1 cucumber, peeled and chopped
1 green bell pepper, chopped
1 large tomato, peeled and chopped
1 bunch green onions, chopped
½ cup white sugar
½ cup vegetable oil

salt and ground black pepper to taste

Steps:

  • Combine cabbage, cucumber, green bell pepper, tomato, and green onions in a large bowl.
  • Cook and stir sugar, vegetable oil, vinegar, salt, and pepper together in a saucepan over medium heat until sugar dissolves, about 5 minutes. Remove from heat and allow to cool. Pour marinade over vegetables and stir to coat. Marinate slaw in the refrigerator for at least 2 hours.

1/4 cup rice-wine vinegar
1/4 cup soy sauce
1 tablespoon minced ginger root
1 tablespoon sesame oil
1 tablespoon brown sugar
1/2 teaspoon red pepper flakes
2 pounds flank steak
3 tablespoons peanut oil
1 shallot, minced
2 small bird chilies, seeded and minced
1 tablespoon lime juice
1 teaspoon sesame oil
3/4 teaspoon kosher salt
3 cups very thinly sliced red cabbage
2 carrots, peeled and cut into fine julienne
2 scallions, thinly sliced
1 cup thinly sliced basil leaves

Steps:

  • To make the steak, whisk together the vinegar, soy sauce, ginger, sesame oil, sugar and pepper flakes. Place the steak in a large plastic bag or in a shallow, nonreactive pan. Pour the marinade over the steak and refrigerate for at least 6 hours and up to 36 hours.
  • To make the slaw, whisk together in a large bowl the peanut oil, shallot, chilies, lime juice, sesame oil and salt. Add the cabbage, carrots and scallions to the bowl. Refrigerate for at least an hour.
  • When ready to cook, prepare a charcoal or gas grill or preheat the broiler. Grill or broil the steak, turning once, until it reaches the desired doneness, about 5 minutes per side for medium rare. Allow to rest 10 minutes. Meanwhile, toss the slaw with the basil and place a mound of slaw on each of 4 plates. Slice the steak thinly on the bias, drape over the slaw and serve.

3/4 cup apple cider vinegar
1 tablespoon mustard seed
1 teaspoon celery seed
1 cup sugar

Steps:

  • Toss the cabbage and peppers and place into a strainer resting over a bowl to drain for 2 hours. Then place into a mason jar.

1 dried ancho chile and 1 dried pasilla chile, seeded, stemmed, and soaked in warm water for at
least 30 minutes, or 4 tablespoons good-quality ground chile powder
1/2 to 1 minced fresh jalapeno chile pepper
1/4 cup minced onion
3 cloves garlic, minced
1 teaspoon ground cumin
1 chipotle chile in adobo sauce
1 teaspoon salt
2 tablespoons tomato paste
1/4 cup hearty red wine (like Zinfindel or Cabernet Sauvignon), plus more if needed
2 pounds freshly ground beef (*see cook's note below)
6 tablespoons Chili Rojo, recipe follows

2 ripe avocados, peeled and pitted

Steps:

  • To make the slaw: mix all the slaw ingredients together. Set aside for at least 30 minutes to let flavors meld.
  • Prepare charcoal grill for medium-hot direct-heat cooking.
  • To make the Chili Rojo: add all chili ingredients, except extra wine, to a blender or food processor. Puree thoroughly, using extra wine if necessary to make a thick, smooth sauce.
  • To make the burger patties: take 6 tablespoons ground beef and mix with 6 tablespoons Chile Rojo. Make 6 equal hand-formed patties with the remaining ground beef. Place 2 tablespoons of the chile mixture onto the center of each patty. Carefully enclose each patty around the chile mixture to form a ball. Carefully flatten each ball back into a thick patty, keeping the chile mixture inside. Season the patties liberally with salt and pepper.
  • To make the Crema: mash the avocados in a food processor or with a potato masher. Add the rest of the ingredients and fold gently until thoroughly mixed.
  • When the grill is hot, oil the grill rack and cook the burgers over a medium-high flame until done, about 3 minutes per side for medium rare. If the exterior of the patties begins to burn, move them to a cooler side of the grill until the centers have had a chance to cook. Add a slice of cheese to each patty about 1 minute before they are done. Let patties rest off the heat for 1 or 2 minutes after cooking, and meanwhile toast the buns on a cooler side of the grill.
  • To assemble the burgers: spread each bun bottom with a layer of Avocado Crema. Add about 1/3 cup slaw, a patty with melted cheese, then a tablespoon of chili ketchup, and finally the bun top.

Great change from mayo-based slaws! I use a bag of pre-shredded broccoli slaw that includes shredded broccoli stalks, carrots, and red cabbage. But I bet the marinade would be great for a cabbage slaw, too. This gains flavor as it sits--best after a day in the refrigerator, but still good with a few hours to chill. Time does not include chilling. I estimated six servings. Its probably several more than that, but *some* of us had rather large portions.

½ cantaloupe - peeled, seeded, and thinly sliced
¼ small head napa cabbage, thinly sliced
2 shallots, thinly sliced
1 English cucumber - peeled, halved lengthwise, seeded. and thinly sliced
2 limes, juiced
½ bunch cilantro, roughly chopped
½ serrano chile pepper, seeded
3 tablespoons olive oil

Steps:

  • Bring mirin, wine, garlic, chile paste, and ginger to a boil in a saucepan. Add miso and stir to combine. Stir in sugar; cook until dissolved. Pour marinade into a large glass dish to cool. Add pork tenderloins and turn to coat. Cover and refrigerate 4 hours to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Place pork on a wire rack set over a sheet pan.

1 habanero chile, seeded, very finely chopped
2 garlic cloves, crushed
1/2 cup fresh orange juice
2 tablespoons fish sauce (such as nam pla or nuoc nam)
2 tablespoons light brown sugar
6 tablespoons unseasoned rice vinegar, divided
4 (1/2"-thick) bone-in pork chops
3 tablespoons olive oil, plus more for grill
Kosher salt, freshly ground pepper
1 jicama, peeled, sliced 1/4" thick
1 bunch mustard greens, thick stems removed, sliced (about 8 cups)
1/2 cup torn basil leaves

Steps:

  • Using the back of a chef's knife, lightly smash lemongrass, then thinly slice. Combine lemongrass, chile, garlic, orange juice, fish sauce, brown sugar, and 4 tablespoons vinegar in a small bowl. Pour half of marinade into a large resealable plastic bag; reserve remaining marinade.
  • Prick pork chops all over with a fork and add to bag; seal and turn to coat. Let marinate at room temperature, turning occasionally, at least 30 minutes.
  • Prepare grill for medium-high heat; oil grate. Remove pork chops from marinade and pat dry. Season with salt and pepper. Grill, turning occasionally, until charred and cooked through, 6-8 minutes. Transfer to a platter and let rest 5 minutes.
  • Meanwhile, season jicama with salt and grill until lightly charred, about 3 minutes per side. Cut into bite-size pieces and toss in a large bowl with mustard greens, basil, and remaining 3 tablespoons oil and 2 tablespoons vinegar; season with salt and pepper.
  • Taste reserved marinade and season with salt, if needed. Serve pork chops with slaw alongside and marinade for drizzling over.

MARINATED COLD SLAW

My friend Jimmy Adam's asked me to find a cold slaw recipe without mayonnaise. When we get together this is the cold slaw he prefers. I still like my mayonnaise based slaw, but this slaw is good for a nice change.

1 medium onion
1 carrot, shredded
3/4 c sugar
1 c apple cider vinegar
3/4 c canola oil
2 Tbsp sugar
1 tsp kosher salt

  • 1. Shred cabbage, slice onion and shred carrot. Separate onion slices and place in a bowl with cabbage and shredded carrot. Pout 3/4 cup sugar over top.
  • 2. In a saucepan combine vinegar, canola oil, 2 tablespoons sugar, salt and celery seeds. Bring to a boil and pour over cabbage. DO NOT STIR!

  • PreparationUsing the back of a chef's knife, lightly smash lemongrass, then thinly slice. Combine lemongrass, chile, garlic, orange juice, fish sauce, brown sugar, and 4 tablespoons vinegar in a small bowl. Pour half of marinade into a large resealable plastic bag; reserve remaining marinade.Prick pork chops all over with a fork and add to bag; seal and turn to coat. Let marinate at room temperature, turning occasionally, at least 30 minutes.Prepare grill for medium-high heat; oil grate. Remove pork chops from marinade and pat dry. Season with salt and pepper. Grill, turning occasionally, until charred and cooked through, 6-8 minutes. Transfer to a platter and let rest 5 minutes.Meanwhile, season jicama with salt and grill until lightly charred, about 3 minutes per side. Cut into bite-size pieces and toss in a large bowl with mustard greens, basil, and remaining 3 tablespoons oil and 2 tablespoons vinegar; season with salt and pepper.Taste reserved marinade and season with salt, if needed. 1 head of cabbage shredded
1 onion chopped fine
1 green bell pepper chopped fine
1 stalk celery chopped fine
1 1/2 cups sugar
1 cup cider vinegar
3/4 cup vegetable oil
1 t. salt

Steps:

  • Combine cabbage,onion,pepper, celery and sugar, set aside. Combine vinegar, oil and salt in saucepan and bring to boil. Pour over cabbage mixture and stir well, cover and refrigerate until ready to serve. Recommend overnight, longer is better.
