1 French baguette (about 30-36 inches)
6 ounces whipped or extra creamy goat cheese
4-6 tablespoons spicy pepper jam
2 ounces arugula
1 pound deli ham (sliced very thin)

Steps:

  • Slice the bread in half lengthwise, forming two flat halves. Spread the goat cheese on each section of bread. Layer arugula on the bottom half and then ham over the greens. Fold and crumple the ham as you layer it on the bread. Form piles of ham across the bread to create the best texture.
  • Spoon the jam over the goat cheese on the top half of the bread. Close the sandwich and slice into smaller sections. Serve immediately.

MARMALADE HAM, CHEESE, AND ARUGULA SANDWICH



Marmalade Ham, Cheese, and Arugula Sandwich image

This twist on the ham and cheese sandwich is a great way to use up that marmalade you keep getting every year during the holidays.

1 French-style baguette
1-1½ tbsp unsalted butter, at room temperature
1-2 tsp Dijon or multigrain mustard
2 tsp marmalade, any type
3-4 slices of Marmalade Christmas Ham
4-5 slices of Brie, Emmental, or cheddar
Handful arugula
Sea salt and freshly ground black pepper, to taste

Steps:

  • Slice the baguette down the middle lengthways, leaving one edge still attached so you can open it like a hinge. Butter the top and bottom of the soft bread inside, then spread mustard on the top half and marmalade on the bottom half. Fold the ham and push in, then top with the cheese and arugula. Season and close the sandwich, gently squeezing it together as you slice it in half.

Melissa Clark came up with this recipe in 2011, a sandwich for her daughter, against the one she made for herself with Branston pickle in place of the marmalade. (Branston pickle is a British pickled chutney, made with vegetables, that dates back to the early 20th century.) You can certainly make the grown-up version. But this sweet, salty, cool variety is close to perfect for lunch or a light dinner.

12 to 15 whole cloves
1 can (12 ounces) beer or beef broth
1/4 cup packed brown sugar
1/2 cup orange marmalade

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. , Pour beer or broth over ham. 4 slices rustic country bread, sliced 1/2-inch thick
2 teaspoons Dijon mustard (or more, if you prefer)
4 ounces brie, cut into 1/4-inch slices (about 6 slices)
8 ounces cooked ham, sliced (about 8 slices)
Freshly-ground pepper
2 tablespoons marmalade
2 tablespoons extra-virgin olive oil
1/2 cup arugula

Steps:

  • Spread two slices of bread with 1 teaspoon mustard each. Layer each piece of bread with 3 slices of Brie, 4 slices ham, and a few grinds of fresh black pepper. Spread the each of the remaining slices of bread with 1 tablespoon of marmalade and place each slice marmalade-side-down on top of the sandwich. Brush both sides of each sandwich with olive oil. Set the sandwiches in a panini grill set on High and cook until bread is golden brown and cheese has melted, about 5 minutes (depending on your machine). When finished cooking, remove the tops of each sandwich and lay on 1/4 cup arugula on top. Smush bread back down on top of arugula, cut in half, and serve warm. To make stovetop sandwiches: Using a cast-iron pan or your favorite heavy-duty skillet, cook sandwich 3 to 4 minutes on each side, or until golden brown.

4 slices Swiss cheese
½ cup arugula or spinach leaves

  • In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. ¼ cup prepared horseradish mustard

  • Preheat the oven to 350 degrees F (175 degrees C).

1 18-pound fully cooked bone-in smoked ham, room temperature
48 (about) whole cloves
4 cups water
1 cup orange marmalade
1/4 cup prepared cream style horseradish
1/4 cup (packed) golden brown sugar
2 cups fresh orange juice

Steps:

  • Position rack in bottom third of oven and preheat to 325°F. Place ham on rack set in large roasting pan. Using sharp knife, score ham in diamond pattern. Press 1 clove into center of each diamond. Pour 4 cups water into roasting pan. Roast ham 1 hour 30 minutes.
  • Meanwhile, blend marmalade, horseradish, and sugar in medium bowl.
  • Remove ham from oven. Transfer ham to baking sheet. Discard pan juices. Return ham to roasting pan. Add orange juice to roasting pan. Brush top of ham with 1/3 of marmalade glaze. Bake ham 10 minutes. Baste with orange juice in pan, then brush with half of remaining glaze. Bake ham 10 minutes. Baste with orange juice in pan and brush with remaining glaze. Roast ham until heated through, basting every 5 minutes, about 20 minutes longer. Let ham rest 15 minutes. Transfer to platter. Serve ham hot, warm, or at room temperature.
