This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

Yield 13 servings (about 3 quarts).

Number Of Ingredients 11

3 cinnamon sticks (3 inches)
3 whole cloves
2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

2 quarts apple cider (8 cups)
4 strips lemon zest
2 cinnamon sticks
2 whole star anise (optional)
1 teaspoon whole allspice berries
1 teaspoon whole cloves

Steps:

  • In a large saucepan, bring cider, lemon zest, and spices to a boil; cover, and remove from heat. Let steep at least 20 minutes (or up to 4 hours). Ladle carefully into mugs, leaving most of the solids behind.

A tasty Mulled Apple Cider which can be served with or without Rum. I tweaked this over a few years to get it just so, and it's generally pretty popular at our holiday parties. (Halloween through Christmas) Plus it makes the house smell fantastic.

2 quarts apple cider
1/2 cup brown sugar
1 teaspoon whole cloves
1 teaspoon whole allspice
2 cinnamon sticks
1/4 teaspoon salt
1 dash ground nutmeg
1 1/2 ounces rum (per mug if desired)

Steps:

  • With cloves and allspice in a teaball, cook all ingredients in a Crockpot on low 2-8 hours. Stir occasionally/rarely to dissolve sugar. Or cook in a pan on the stovetop on low heat 20-30 minute until it simmers.
  • Add 1 1/2 oz. Bacardi Gold Rum (MUST be Bacardi, accept no substitutes) per mugful when poured, if desired. Don't cook it with the Rum.
