This is a grown up jiggler. It has become a Christmas tradition in my family. (Sigh!) =) These are firmer than the Jello shots you may have tried before.

3 (5/8 ounce) boxes sugar-free lime gelatin
1 ounce unflavored gelatin
1/2 cup lime juice
2 1/2 cups tequila
3 cups boiling water

Steps:

  • Mix Jello and gelatin in boiling water and stir until dissolved.
  • Add lemon juice and tequila, stirring well.
  • Pour into large, shallow foil pan and refrigerate until firm.
  • Using a knife, score horizontally and vertically to make jiggler blocks. I've tried small cookie cutters, but there is too much wastage. Enjoy.

LIME SUGAR:
1/3 cup(s) sugar
- zest from 1 lime
JIGGLERS:
4 ounce(s) tequila
2 ounce(s) grand marnier
1/2 cup(s) lime juice
2 tablespoon(s) lemon juice
4 - 6 tablespoon(s) sugar
2 env. - gelatin, unflavored
1 pinch(es) salt

Steps:

  • LIME SUGAR: Place sugar & zest of a lime into a small food processor or blender. Process for about 10 pulses, or until zest in very fine.
  • JIGGLERS: In a medium bowl, add tequila, grand marnier & juices. Sprinkle gelatin over top. Heat water in microwave until boiling, add sugar & whisk together. Pour hot sugar water (simple syrup) into tequila/grand marnier mixture & add a pinch of salt.
  • Whisk the mixture until gelatin & sugar dissolves, about 3 minutes. If gelatin is not dissolving, heat for 30 seconds in microwave.
  • Spray 9 x 13" baking dish with cooking spray. Pour gelatin mixture into prepared baking dish & chill at least 3 - 4 hours.
  • Remove from refrigerator & cut into squares. Place on platter & garnish with lime sugar.
  • TIP: You can also use a 9 x 6" baking dish to make taller shots.
