15 minutes.
  • Transfer the leftover dark and white chocolate to 2 separate small resealable plastic bags and snip a small corner off each bag. Pipe 3 to 4 dark chocolate concentric circles on the white chocolate-dipped apples and visa-versa. Drag a toothpick through the circles, starting the center and working your way out to create a spider web design. Refrigerate until hardened, 15 to 20 minutes.

HALLOWEEN SPIDERWEB APPLES

Sort of a cross between a marshmallow treat and a candy apple. Disposable chopsticks make good sticks!

4 apples
8 large marshmallows
1/2 tablespoon butter or 1/2 tablespoon margarine
1/2 cup crispy rice cereal
1 tablespoon halloween candy sprinkles (optional)
4 wooden sticks

Steps:

  • Stick a wooden stick into each apple.
  • In a medium sized microwave-safe bowl, put marshmallows and butter, and heat on HIGH in the microwave for 15 seconds. Stir. Heat for another 10 seconds and stir. Marshmallows should be smooth and pourable at this point, if not, heat in 10 second intervals until ready.
  • While still very hot, dip each apple one at a time into the marshmallow (you may need to return to microwave for a few seconds if marshmallow starts to get stiff). Lightly roll each in crispy rice, and set on a wax paper-covered cookie sheet 1-2" apart.
  • Reheat any leftover marshmallows (you may need to add one or two at this point). With a spoon, drizzle remaining marshmallow over apples, giving them a "spiderweb" look. While still hot, put sprinkles on the coating, if desired.
  • Allow to cool completely before serving. These are very sticky, but tasty!

1 cup mini marshmallows
1 tablespoon water

Steps:

  • Wash apples and remove stems. Insert sticks and set aside.
  • Place wax paper on a baking sheet and spray with non stick spray.
  • Combine caramels, marshmallows, and water in medium pan. Cook over medium heat, stirring constantly, until caramels melt.
  • Remove from heat and cool slightly.
  • Dip in caramel mixture and place on prepared baking sheet. Refrigerate till firm.
  • Can be drizzle with melted chocolate or rolled in chopped nuts, marshmallows, M&M's--use your imagination. I sometimes use candy corn at Halloween. Grandchildren love these.

6 medium tart apples
2 cups water
1 cup sugar
1 cup red-hot candies
Fresh mint, optional

Steps:

  • Peel apples and cut in half lengthwise; remove cores. In a large saucepan over medium heat, bring the water, sugar and candies to a boil, stirring constantly until sugar and candies are dissolved. Reduce heat; carefully add apples. Cook, uncovered, until apples are tender, about 8 minutes., With a slotted spoon, transfer apples to a serving dish; pour syrup over apples. Serve warm or chilled. Garnish with mint if desired.

1/2 cup water
1 cup cinnamon candies (recommended: Red Hots)
6 small red apples
Cream Cheese Topping, recipe follows
Freshly parsley or mint leaves, for garnish
2 ounces cream cheese
1 cup powdered sugar
1/4 teaspoon vanilla extract
1 tablespoon mayonnaise

Steps:

  • In a medium nonstick pan, dissolve the cinnamon candies in water over low heat. Peel, core and cut the apples in 1/2 lengthwise. Once the candy has dissolved arrange the apples, flat side down, in the pan. Cook on low to medium heat until the apples are tender; turning often, about for about 45 minutes. The apples should be the color of the candy. When ready transfer to a serving platter and let cool.
  • Once apples have cooled dollop 1 teaspoon of the Cream Cheese Topping on each apple. Garnish with a small piece of fresh parsley or a fresh mint leaf. Refrigerate until serving.
  • Add all the ingredients to a small bowl and thoroughly combine with a hand-held mixer. Topping should be stiff. Refrigerate until ready to use.

8 large Granny Smith apples, cored and sliced
½ cup white sugar
2 ½ tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 cup butter, melted
1 ½ teaspoons ground nutmeg
2 teaspoons ground cinnamon
1 cup firmly packed brown sugar
1 cup quick cooking oats
1 cup all-purpose flour
2 cups miniature marshmallows

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a bowl, mix the apple slices, white sugar, 2 1/2 tablespoons of flour, and 1 teaspoon of cinnamon together until thoroughly combined; spread out into a 9x13-inch baking dish. In a separate large bowl, mix the melted butter with nutmeg and 2 teaspoons of cinnamon; stir in the brown sugar, oats, 1 cup of flour, and mini marshmallows until thoroughly combined. Spread the marshmallow topping evenly over the apples, and gently flatten the topping to a smooth layer.
  • Bake in the preheated oven until the apples are tender and the topping is golden brown, 30 to 35 minutes.
