Cinnamon-Apple Muffins image

These are so yummy.

STREUSEL TOPPING
3 Tbsp flour
3 Tbsp packed brown sugar
2 Tbsp cold butter
1/4 tsp cinnamon
MUFFINS
3 apples, peeled and chopped
4 Tbsp packed brown sugar
1 1/2 Tbsp cinnamon
1/4 tsp nutmeg
2 1/2 c flour
1/2 c sugar
1 Tbsp baking powder
1/2 tsp salt
1 c milk
1 stick butter, melted
1 large egg
tsp vanilla extract

Steps:

  • 1. Preheat oven to 400. Line a standard size 12 cup muffin tin with paper liners.
  • 2. For streusel: Combine 3 tablespoons flour, 3 tablespoons brown sugar, and 1/4 teaspoon of cinnamon. Cut in 2 tablespoons cold butter until it resembles a coarse crumb. Set aside.
  • 3. For muffins: Combine apples, cinnamon, brown sugar and nutmeg. Set aside.
  • 4. In a large bowl combine flour, sugar, baking powder and salt.
  • 5. In a small bowl combine milk, egg, butter and vanilla.
  • 6. With a wooden spoon add the wet ingredients to the dry ingredients just before they come together fold in apples DO NOT OVER MIX.
  • 7. Divide batter evenly between each muffin cup and and top each with streusel. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool completely on a wire rack.
