Flank steak, a flavorful yet affordable cut of beef, gets a salty-sweet boost from Michael Ruhlman's wonderful marinade. It also gives the meat a nice charred flavor, with or without an outdoor grill: as the marinade caramelizes, it creates aromatic smoke that infuses the meat, right in the hot pan. (Note: Allow 8 hours to fully marinate the steak.)

1/2 cup ketchup
1/2 cup soy sauce
1/4 cup light or dark brown sugar, firmly packed
1/2 tablespoon onion powder
1 tablespoon ground ginger
1 tablespoon Worcestershire sauce
3 cloves garlic
1 1/2 pounds flank steak
Cherry tomatoes, for garnish
Greens, for garnish, such as watercress or arugula

Steps:

  • Marinade: Into a zip-top bag, add ketchup, soy sauce, brown sugar, onion powder, ground ginger, and Worcestershire sauce. Trim away the root end of garlic cloves, smash with the flat side of a knife, and discard the peel. Smash again, then roughly chop and add to the bag. Close the bag and mix the marinade. Makes about 1¼ cups. (Marinade will keep for up to 1 week in the refrigerator and up to 1 month in the freezer.)
  • Steak: Place steak into the bag with the marinade. Press out as much air as possible, seal the bag, and distribute the marinade around the meat. Let marinate for at least 1 hour at room temperature or, optimally, up to 8 hours to overnight in the refrigerator. (Note: If grilling after 1 hour of marinating, reserve the marinade to baste the steak during grilling.)
  • If the steak has been marinating in the refrigerator, bring it to room temperature before grilling, about 1 hour.Preheat grill pan (or outdoor grill) to medium-high heat. When grill pan is smoking hot, remove steak from marinade and lay it flat on the grill. Let cook for 4-5 minutes, largely undisturbed, pressing down on the meat to enhance grill marks if you wish. After 4-5 minutes, the steak should be lightly charred and no longer adhere to the grill. Lift and rotate steak about 60 degrees to create cross-hatched grill marks; let cook another 2-3 minutes. Finally, flip and repeat process on the other side, 7-8 minutes. (Total grilling time will be 15-16 minutes.)
  • After 15-16 minutes, steak should be medium-rare. Meat should feel firm to the touch at the thickest part (alternatively, a meat thermometer should register 125 F at the thickest part of the steak). Transfer steak to a wire rack fitted over a rimmed baking sheet. Let rest to allow the juices to redistribute in the steak, 15 minutes.
  • After the steak has rested, transfer to a cutting board. Find the grain of the meat, then thinly slice against the grain on a bias. Garnish with cherry tomatoes and greens, and serve immediately.

1/2 cup burgundy wine or beef broth
1/4 cup lemon juice
1 beef flank steak (2 pounds)

Steps:

  • In a small bowl, whisk barbecue sauce, wine and lemon juice until blended. Pour 1 cup marinade into a shallow dish. Add beef and turn to coat. Cover; refrigerate 4 hours or overnight. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in dish. Grill steak, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 6-8 minutes on each side. Let stand 5 minutes before thinly slicing across the grain. Serve with reserved marinade.

A really simple marinade- which I like to use a couple of days in advance, but it's totally not necessary! A simple 2 1/2 hours will certainly do that yummy cut of meat some justice!

1 1/2 lbs flank steaks, trimmed
1 lemon, juice of
1/2 cup soy sauce
1/4 cup dry red wine
3 tablespoons extra virgin olive oil
2 tablespoons Worcestershire sauce
3 tablespoons honey
1 garlic clove, minced
1/2 inch fresh ginger, grated

Steps:

  • Mix all ingredients (not the steak) in a large Ziplock baggie. Add the steak and marinate for 2 1/2 hours to 2 days.
  • Remove steak and discard the marinade.
  • Barbecue meat about 7 minutes per side for med-rare.
  • Slice on the diagonal- across the grain and serve!

3 lbs flank steaks
2 tablespoons minced chipotle chiles in adobo
1 tablespoon minced garlic
3 tablespoons chopped fresh cilantro
1/4 cup olive oil
3/4 cup hearty red wine (such as burgundy)
1/2 cup soy sauce
1/2 cup honey
2 tablespoons minced chipotle chiles in adobo
3 tablespoons balsamic vinegar

Steps:

  • To make meat: Carefully trim steak of any fat.
  • Mix together chipotle, garlic, cilantro, oil, wine and soy sauce; pour over steak. Cover and refrigerate 4 to 6 hours or overnight, turning occasionally. I always marinate overnight for the best flavor. To make sauce: In food processor, briefly blend honey, chipotle, vinegar, mustard, lime juice, garlic, cumin, allspice, cilantro and salt. Set aside. Correct seasoning with salt and pepper.
  • Prepare grill and hot coals according to manufacturer's instructions. Remove steak from marinade and discard marinade. Pat steak dry and grill over hot coals to desired doneness, approximately 4 to 5 minutes per side for medium-rare. Let steak rest 3 minutes before slicing.
  • To serve, slice meat thinly across grain on angle and arrange on warm plates with grilled sweet onions and peppers. Drizzle sauce over or serve on side.
  • NOTES : This is a great outdoor dish because it doesn't involve any stove-top or oven cooking. Any leftover meat and sauce can be turned into a filling for tacos or burritos.

3 Tbsp. extra-virgin olive oil, divided, plus more for grill
1 1/2 lb. flank steak
Kosher salt, freshly ground pepper
1 bunch scallions, trimmed
1/4 cup mirin (sweet Japanese rice wine)
1/4 cup soy sauce
2 Tbsp. light brown sugar
1 Tbsp. distilled white vinegar
1 Tbsp. Sriracha
2 tsp. toasted sesame oil
Toasted sesame seeds (for serving)

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat steak dry and place on a rimmed baking sheet. Lightly score both sides of steak with the tip of a paring knife, making shallow parallel cuts (no deeper than an 1/8") about 1" apart and running across the grain of the meat (this will prevent the steak from curling as it cooks). Season generously all over with salt and pepper; let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toss scallions on another baking sheet with 2 Tbsp. olive oil to coat; season with salt and pepper.
  • Whisk mirin, soy sauce, brown sugar, vinegar, Sriracha, and sesame oil in a medium bowl until sugar is dissolved; set marinade aside.
  • Pat steak dry again (the salt will have drawn out more moisture) and rub with remaining 1 Tbsp. olive oil. Grill scallions, turning often, until tender and charred in spots, about 1 minute. Return to baking sheet. Grill steak, turning every 2 minutes or so, until medium-rare, 6-8 minutes. Transfer to a cutting board and let rest 10-15 minutes.
  • Thinly slice steak crosswise and arrange on a rimmed platter; drizzle all of the juices that have collected on the cutting board over. Arrange grilled scallions on top of the steak, then pour reserved marinade over. Let sit at least 15 minutes and up to 1 hour before serving. To serve, sprinkle with sesame seeds as desired.

1 teaspoon ground dried chipotle powder or 1 teaspoon ground cumin

2 lbs flank steaks
2 1/2 lbs small red skin new potatoes
1 leek, trimmed of tough tops
4 slices thick cut smoky bacon, cut into thick pieces
1 cup chicken broth or 1 cup chicken stock
1 vine ripe tomatoes, seeded and chopped
salt
pepper
1 cup sour cream (to pass at table-optional)

Steps:

  • Mix garlic, steak seasoning, smoked paprika, chipotle or cumin, hot sauce, Worcestershire sauce, and vinegar. Whisk in extra virgin olive oil. Place meat in shallow dish and coat evenly to marinade. Let stand 15 minutes.
  • Cut larger potatoes in half, leave very small potatoes whole. Place potatoes in a pot and cover with water. Bring to a boil and cook potatoes 12-15 minutes until tender.
  • Heat a grill pan or outdoor grill to high heat.
  • Cut leek in half lengthwise. Chop into 1/2" pieces. Place leeks in a big bowl of water and release all the dirt from them with a good wash, separating all the layers. Drain leeks in a colander.
  • Grill flank steak 6-7 minutes on each side.
  • Put a drizzle of EVOO into a hot nonstick skillet over medium high heat. Cook bacon 3-5 minutes until it begins to crisp and has rendered most of it's fat.
  • Add leeks to the skillet and cook 3-5 minutes more until the leeks are tender.
  • Drain potatoes and return them to the hot pot. Smash the potatoes with the chicken stock or broth.
  • Add the bacon and leeks to the potatoes and continue to smash. Carefully fold in tomatoes. Season with salt and pepper to your taste.
  • Remove flank steak from grill and let juices redistribute before slicing. Thinly slice meat on an angle, cutting the meat against the grain.
  • Serve sliced flank steak next to BLT potatoes and top potatoes with a dollop of sour cream, if desired.

The flank is not the tenderest cut of beef, but it may be the most flavorful. To make it tenderer, I marinate it and slice it against the grain very thin on the bias after cooking it. So what you start with is very thin steak, and what you end up with is large thin slices of char-flavored meat that resembles roast beef. The acid in the lime marinade is very complementary to the char flavor of the meet. Marinated it anywhere from 4 to 6 hours: Any longer than that, and the lime juice will actually cook the steak, leaving you with gray meat. Recipe adapted from Chris Schlesinger Adopted 9/06

12 dried ancho chiles, stems and seeds removed
2 serrano chilies, stems and seeds removed
6 fresh garlic cloves
1/2 bunch fresh cilantro
1 tablespoon dried Mexican oregano
1 tablespoon ground cumin
1 tablespoon cinnamon
1 teaspoon fresh black pepper
1/2 cup soy sauce
1/4 cup olive oil
2 fresh limes, juice of
3 lbs fresh flank steaks, cut into thirds

Steps:

  • In a medium saucepan, boil 4 cups of water. Place anchos into boiling water and cover, turn off heat. Let stand and steep for 15 minutes or until chiles are soft. Strain the chiles and reserve the chile water.
  • Into a blender, add the ancho chiles, serranos, garlic, cilantro, oregano, cumin, cinnamon, black pepper, soy sauce, olive oil and lime juice. Blend on medium speed until a paste forms. If this mixture is too thick, add some of the reserved chile water.
  • Put the flank steak and the ancho marinade into a large bowl. Thoroughly coat the beef on all sides, mixing with your hands if necessary. Cover bowl with plastic wrap and tin foil. Let beef marinate in your refrigerator for 2 to 5 days. (The longer you let it marinate, the stronger the flavors will be.).
  • Grill and cook the flank steak to your liking over a charcoal or mesquite fire.

2 lbs beef flank steak
1/2 cup canola oil or 1/2 cup olive oil
1/2 cup soy sauce
1 bunch green onion, chopped
1 1/2 teaspoons fresh gingerroot, grated
1 1/2 teaspoons garlic powder
2 tablespoons cider vinegar
3 tablespoons honey
1 roasting bag

Steps:

  • Score flank steak on both sides.
  • Combine all other ingrediants in a large mixing bowl.
  • Place steak and marinade in a large cooking bag. Remove air and seal tight. Let marinate for 4 to 8 hours.
  • When ready, fire up the grill!
  • Grill steak on each side for about 10 minutes per side. The steak is best served medium rare.
  • Slice into 1/4 inch slices.

3 cloves garlic, finely chopped
1 tablespoon grill seasoning blend (recommended: Montreal Steak Seasoning)
1 teaspoon smoked paprika, ground chipotle chili powder or ground cumin
2 teaspoon hot sauce - eyeball it
1 tablespoon Worcestershire sauce
2 tablespoons red wine vinegar, 2 splashes
1/3 cup extra-virgin olive oil
2 pounds flank steak
2 1/2 pounds small red skin new potatoes
1 leek, trimmed of tough tops
4 slices thick cut smoky bacon, chopped, such as applewood smoked bacon
1 cup chicken broth or stock
1 vine ripe tomato, seeded and chopped
Salt and pepper
1 cup sour cream, to pass at table

Steps:

  • Mix garlic, steak seasoning, smoked paprika, chipotle or cumin, hot sauce, Worcestershire sauce and vinegar. Whisk in extra-virgin olive oil. Place meat in shallow dish and coat it evenly in marinade. Let stand 15 minutes.
  • Cut larger potatoes in half, leave very small potatoes whole. Place potatoes in a pot and cover with water. Bring to a boil and cook potatoes 12 to 15 minutes until tender.
  • Heat a grill pan or outdoor grill to high heat.
  • Cut leek in half lengthwise. Chop into 1/2-inch pieces. Place leeks in big bowl of water and release all the dirt from them with a good swish, separating all the layers. Drain leeks in a colander.
  • Grill flank steak 6 to 7 minutes on each side.
  • Put a drizzle of extra-virgin olive oil into a hot nonstick skillet over medium high heat. Cook bacon 3 to 5 minutes until it begins to crisp and has rendered most of its fat. Add leeks to the skillet and cook 3 to 5 minutes more until the leeks are tender.
  • Drain the potatoes and return them to the hot pot. Smash the potatoes with the chicken stock. Add the BLT: bacon, leeks and tomatoes to the potatoes and continue to smash. Season the potatoes with salt and pepper to your taste.
  • Remove flank steak from grill and let juices redistribute before slicing. Thinly slice meat on an angle, cutting the meat against the grain. Serve sliced flank steak next to BLT potatoes and top potatoes with a dollop of sour cream.

3/4 cup soy sauce
1/4 cup packed brown sugar
4 tablespoons balsamic vinegar
1/2 teaspoon dry mustard powder

Pinch of salt
FOR THE HERBED GORGONZOLA BUTTER:
1 cup unsalted butter, softened
1 cup crumbled Gorgonzola cheese
3 cloves garlic, minced
1/3 to 1/2 cup loosely packed fresh herbs, chopped
Salt and pepper, to taste

Steps:

  • INSTRUCTIONS In a small bowl, whisk together soy sauce, brown sugar, balsamic vinegar, mustard powder, red pepper flakes, pepper and salt. Place steak in a shallow dish or large zip-top bag and add soy sauce mixture. Cover the dish or seal the bag and refrigerate for at least 4 hours, or overnight. Heat grill to high heat. Grill steak, covered, for 6 minutes per side, or until medium rare. Let stand 10 minutes before slicing into thin strips to serve. Steps:

  • Whisk onion, garlic, olive oil, balsamic vinegar, soy sauce, Dijon mustard, rosemary, salt, and pepper together in a mixing bowl.
  • Put the flank steak in a large resealable plastic bag. Pour marinade into the bag and coat steak with the marinade. Squeeze excess air from the bag and seal. Marinate in the refrigerator at least 30 minutes, up to 2 days.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove the flank steak from the marinade and shake to remove excess liquid. Reserve marinade.
