1 tablespoon soy sauce
1 (6 ounce) can frozen orange juice concentrate, thawed
¼ cup orange marmalade
3 tablespoons honey
1 tablespoon balsamic vinegar
1 teaspoon minced garlic
1 (1 pound) pork tenderloin
1 teaspoon cornstarch
2 teaspoons water

Steps:

  • Mix the soy sauce, orange juice concentrate, orange marmalade, honey, balsamic vinegar, and garlic together in a small saucepan over medium heat; bring to a simmer and whisk until smooth. Remove from heat and let cool to room temperature.
  • Place the pork tenderloin into a resealable plastic bag and pour in the marinade. Squeeze the air out of the bag, seal, and turn the bag several times to coat the pork tenderloin with marinade. Refrigerate 1 to 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the pork loin and marinade into a baking dish; cover the dish with aluminum foil and roast until an instant-read thermometer inserted into the thickest part of the meat reads at least 155 degrees F (70 degrees C), about 20 minutes. Remove the cover and continue roasting until the pork has browned, 5 to 10 more minutes.
  • Remove the cover and allow the meat and juices to stand for 10 minutes.
  • To serve, slice the meat and drizzle with pan juices.
  • If you prefer a thicker sauce, whisk cornstarch in water until smooth, whisk into the pan drippings, and place over medium heat. Allow to simmer until thickened, 2 to 3 minutes.

1 tbsp olive oil
2 garlic cloves , sliced
4 pork steaks
200ml hot strong flavoured chicken stock (or gluten-free alternative)
1 tbsp fresh thyme
4 tbsp chunky marmalade
vegetables , to serve

Steps:

  • Heat the oil in a large frying pan and briefly cook the garlic, stirring with a wooden spoon, to start it softening. Add the pork to the pan in a single layer, season and cook for 6 mins each side, until golden and cooked through.
  • Meanwhile, mix the stock with the thyme and marmalade. Remove the pork from the pan and set aside briefly to rest on a warm plate. Pour off any oil from the pan, then pour in the marmalade mixture and bubble to make a sauce. Return the pork to the pan, coat in the sauce and serve with quick-cooking vegetables like baby potatoes, spinach and peas.

Steps:

  • Preheat oven to 350°F. Melt butter in heavy medium skillet over medium-low heat. Add onion and bell pepper. Cover and cook until vegetables are tender, stirring occasionally, about 10 minutes. Cool mixture completely.
  • Mix ground pork, ham, crushed crackers, milk, eggs, pepper, salt and cooled onion mixture in large bowl; combine thoroughly. Transfer pork mixture to shallow baking pan. Shape into 9x4x2 1/2-inch loaf. Using long knife, make shallow crisscross (diamond) pattern in top of loaf. Bake loaf 30 minutes.
  • Meanwhile, blend orange marmalade, Dijon mustard and brown sugar in small bowl for glaze.
  • Drizzle 1/3 cup glaze over loaf; bake 15 minutes. Drizzle another 1/3 cup glaze over loaf; bake 15 minutes. Drizzle remaining glaze over loaf and bake until thermometer inserted into center of loaf registers 165°F, about 20 minutes longer. Transfer loaf to platter; let stand 10 minutes. Pour pan juices into small bowl; whisk to blend.
  • Cut loaf crosswise into 3/4-inch-thick slices. Serve with pan juices.

salt and ground black pepper to taste
½ cup orange marmalade, divided
1 tablespoon chopped fresh rosemary
½ cup orange juice
1 tablespoon olive oil
1 pound parsnips, peeled and cut into 1-inch wedges
2 red onions, cut into 1-inch wedges

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place pork roast in a large roasting pan and season liberally with salt and black pepper. Spread half the orange marmalade over the roast; mix the remaining marmalade with rosemary in a large bowl. Stir orange juice and olive oil into rosemary mixture.
  • Combine parsnips and onions in another bowl. Add about 2 tablespoons orange marmalade mixture; toss to coat. Arrange vegetables around pork roast.
  • Bake pork in preheated oven for 30 to 45 minutes. Pour remaining orange juice mixture over pork. Increase oven heat to 450 degrees F (230 degrees C) and continue to cook until pork is slightly pink in the center, 15 to 20 more minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Transfer roast to a cutting board and cover lightly with aluminum foil. Toss vegetables in pan juices and return roasting pan to oven. Continue cooking until juices have thickened and vegetables are browned, about 10 minutes more. Slice pork and serve with vegetables and pan juices.

1 tablespoon oil, for browning
1/4 cup onion, chopped
3/8 cup orange marmalade
3/8 cup bottled chili sauce
2 tablespoons Dijon mustard
1/4 teaspoon cumin
salt and pepper

Steps:

  • In a bowl combine marmalade, chili sauce, mustard and cumin, mixing well to combine, then set aside.
  • Heat oil in a non-stick skillet over medium high heat.
  • Sprinkle chops with salt and pepper and brown in hot oil about 4 minutes on each side.
  • Remove from pan and cover with foil to keep warm.
  • Lower heat a bit and saute onion until softened, about 5 minutes, adding a little more oil if needed.
  • Add marmalade mixture to onions, stirring well, and let cook for about 2 minutes.

2 cloves garlic, minced
1 teaspoon dried rosemary
freshly ground pepper
2 (3/4 lb) pork tenderloin

  • Preheat oven to 400 degrees.
  • In small bowl combine mustard, garlic, rosemary and pepper.
  • Completely cover each tenderloin with mixture.
  • Form roast of uniform thickness and tie with string.
  • Bake for 50-60 minutes .
  • Combine marmalade, stock, ginger and soy sauce in small saucepan.
  • Heat to boiling.

Orange Marmalade Marinated Salmon, Chicken or Pork image

I just love Salmon and I'd say this is my favorite to date. This has an Asian touch. Lots of flavor. I did make this with Salmon but its possibilities are endless like tuna, Mahi Mahi, shrimp, orange roughy... I bet grilled pineapple in this marinade along with the fish or meat would be great! Cooking in a basket will caramelize the fish giving it a crispness and ease in turning it and cooking in foil will keep it moist as well as ease in flipping the fish. Cooking time is up to you I like my salmon very tender so I tend not to overcook it. This is great served on white rice. Leftovers would be great on a salad. The picture here is the salmon made under the broiler.

2/3 cup orange marmalade
1/3 cup rice vinegar
1/3 cup soy sauce
1 teaspoon minced garlic

Steps:

  • In a ziplock gallon size bag add first 8 ingredients.
  • Seal and mush with hand till blended.
  • Add Salmon and marinate for 1 hour.
  • Heat grill to medium high.
  • If using a fish basket or heavy duty foil, spray it with nonstick oil.
  • Remove salmon from marinade and reserve.
  • Place salmon into basket or foil folding tail in to make thickness even.
  • Place basket or wrapped in foil on barbecue and grill salmon, skin side up, 5 to 7 minutes.
  • Meanwhile bring the marinade to a boil then reduce heat to simmer till fish is cooked.
  • Turn basket over and grill salmon until just opaque in center, about 5 to 7 minutes longer.
  • Turn salmon out onto platter.

1 garlic clove, minced

1/4 cup low-sugar orange marmalade, divided
1/2 cup water
1/4 cup chicken broth

Steps:

  • Combine the mustard, garlic, rosemary, and black pepper in a small bowl; stir well, and set aside.
  • Slice the tenderloins lengthwise to, but not through the center, leaving one long side connected. Spread the mustard mixture evenly into the opening of each tenderloin. Fold the top sides over the mustard mixture, and tie securely with string at 2 inch intervals.
  • Place the tenderloins, seam side down, on a lightly greased rack in a roasting pan. Brush each with 1 tbsp marmalade. Add water to the pan. Bake uncovered, at 400 degrees for 35 minutes or until a meat thermometer inserted in the thickest part of the tenderloins registers 160 degrees. (medium).

Steps:

Not sure where this recipe came from, but I cooked it at the beach one summer with a friend and it became a tradition every time we returned (and lots of times at home, inbetween). This is a savory roast. The marmalade and white wine bring out the flavor and juiciness of the roast but don't overpower with sweetness.

3 1/2-4 lbs pork loin roast (center-cut)
1 tablespoon olive oil
salt & freshly ground black pepper
2 teaspoons rosemary (fresh)
1 cup white wine (dry)
1 cup water
1/2 cup orange marmalade

Steps:

  • Preheat oven to 350 degrees.
  • Place the pork loin on a rack in a shallow roasting pan. Brush meat with the olive oil and then sprinkle with salt, pepper and rosemary. Pour the wine and water into the roasting pan. Roast for 1 hour.
  • Remove the pan from the oven and spoon 1/2 cup of pan drippings into a small bowl. Add the marmalade and mix well. Pour this mixture over the meat and return it to the oven.
  • Continue roasting the meat for 35 to 45 minutes, basting it 2 to 3 times with the pan drippings, until a meat thermometer reaches 160 degrees F.

Coarse salt
1 teaspoon fennel seeds, toasted
1/2 teaspoon red-pepper flakes
3/4 cup orange marmalade
1/4 cup red-wine vinegar
1 sprig rosemary
4 cloves garlic, peeled and smashed
2 cups uncooked couscous
2 teaspoons extra-virgin olive oil
2 cups boiling water
1 bunch watercress, tough stems removed, 1/2 cup finely chopped, the rest left in whole sprigs, for serving
Flaky sea salt, such as Maldon, for serving
1 small orange, cut into wedges, for serving

Steps:

  • Very generously season pork with coarse salt and place in a 5- to 6-quart slow cooker. In a small bowl, mix together fennel seeds, red-pepper flakes, marmalade, vinegar, rosemary, and garlic; pour over pork. Cover and cook on low until meat is pull-apart tender, about 8 hours.
  • Meanwhile, combine couscous, 1/2 teaspoon coarse salt, and oil in a bowl; add boiling water. Stir, cover, and let stand 10 minutes. Fluff with a fork; stir in chopped watercress.

2 teaspoons cornstarch
2 1-pound pork tenderloins

Steps:

  • Boil beef and chicken stocks in medium saucepan until reduced to 2 1/2 cups, about 45 minutes.
  • Heat 2 tablespoons olive oil in heavy large saucepan over medium-high heat. Add shallots and sauté until tender, about 4 minutes. Add reduced stock mixture, marmalade and chipotle chilies. Simmer until mixture is reduced to 2 cups, about 5 minutes. Mix 1 tablespoon water and cornstarch in small bowl. Whisk cornstarch mixture into stock mixture.   • Heat non-stick skillet over medium high heat. Brown chops on both sides until just cooked through. Remove to platter for a minute.
  • Add marmalade and cider vinegar to pan, cooking and stirring into baked bits left in pan. Boil for a couple minutes to reduce a little, stirring now and then.
  • Return chops to pan and turn once to coat.

Steps:

  • Preheat oven to 400°F. Spray baking sheet with vegetable oil spray. Whisk next 5 ingredients in small bowl to blend. Sprinkle pork chops with salt and pepper. Brush generous 1 tablespoon glaze on each side of pork chops. Place chops on prepared baking sheet. Bake until thermometer inserted into center registers 150°F, about 20 minutes. 2 cups kumquats, stemmed, quartered, seeded
3 tablespoons vegetable oil, divided
4 small shallots, chopped (about 1/2 cup)
1 medium Granny Smith apple, peeled, seeded, chopped (about 1 cup)
3 tablespoons minced seeded jalapeño chiles, divided
1/2 cup dried apricots, chopped
3/4 cup water
3/4 cup sugar
3/4 teaspoon kosher salt
2 1-pound pork tenderloins

Steps:

  • Using on/off turns, finely chop kumquats in processor (do not puree). Heat 1 tablespoon oil in medium saucepan over medium-high heat. Add shallots, apple, and 1 tablespoon jalapeño. Cook until shallots are soft, stirring frequently, about 4 minutes. Add chopped kumquats, apricots, 3/4 cup water, sugar, and 3/4 teaspoon salt. Bring to boil, stirring until sugar dissolves. Boil until mixture thickens, about 6 minutes. Transfer marmalade to small bowl. Stir in remaining 2 tablespoons jalapeño. (Can be made 1 day ahead. Cool, cover, and chill. Rewarm before serving.)
  • Preheat oven to 350°F. Heat 2 tablespoons oil in large ovenproof skillet over medium-high heat. Sprinkle pork with salt and pepper. Add pork to skillet; brown on all sides, about 10 minutes total. Transfer skillet to oven; roast pork until thermometer inserted into center registers 145°F, about 15 minutes. Remove pork from oven; let stand 10 minutes.
  • Cut pork into 1/2-inch-thick slices. Serve with warm marmalade.

PORK TENDERLOIN WITH BELL PEPPER MARMALADE

1 (3-pound) pork tenderloin
2 tablespoons grapeseed oil
1/4 to 1/2 cup Irvine Spices Roasted Garlic Pepper
1 red onion, diced
1 red bell pepper, diced
1 orange bell pepper, diced
1/2 cup honey
1/4 cup red wine vinegar
1/2 cup red wine
2 tablespoons hot sauce (recommended: Tabasco)
1/2 cup cranberry sauce
4 tablespoons butter
2 ounces extra-virgin olive oil
4 cloves garlic, minced or 1 teaspoon garlic powder
1 long baguette, sliced into 1/2-inch slices

Steps:

  • Preheat oven to 350 degrees F.
  • In a large saute pan, heat the 2 tablespoons of the grapeseed oil and sear the pork loin on all sides. Transfer pork to a roasting pan and rub with roasted garlic pepper seasoning. Slowly roast in the oven until fork tender, 45 minutes to 1 hour. Allow pork loin to rest for 8 to 10 minutes before slicing.
  • While the pork is in the oven, begin the marmalade. In a hot skillet, heat the onions, red peppers and orange peppers (heat them dry with no oil) for about 3 minutes. The idea is to remove the liquid from the onions, by "sweating them down." Add the honey, vinegar, wine, hot sauce and cranberry sauce, and stir well. Reduce over medium-low heat until there is no liquid left in the pan and marmalade mixture is tacky.
  • To make the garlic bread, melt the butter in the extra-virgin olive oil over low heat. Add garlic and gently cook until it begins to soften. Assemble slices of bread on a baking sheet and spoon even amounts of the garlic-oil-butter mixture on each slice. After you have removed the pork from the oven to rest, toast the garlic bread briefly in the oven. Slice down the pork tenderloin, and assemble the appetizer by layering a medallion of pork and a small amount of the marmalade on each piece of garlic toast.

3 2/3 cups beef stock or 3 2/3 cups canned beef broth
3 2/3 cups chicken stock or 3 2/3 cups canned low sodium chicken broth
3 tablespoons olive oil
3/4 cup finely chopped shallot
1/2 cup orange marmalade
1 tablespoon chopped canned chipotle chile
1 tablespoon water
2 teaspoons cornstarch
2 (1 lb) pork tenderloin

Steps:

  • Boil beef and chicken stocks in medium saucepan until reduced to 2 1/2 cups, about 45 minutes.
  • Preheat oven to 425 degrees.
  • Heat 2 tablespoons olive oil in heavy large saucepan over medium-high heat.
  • Add shallots and sauté until tender, about 4 minutes.
  • Add reduced stock mixture, marmalade and chipotle chilies and simmer until mixture is reduced to 2 cups, about 5 minutes.
  • Mix 1 tablespoon water and cornstarch in small bowl and whisk mixture into stock mixture.
  • Stir until sauce boils and thickens, about 5 minutes.
  • Season to taste with salt and pepper.
  • (Sauce can be prepared 1 day ahead. Cover and refrigerate.).
  • Sprinkle pork with salt and pepper.
  • Heat remaining 1 tablespoon olive oil in heavy large ovenproof skillet over high heat and add pork and cook until brown on all sides, about 4 minutes.
  • Transfer skillet to oven and bake until thermometer inserted into pork registers 155°F, about 15 minutes.
  • Let pork rest 5 minutes.
  • Bring sauce to simmer.
  • Slice pork into 1/2-inch-thick medallions, arrange on plates and spoon sauce over and serve.
