1 tablespoon olive oil
1 ½ tablespoons butter
1 ¼ pounds assorted wild mushrooms, sliced
1 pinch salt
¼ cup minced shallots
2 tablespoons Cognac or brandy
1 tablespoon Champagne vinegar or white wine vinegar
½ cup creme fraiche
½ cup chicken broth
1 tablespoon chopped fresh marjoram
salt and pepper to taste

Steps:

  • Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Stir in mushrooms with a pinch of salt. Cook, stirring occasionally, until any liquid evaporates and mushrooms are light brown, 8 to 10 minutes. Add 1/2 tablespoon butter and shallots; cook, stirring, until mushrooms are caramelized and almost tender, about 10 minutes.
  • Drizzle in Cognac and vinegar; cook until liquid evaporates, 1 minute. Stir in creme fraiche.
  • Stir in chicken broth, marjoram, and salt and black pepper to taste. Reduce heat to medium-low, cook until slightly thickened and mushrooms are tender, 10 to 15 minutes.

Serve this herb-flecked butter on everything from mashed potatoes to dinner rolls. It's also wonderful for rubbing under the skin of turkey and chicken.

Number Of Ingredients 7

1 cup salted butter, room temperature
1 tablespoon salted butter, room temperature
1/4 cup finely diced shallot
salt
2 tablespoons dry vermouth or 2 tablespoons dry white wine
2 tablespoons fresh sweet marjoram, finely chopped or 2 teaspoons dried marjoram
1/8 teaspoon finely ground white pepper

Steps:

  • Heat 1 tablespoon of butter in a small saucepan over medium heat.
  • Add the shallots and season with a pinch of salt.
  • Sauté until soft, but do not brown.
  • Add the vermouth, and simmer until the pan is almost dry.
  • Set aside to cool completely.
  • Place the butter in a medium mixing bowl and, with an electric mixer (fitted with the paddle) or wooden spoon, beat until light and fluffy.
  • Scrape down the sides.
  • Add the marjoram and pepper, and beat to incorporate, scraping down the sides.
  • Add the cooled shallot mixture and beat to combine.
  • Taste for salt and pepper.
  • Scrape into a small bowl, serving crock or butter molds and cover tightly; or shape into a long roll in grease-proof paper (plastic, wax or parchment) for storing and slicing as needed.

CANTALOUPE AND PANCETTA CREAM SAUCE FOR PASTA

I know, I know. This sounds crazy, right? Well, you just have to trust me on this one. The cantaloupe breaks down to form the backbone of a sweet, creamy sauce scented with pancetta and marjoram. A sleeper but a keeper, for sure.

Yield Serves 4 as an appetizer

Number Of Ingredients 10

3 tablespoons unsalted butter
2 ounces sliced pancetta, diced
1/4 cup minced shallot
3 cups diced ripe cantaloupe (from 1 medium cantaloupe)
1/2 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper, plus more for garnish
1 teaspoon minced fresh marjoram leaves
8 ounces spaghetti rigati, linguine, or fettucine
1/2 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat 1 tablespoon of the butter in a large sauté pan or Dutch oven over medium- high heat. Add the pancetta and cook, stirring frequently, until it is crisp and has rendered most of its fat, 3 to 4 minutes. Add the shallot and cook, stirring, until softened, 1 to 2 minutes. Add the remaining 2 tablespoons butter, and when it has melted, add the melon. Cook, stirring frequently, until the melon completely breaks down and forms a smooth, thick sauce, 8 to 10 minutes.
  • Add the heavy cream, salt, pepper, and marjoram, and cook until the cream has reduced by half and the sauce has a smooth, thick consistency that coats the back of a spoon, about 3 minutes. Remove the sauce from the heat.
  • Add the pasta to the boiling water, stir well, and cook until al dente (about 10 minutes). Drain well, reserving 1/2 cup of the pasta cooking water.
  • Add the hot pasta and 1/4 cup of the Parmesan to the warm sauce. Return the pan to medium heat, and toss until the pasta is nicely coated with sauce and heated through. Should the sauce seem too thick, add a bit of the pasta cooking water to help toss the pasta and thin the sauce.
  • Serve the pasta immediately, garnished with the remaining Parmesan cheese and with freshly ground black pepper.

2/3 cup balsamic vinegar
1/3 cup butter, melted
3 tablespoons shallots, minced
2 teaspoons fresh thyme, chopped
1/2 teaspoon salt, divided
1/8 teaspoon fresh ground black pepper or 1/8 teaspoon tricolor pepper
4 lbs new potatoes (small red or white waxy new potatoes) or 4 lbs fingerling potatoes, cleaned well
1 1/2 tablespoons basil, finely chopped fresh french or 1 1/2 tablespoons parsley

Steps:

  • In a small saucepan over medium heat, bring the vinegar to a boil; reduce the temperature to low and simmer until the vinegar is reduced to 2 tablespoons of liquid - it will be thick and syrupy and will take about 10 minutes.
  • Pour reduced vinegar into another bowl and let cool completely.
  • While vinegar is cooling, place the potatoes in a saucepan and add water to cover; bring to a boil then reduce heat and let simmer for 20 minutes or until tender, then drain.
  • While potatoes are cooking, to the cooled reduced vinegar add the melted butter, chopped shallots, thyme, 1/4 teaspoon of the salt, and black pepper, whisk well to incorporate and set aside.
  • Cut the drained cooked potatoes in half (or 3rds diagonally, if using fingerlings), and place in a serving bowl.
  • Sprinkle the remaining 1/4 teaspoon salt over the potatoes, toss, then add the butter mixture and basil or parsley and toss gently to coat.
  • Serve immediately.

2 shallots, peeled and thinly sliced into rounds
2 pounds carrots, trimmed and cut into 3-inch pieces
4 fresh sage leaves, chopped
1 cup chicken broth
1/4 cup honey
1/4 cup dry white wine
2 tablespoons marjoram leaves, chopped
Kosher salt and freshly ground black pepper

Steps:

  • In a large skillet over medium heat, melt the butter, then add the shallots and cook until beginning to soften, 3 to 5 minutes.
  • Add the carrots, sage, chicken broth, honey and wine and bring to a simmer. Cook until the carrots are tender and the liquid has reduced to a syrup, 8 to 10 minutes. Stir in the marjoram and some salt and pepper to taste.

I made this for dinner tonight and it tasted fabulous! It was the best Chicken Picatta recipe I have ever had. I made some changes since I first posted the recipe, and suggest you double the sauce if you want to top pasta in addition to the chicken. Personally, I serve it with garlic mashed potatoes. (I save the little garlic containers I get from Papa John's Pizza and mash them into my potatoes -- easy and yummy)

24 ounces boneless skinless chicken breasts, split and pounded flat (4, 6 oz. portions)
1 cup flour, seasoned with
salt and black pepper
3 whole eggs
1/3 cup fresh parmesan cheese, grated (preferably a combination of grated parmesan and romano cheese)
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil
3/4 cup olive oil (or as needed)
1/4 cup shallot, finely chopped
1 tablespoon garlic, chopped
2 tablespoons fresh marjoram, finely chopped
2 tablespoons parsley, chopped
1/4 cup lemon juice
1 tablespoon lemon zest
1/2 cup white zinfandel wine
1 cup heavy cream
3 ounces unsalted butter, cold
1 pinch salt and pepper (to taste)

Steps:

  • Preheat oven to 350°F.
  • PICCATTA BATTER:.
  • Combine eggs, cheeses, parsley and basil together in a large mixing bowl.
  • CHICKEN:.
  • Flour the chicken breast in the flour mixture and dip it in the Piccatta batter.
  • Coat evenly on both sides.
  • Heat the olive oil in a large skillet on medium heat.
  • Carefully place it in the skillet and fry.
  • When edges are golden brown, turn over and brown the other side.
  • Transfer chicken from pan and place it in baking pan.
  • Place in a 350 degree oven for 10-12 minutes.
  • Using the pan the chicken was cooked in, drain all but 1/4 of the oil.
  • Over medium heat add the shallots, garlic and herbs, saute until the shallots are transparent.
  • Add the lemon juice, lemon zest, white Zinfandel wine and reduce the liquid by 1/2.
  • Add the heavy cream and simmer until the sauce has thickened slightly.
  • Remove sauce from heat and whip in the cold butter.
  • Season to taste with salt and pepper.
  • Pour 2 oz. of the sauce on the plate and place the chicken on top and serve.

TOAST WITH TOMATO-BUTTER AND MARJORAM

4 medium yellow tomatoes (about 3/4 pound)
1 1/2 teaspoons olive oil
1 medium shallot, finely chopped (about 1/4 cup)
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
1 1/2 teaspoons chopped fresh marjoram
1/2 baguette, sliced on a bias, toasted
Flaky sea salt
Freshly ground black pepper

Steps:

  • Dice 2 tomatoes (you should have about 1 cup). Heat oil in a large skillet over medium. Add shallot and kosher salt and cook, stirring occasionally, until softened, about 2 minutes. Add diced tomatoes and cook, stirring occasionally, until juices release and liquid reduces, about 10 minutes. Let cool.
  • Purée butter and tomato mixture in a blender or food processor until smooth. Stir in marjoram.
  • Slice remaining 2 tomatoes. Spread each toast with tomato-butter, top with a tomato slice, and season with sea salt and pepper.

  • Tomato-butter can be made and chilled for up to 5 days or frozen for up to 3 months.
