Pan Seared Portobello Mushrooms With Bacon and Blue Cheese image

I just saw Michael Symon make this on The Chew today and I can't wait to try it! His helpful tips were: 1. No need to remove the gills from the Portobello mushroom for this recipe. Michael does suggest removing the gills when creating a sauce out of the mushrooms. 2. Use any type of stock in this recipe: vegetable, chicken, or beef. 3. Try this sauce on steaks or pork chops, too! If you omit the bacon and use the vegetable broth, it's a nice vegetarian dish. On the TV show, he also saved some of the blue cheese and crumbled it over the top of the dish once it was plated. Enjoy!

5 large portabella mushrooms (cleaned)
2 tablespoons butter
1/2 lb bacon (chopped)
1 onion (finely chopped)
3 tablespoons all-purpose flour
2 cups chicken stock
1/2 cup milk
3/4 cup blue cheese
1/2 cup parsley (chopped)
olive oil
salt and pepper

Steps:

  • Place a large saute pan over medium high and add 1 to 2 tablespoons of olive oil.
  • Add the bacon and cook until crisp, about 5 to 6 minutes. Remove the bacon with a slotted spoon and set aside.
  • Add the portobello mushrooms to the rendered bacon fat and season them with salt and pepper. Cook 3 to 4 minutes, and once golden brown, flip. Season again with salt and pepper and cook until golden brown, another 3 to 4 minutes.
  • Remove the mushrooms from the pan to a platter.
  • Add the onion, season with salt and pepper, and cook for 4 to 5 minutes, or until the onion is translucent.
  • Add the butter and then toss back in the bacon and then sprinkle the flour over the onion bacon mixture. Cook, stirring constantly, for 1 to 2 minutes, or until the flour begins to look sandy.
  • Slowly pour in the chicken stock and scrape up any brown bits on the bottom of the pan. Once the gravy starts to thicken and simmer, pour in the milk.
  • Add the blue cheese and cook until the gravy coats the back of a spoon, about 5 minutes. Taste and adjust seasoning.
  • Add the parsley, spoon the gravy on top of the mushrooms and serve.

1 tablespoon balsamic vinegar reduction, or to taste
freshly ground black pepper
3 tablespoons crumbled blue cheese
1 tablespoon roasted pine nuts, or to taste
¼ teaspoon crushed garlic

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place mushroom caps, tops facing down, on a baking sheet. Drizzle balsamic vinegar on each cap and sprinkle black pepper over vinegar.
  • Bake in the preheated oven until tender and fragrant, about 25 minutes. Sprinkle blue cheese, pine nuts, and garlic on each cap. Continue roasting until cheese melts, about 10 minutes more.

8 portobello mushroom caps
1 cup extra-virgin olive oil
4 cloves garlic, minced
1 large shallot, minced
Zest and juice of 2 lemons
1 tablespoon chopped fresh oregano
1/2 tablespoon chopped fresh thyme
1 teaspoon honey
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Brush the mushrooms carefully with a paper towel to get rid of the excess dirt. Using a spoon, carefully scrape out the gills from the underside of the portobello cap.
  • Slice the mushroom in half along the perimeter (like you are butterflying it) so you have 2 thin rounds and place them in a large bowl.
  • In a saute pan add the oil and place over medium heat. When the oil is shimmering, add the garlic and the shallot and cook for no more than 2 minutes. Turn off the heat and add the lemon zest, lemon juice, oregano, thyme, honey, salt, and pepper and whisk vigorously.
  • Pour the mixture over the mushrooms and with your hands toss gently to coat, making sure there is even coverage.
  • Let the mushrooms stand at room temperature for at least 45 minutes.

2 large portabella mushrooms, stemmed, wiped clean and cut into bite-size pieces
1 small red onion, sliced
1 garlic clove, minced
6 asparagus spears, cut into 1-inch sections
1 tablespoon merlot or 1 tablespoon fresh lemon juice
2 tablespoons blue cheese, crumbled
2 tablespoons balsamic vinegar
1 tablespoon water
fresh ground black pepper, to taste
6 cups red bibb lettuce, torn into bite sized pieces
1 (4 ounce) jar roasted red peppers, 2 whole peppers-sliced (I used a jar of Trader Joe's)
1/2 cup crouton (I used herb and garlic)

Steps:

  • Spray a large non-stick skillet with oil.
  • Heat over medium heat.
  • Add the Mushrooms, onion, garlic and asparagus and saute until tender, 4-6 minutes.
  • Add wine or lemon juice and cook until evaporates completely, about 1 minute.
  • In a small bowl whisk together the blue cheese, vinegar, water and black pepper to taste (I use a lot).
  • Add 3 cups lettuce to 2 large plates.
  • Top each with 1/2 the vegetable saute, 1 roasted red pepper, 1/2 of the whisked dressing and 1/4 cup of croutons.
  • Serve Immediately.

This is my own version of stuffed mushrooms. It is full of cheesy goodness and of course bacon! I hope you all enjoy!

Number Of Ingredients 8

2 large portabella mushrooms
2 tablespoons extra virgin olive oil
1/2 sweet onion
4 ounces cream cheese
4 slices bacon (precooked)
1/3 cup mozzarella cheese
1 tablespoon parmesan cheese
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Wash the portobellos then scrape out the gills and remove the stems.
  • Place them cap down in a pan then drizzle 2 tbsp of olive oil over them.
  • Roast in the oven for 12 minutes.
  • While they are roasting, in a skillet over medium heat add a tbsp of olive oil.
  • Chop the onions up and put them to the skillet. Cook until they start to brown, about 5 minutes.
  • Add the bacon and cook for an additional 2 minutes.
  • Remove from heat and stir in the cream cheese.
  • Take the mushrooms out of the oven salt and pepper them, then turn them over and salt and pepper them again.
  • Spread the mixture onto the mushrooms.
  • Distribute the Parmesan cheese over each mushroom.
  • Distribute the Mozzarella Cheese on each mushroom.
  • Place back into the oven for 5 minutes.
  • Take out and enjoy!

1 1/2 cups mozzarella cheese (grated)
1/2 cup parmesan cheese (grated)
sea salt
black pepper (fresh ground)
1 teaspoon italian seasoning
glaze
1/2 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon soy sauce
3 -4 garlic cloves (crushed)
black pepper (fresh ground)

Steps:

  • Wipe mushroooms ( do not wash) and coat with olive oil (using your hands or brush ).
  • Place mushrooms in a baking dish that has been wiped with olive oil.
  • Sprinkle mushrooms with sea salt and fresh ground black pepper and Italian Seasoning.
  • Pile mozzarella cheese and parmesan cheese on top of each mushroom.
  • Combine olive oil, vinegar, soy, garlic and black pepper in a small skillet, cook on medium about 2 minute.
  • Brush glaze on stuffed mushrooms, bake at 350 for about 20-25 minutes. Continue to baste through out cooking time, if any glaze is left, offer at serving time.
