GRILLED GARLIC BUTTER PRAWNS



Grilled garlic butter prawns image

Juicy prawns (shrimp) cooked on the grill then coated in a spicy garlic lemon butter sauce. Served with rice or crusty bread, this is a showstopper meal.

1.5 kg (3lbs) shrimp (deveined but shell and head on)
2 tbsp cajun spice
1 tbsp lemon pepper
2 tsp salt
3 tbsp olive oil
250 g (2 sticks) butter
10 garlic cloves (crushed )
3-4 tbsp fresh lemon juice
2 tsp cajun spice
1 tsp chilli flakes
½ cup cream ((heavy or whipping) )

Steps:

  • If your prawns haven't been deveined, use a sharp pair of kitchen scissors and make a long incision down the length of the back then remove the vein.
  • Place the prawns in a large bowl. Pour over the oil and season with the cajun spice, lemon pepper and salt. Mix well to ensure all the prawns are evenly coated.
  • To make the sauce, melt the butter in a large pot (the pot needs to be big enough to toss all the prawns in once they are cooked) and add the garlic, lemon juice and spices.
  • Allow to cook for a minute until fragrant then pour in the cream. Bring to a simmer and allow to cook for 5 minutes then remove from the heat.
  • Taste and adjust seasoning accordingly. The sauce needs to be a little too lemony and very well seasoned. Once the prawns are added, the sauce will mellow a bit.
  • Preheat the grill for 10-15 minutes. I prefer using an outdoor grill/braai/barbecue as the smoke adds incredible flavor to the shrimp once cooked but you can use a griddle pan too.
  • Add the prawns and cook for 2-3 minutes per side until they are coral/orange in color. As the prawns cook, add them to the pot with the sauce.
  • Once all the prawns have been added, toss to coat the prawns in the sauce.
  • Serve over rice or with crusty bread and extra lemon wedges.

Simple and fabulous, the 3 tips for top notch garlic prawns is to chop rather than use a mincer for the garlic (it splatters and burns on high heat), only marinate for 20 minutes and the splash of wine gives this a flavour edge as well as stopping the garlic from burning. Serves 2 as a main, 4 as a starter.

4 garlic cloves (, finely chopped (don't use crusher/mincer))
1 tbsp extra virgin olive oil ((separated))
1/2 tsp black pepper
1/2 tsp salt
1.5 tbsp olive oil
50g / 3.5 tbsp unsalted butter (, cut into 1.5cm / 1/2" cubes (Note 2))
1/4 cup dry white wine ((Note 3))
2 tbsp lemon juice
2 tbsp parsley, finely chopped ((garnish))
lemon wedges

  • Marinade: Place the prawns, garlic, olive oil and pepper in bowl. Gently toss then set aside for 20 minutes.
  • Salt: Add salt into prawns just before cooking and toss.

MARINATED PRAWNS (SHRIMP) FOR THE BBQ / GRILL

Super easy and tasty. Allow at least 30 minutes marinating time. You can use a large zip-lock bag to cut down on the washing up. You can use any seafood of your choice for this recipe. It's even pretty good with marinara mix.

500 g green prawns, peeled and deveined (raw prawns)
3 tablespoons olive oil
2 lemons, rind and juice
3 green onions, sliced (shallots)
1 fresh chili pepper, seeds removed and finely chopped
salt and pepper
2 tablespoons parsley or 2 tablespoons coriander, chopped

Steps:

  • Place prawns in a shallow dish or large plastic ziplock bag.
  • Blend together all the remaining ingredients and pour over the prawns. Turn to coat well and marinate for at least 30 minutes.
  • BBQ prawns for 4 to 5 minutes or until cooked. Do not overcook as they will become tough. Baste during the first couple of minutes of cooking time.
  • Serve sprinkled with some extra chopped coriander, parsley or shallots with either some rice or a salad.

An easy way to give a tasty zing to king prawns (jumbo shrimp). Tasty, healthy, can be done on an indoor grill or George Foreman, also will be a hit at BBQ's! We usually have this for dinner with salad and summer vegetables or a jacket potato. A great light tatsty meal for a summer evening.

80 ml olive oil
60 ml tomato ketchup
2 large garlic cloves, minced
2 tablespoons balsamic vinegar
2 tablespoons dried tarragon
1/2 teaspoon salt
2 teaspoons dried chili pepper flakes
300 g raw king prawns, peeled and de-veined

Steps:

  • Mix all ingredients except the prawns together in a bowl.
  • Add the prawns and stir thoroughly until they are well coated in the marinade.
  • Place, covered, in fridge for one hour.
  • Skewer the prawns - about 5 per skewer.
  • Cook for 6-8 minutes until prawns are pink all the way through. Use any leftover marinade for basting during cooking.

3 tablespoons Thai fish sauce
3 tablespoons rice vinegar
2 tablespoons caster sugar
2 tablespoons lime juice
1 tablespoon sunflower oil
14 ounces king prawns, raw
mint leaf

Steps:

  • Place fish sauce, vinegar and caster sugar in a saucepan with 4.5 fl oz water and bring gently to boiling point. Allow to cool and stir in lime juice.
  • Heat a frying pan and add the oil. When hot, add prawns and toss gently for 2-3 minutes, until they are completely pink. Dish on to a large plate and scatter with mint leaves and some sea salt.
  • Serve with the dipping sauce.

20 raw king prawns
1 small shallot , finely chopped
4 garlic cloves , finely chopped
1 fresh red chilli , halved, seeded and finely chopped
2.5cm piece of fresh root ginger , peeled and finely chopped
1 stem of lemongrass , tough outer leaves removed, finely chopped
a good handful of fresh mint leaves, finely chopped
a good handful of fresh coriander leaves, finely chopped
100ml/3½ fl oz olive oil
grated zest and juice of 1 lime

Steps:

  • Tip all the chopped ingredients into a bowl, add the olive oil along with the lime zest and juice and mix well. Set aside for 30 minutes to allow the flavours to mingle.
  • To make fragrant Thai prawns, remove heads and peel shells from 20 raw king prawns but leave tail sections on. Toss in the marinade and cook on a really hot barbecue for 45 seconds on each side until they turn from grey-blue to pink.
