MARINATED ROASTED RED PEPPERS

Marinated Roasted Red Peppers image

Fresh, sweet taste, so much better than store-bought, and so easy! Use these marinated peppers as an antipasto, or a very healthy sandwich filling. Experiment with different herbs such as rosemary or Italian seasoning. My favorite is basil. Marinade also makes a wonderful salad dressing when the peppers have been eaten!

4 large red bell peppers, halved, with stems and seeds removed
¼ cup olive oil
2 cloves garlic, pressed

  • Broil peppers in the preheated oven until skin is blistered and blackened, 15 to 20 minutes.

This is perfect for a buffet or as a football appetizer menu addition. I make these a couple of days ahead and store them in a glass jar. Even non-mushroom-eaters like this one. On occasion, I kick this up by adding 1/8 teaspoon red pepper flakes instead of the black pepper.

MARINATED ROASTED RED PEPPERS

Marinated Roasted Red Peppers image

Bell peppers are roasted largely to remove the skins, which makes the vegetables supple and almost silky and perfect for marinating in a fragrant mix of oil, garlic, and basil. (This works for orange and yellow peppers, too, but not for green, because the skin is too thin.) Many recipes call for cutting the peppers into pieces lengthwise and roasting under the broiler, but it can be difficult to make the pieces flat enough to blacken evenly. It's easier to roast them right on the stove, over a gas burner, turning with tongs as each side blackens. Serve the marinated pieces as part of an antipasto with bread, cheese, olives, and cured meats, or toss them into pastas or over a pizza.

Yield Serves 4 to 6

Number Of Ingredients 6

2 red bell peppers
1/2 cup extra-virgin olive oil
3 tablespoons balsamic vinegar
1 garlic clove, peeled and very thinly sliced lengthwise
Coarse salt and freshly ground pepper
1 tablespoon chiffonade of basil (page 21)

Steps:

  • Roast Place bell peppers directly over a gas flame and cook, turning with tongs, until charred all over.
  • Steam and peel Transfer to a bowl and cover tightly with plastic wrap. Let stand until cool enough to handle, about 10 minutes, then rub off skins with a paper towel. (Do not run peppers under water, or you will wash away the flavor.) Remove seeds and veins and discard.
  • Marinate Slice peppers into 1-inch-wide strips. Transfer to a bowl and toss with oil, vinegar, and garlic. Season with salt and pepper, and toss with basil. Serve immediately, or refrigerate, covered, up to 3 days. If refrigerating, bring to room temperature and wait until just before serving to add basil.

Categories     Pork

Time 6h30m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 tablespoon finely chopped garlic
1 teaspoon salt, preferably coarse
1/2 teaspoon fresh ground black pepper
2 lbs boneless pork loin, cut into 1/4-inch-thick slices
1/4 cup lard (I substitute olive oil)
3 -4 medium sized sweet red peppers, seeded, deribbed and cut lengthwise into 1/2-inch strips
1 cup dry white wine
1/2 cup chicken stock
1 lemon, cut lengthwise into 8 wedges

Steps:

  • With a mortar and pestle of the back of a large heavy spoon mash the garlic, salt and pepper together to a smooth paste. Lightly spread the pork slices with the paste, place them in a bowl and toss with a spoon. Cover tightly and marinate in the refrigerator for 6 hours, turning the pork about in the bowl from time to time.
  • In a heavy 10-12-inch skillet, melt the lard (or heat olive oil) over high heat. Brown the pok in the hot fat (in 2-3 batches if necessary), turning the slices with tongs and regulating the heat so taht the slices colour quickly and evenly on both sides without burning. As they brown, transfer them to a plate.
  • Add the sweet red peppers to the fat remaining in the pan and, stirring frequently, cook them for about 5 minutes, or until they are well coated with the fat but not brown. Transfer the pepper to the plate with the meat.
  • Pour off all but a thing film of fat from the skillet and add the wine and stock. Bring to a boil over high heat, scrapping from the pan any brown particles.
  • Return pork and sweet peppers to the skillet, cover tightly, and reduce the heat to low. Simmer for about 20-25 minutes, or until pork is tender and shown no resistence when pierced with a small sharp knife.
  • With a slotted spoon, transfer pork and peppers to a deep heated platter. Bring remaining liquid to a boil over high heat, stirring constantely until lightly thickened.
  • Taste for seasoning, then pour sauce over the meat. Serve garnished with lemon wedges.

MARINATED RED PEPPERS

MARINATED RED PEPPERS image

Number Of Ingredients 10

Marinated Bell Peppers
Yellow and Red Bell Peppers
4 lbs firm peppers*
1 cup bottled lemon juice
2 cups white vinegar (5%)
1 tbsp oregano leaves
1 cup olive or salad oil
1/2 cup chopped onions
2 cloves garlic, quartered (optional)
2 tbsp prepared horseradish (optional) Complete Guide to Home Canning

Steps:

  • Yield: About 9 half-pints Procedure: Select your favorite pepper. Peppers may be left whole. Large peppers may be quartered. Wash, slash two to four slits in each pepper, and blanch in boiling water or blister skins on tough-skinned hot peppers using one of these two methods: Oven or broiler method to blister skins – Place peppers in a hot oven (400°F) or under a broiler for 6 to 8 minutes until skins blister. Range-top method to blister skins – Cover hot burner (either gas or electric) with heavy wire mesh. Place peppers on burner for several minutes until skins blister. After blistering skins, place peppers in a pan and cover with a damp cloth. (This will make peeling the peppers easier.) Cool several minutes; peel off skins. Flatten whole peppers. Mix all remaining ingredients in a saucepan and heat to boiling. Place 1/4 garlic clove (optional) and 1/4 teaspoon salt in each hot half-pint jar or 1/2 teaspoon per pint. Fill hot jars with peppers. Add hot, well-mixed oil/pickling solution over peppers, leaving 1/2-inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened clean paper towel. Adjust lids and process for 15 minutes in a water bath at a full rolling boil. Yield: About 9 half-pints * Note: It is possible to adjust the intensity of pickled jalapeño peppers by using all hot jalapeño peppers (hot style), or blending with sweet and mild peppers (medium or mild style). For hot style: Use 4 lbs jalapeño peppers. For medium style: Use 2 lbs jalapeño peppers and 2 lbs sweet and mild peppers. For mild style: Use 1 lb jalapeño peppers and 3 lbs sweet and mild peppers.
