MARS BAR & MARSHMALLOW SLICE
Saw this being made on television show. It looked so quick and easy...not too mention delcious! A great one for kids to make! Milky ways can be substituted with the mars bars. This slice can be frozen also.

Steps:
- Line a 20cm square cake tin with baking paper.
- Place the Mars bars and butter in a small saucepan and melt over low heat, stirring constantly.
- Combine the rice bubbles and marshmallows in a large bowl then add the melted chocolate mix. Stir quickly to coat the dry ingredients with the chocolate but don't over-mix as the marshmallows will melt slightly due to the heat of the chocolate.
- Spread mixture over the base of the cake tin then scatter coloured sprinkles over the top.
- Place in the fridge to set.
- When set, cut the slice into squares.
MARSHMALLOW PAVLOVA SLICE

- Beat egg whites until soft peaks form, gradually add sugar, beating well after each adition until all sugar is dissolved.
- Add vanilla and vinegar, beat further 1 minute.
- Spread meringue in greased, lined 28cm x 18 cm lamington tin which has been lightly dusted with cornflour.
- Bring paper over sides of tin so it is easy to remove slice when cooked.
- Bake in slow oven 45 minutes or until meringue is crisp and has a hard shell.
- Lift out carefully onto wire rack to cool.
- Trim edges with sharp knife.
- Beat one carton of cream until soft peaks form, spread cream over top of meringue.
- Peel bananas, cut into diagonal slices, put into lemon juice to keep their colour.
- Hull strawberries, cut in half.
- Peel kiwi fruit, cut in slices.
- Remove pulp from passionfruit.
- Heat strawberry jam in small saucepan, push through sieve to remove seeds, brush jam over strawberry halves to glaze.
- Arrange banana slices, strawberries and kiwi fruit decoratively on top of pavlova.
- Spoon passionfruit pulp over bananas.
- Whip remaining cream, pipe decoratively around edge of pavlova.

MARSHMALLOW SLICE
This recipe comes from the Celebrating Chocolate Cookbook, published by New Idea. The description reads: A layer of white marshmallows melts in the centre of the slice, giving it a sweet, slightly sticky flavour. Trust me, this is delicious and worth the effort!

- Preheat oven to moderate 180°C Butter base of 20cm square tin and line with non stick baking paper.
- Melt chocolate and butter in a basin as it stands over a saucepan of simmering water. Stir until smooth.
- Beat eggs with sugar and orange rind until fluffy, add chocolate mixture and stir it through.
- Sift flour, salt and baking powder over top and mix through, add nuts then mix again.
- Put half the mixture into prepared tin. Cut marshmallows in half across the centre. Arrange on top of mixture in tin, leaving a tiny space between each one.
- Place small spoonfuls of remaining cake mixture on top of marshmallows. Carefully spread mixture with a knife to fill gaps between marshmallows.
- Bake in oven for 25 minutes or until firm to the touch. Leave to cool completely before turning and cutting into pieces.
- To make chocolate icing, melt chocolate and butter in a bowl as it stands over a pan of simmering water. Stir until smooth then spread over top of slice to make a thin chocolate coating.
- Decorate with slices of brazil nut before icing has set. Slice when cool into desired pieces.
- Yield is an estimate, you can cut this into as many pieces as you like.

- Beat egg whites until soft peaks form, gradually add sugar, beating well after each addition until all sugar is dissolved. Add vanilla and vinegar, beat further 1 minute. Bake at 300F for 45 minutes or until meringue is crisp and has a hard shell.

This is my grandmother's recipe that she always makes at Christmas. It's a a quick and easy square to make. It calls for the rainbow colored sweetened coconut.

- Butter a 9x9x12 pan.
- Slice cherries.
- Mix graham cracker crumbs, marshmallows, cherries, nuts (optional), and 1/2 c coconut.
- Add condensed milk and extract.
- Mix well and spread into the pan.
- Sprinkle the other 1/2 c of coconut over the squares.
- Refrigerate for a couple of hours and cut into squares.

MARSHMALLOW SHORTCAKE SLICE
This is a shortcake base with a fluffy marshmallow topping that when set you cut into either squares or bars. I used to make this once a week when my girls were young so this recipe has been around in my handwritten cookbook for many years. I originally got it from a friend who even today still does a lot of 'home baking' as she lives in the country on a farm. Her tins are always full! Note:- My slice tin is 30cm long x 20cm wide x 2.5cm high.

- For Base:.
- Cream together the butter & sugar until light & fluffy.
- Add essence, egg, and dry ingredients.
- Mix well and then press into a 9" x 13" shallow baking pan. (known in NZ as a sponge roll tin).
- Bake at 350°F for about 20 minutes or until light golden brown.
- Remove from oven and allow to cool. Don't remove from pan.
- Topping:.
- Dissolve the gelatine in the boiling water in a large bowl.
- Add the essence and the sugar and beat on med-high speed with electric mixer until stiff and fluffy adding drops of colouring to get the colour you like. This can take a few minutes. (maybe even up to 10mins depending on the weather).
- When thick and stiff (like stiffly beaten egg whites that hold their shape) spoon over cooled base and cut into bars/squares when set. I usually place mine in fridge to set but you don't have to.
- Optional: sprinkle with dessicated coconut after pouring topping onto base.

NEAPOLITAN MARSHMALLOW SLICE
I have adapted this from another recipe that had a plain base as I really like chocolate. Also the top is a bit different from the original too. My sons always want me to make this as it is one of their favourites.

- 1. Preheat oven to 180C. Grease a 30cm x 20cm slice tin. Cream together butter and sugar until light and fluffy. Add essence and egg and beat well. Add sifted dry ingredients. Mix well, and press into baking tray. Bake at 180 degrees for about 20 minutes.
- 2. Soften gelatin in cold water in a saucepan Add sugar and bring to the boil for 8 minutes. Beat egg whites till stiff, fold in confectioners sugar and then add the cooled gelatin mixture. Beat for 3 minutes till thick.
- 3. Use half of the gelatin mixture and spread on cooled base. Using the remaining gelatin add some pink food colouring to it and mix it in, and then add on top of the white gelatin. You can add coconut to the top if you like. Refrigerate until marshmallow has set.

- Process biscuits till crushed, add butter and coconut.
- Process to combine.
- Press mixture firmly into pan.
- Cook mallows milk and sugar in saucepan over low heat.

- Crush wheat biscuits, add sugar, coconut,flour and melted butter.
- Press into a slice tray with the back of a spoon.
- Bake at 180 C for 25 minutes.
- Allow to cool.
- Filling.
- Combine the water, sugar and gelatine into a saucepan and simmer for 10 minutes.
- Allow to cool, add vanilla and then whip until stiff.
- Pour onto prepared base.
- Topping.
- Melt chocolate and butter together.
- Allow to cool but not yet set.
- Pour onto filling and spread.
- Allow to set and then cut into slices.
