1/2 cup whipping cream
3 cups angel food cake or 3 cups poundcake, cubes
3 cups fresh fruit (strawberries,cubed melon,and/or seedless red or green grapes)
1/2 cup sour cream
1 (3 ounce) package cream cheese, cut up and softened
1/4 cup sifted powdered sugar
1 tablespoon tequila
1 tablespoon orange juice concentrate
1 tablespoon lime juice

Steps:

  • For the margarita dip: Place sour cream,cream cheese,powdered sugar,tequila,orange juice,and lime juice in a blender or food processor cover blend until combined.
  • Add whipping cream cover and blend until fluffy and mixture mounds.
  • Serve immediately or cover and chill up to 24 hours.
  • For Kabobs: Arrange small skewers of cake and fruit on serving platter Serve with dip.

1/2 cup sour cream
1/4 cup confectioners' sugar
1 tablespoon lime juice
1 tablespoon thawed orange juice concentrate
1 tablespoon tequila
1/2 cup heavy whipping cream
12 fresh strawberries
6 pineapple chunks
1 medium mango, peeled and cubed
6 seedless red grapes
2 slices pound cake, cubed

Steps:

  • In a large bowl, combine the first six ingredients. Beat in whipping cream until fluffy. Meanwhile, thread fruits and cake on metal or wooden skewers. Serve with dip.

1 1/2 boneless skinless chicken breasts, diced into 1-inch pieces
1/4 cup fresh lime juice
2 tablespoons tequila
1 tablespoon triple sec
1 tablespoon olive oil
1 garlic clove, chopped
1 cup finely shredded sharp cheddar cheese (at room temp)
3/4 cup sour cream
1/2 cup hot salsa
1 teaspoon chili powder
salt
2 tablespoons chopped cilantro
tortillas or corn chips, for serving

Steps:

  • Combine lime juice, tequila, Triple Sec, olive oil, and garlic in glass bowl. Set aside small amount for basting.
  • Add chicken and toss to coat.
  • Marinate for 20 minutes.
  • Meanwhile, stir together cheese, sour cream, salsa, chili powder and salt. Let stand at room temperature.
  • Heat grill to medium hot.
  • Spear chicken pieces onto skewers.
  • Lay skewers on grill and cover.
  • Grill for 4 minutes, then baste with marinade, turn, cover and grill for 2 minutes.
  • Baste again and finish cooking, about 2-3 more minutes.
  • Remove chicken from skewers and sprinkle with cilantro.
  • Serve with dip and chips.

  • Beat cream cheese, margarita mix, orange juice and lime peel in large bowl with electric mixer on low speed until smooth.
  • Beat whipping cream in chilled small bowl with electric mixer on high speed until stiff. Fold into cream cheese mixture. Cover and refrigerate 1 hour.

1 ripe papaya peeled, seeded and chopped
1 ripe mango peeled, seeded and chopped
4 or 5 cilantro stems, leaves removed and chopped, discard stems
1 sweet red pepper seeded and diced
2 red finger peppers or 1 jalape�o finely chopped (Season to taste; some like it HOT!)
4 key limes
1 15 oz. can black beans opened, rinsed and drained
1 medium red onion chopped
1 large or 2 small avocados
1 8 oz. container of jumbo crab meat rinsed and pulled apart (optional)
1 6-1/2 oz. can of sliced black olives
1-1/2 cups shredded iceberg or romaine lettuce
8 oz shredded cheese (queso blanco, cheddar or pepper jack)
1 8 oz. container sour cream
Chili lime taco chips (or any flavor)
6 12 oz. margarita glasses (you can also serve in a chip and dip bowl

Steps:

  • Stir together papaya, mango, cilantro, peppers and the juice from 2 key limes. Let flavors blend for about 10 minutes. Peel, seed and chop the avocado and toss with the juice from the other 2 limes. In a margarita glass or bowl, layer these ingredients in order � 2 tablespoons black beans, 2 tablespoons fruit salsa, 2 tablespoons avocado, Crab (if adding) 1 to 2 tablespoons in center of avocado layer, a sprinkling of onions to taste, a sprinkling of olives to taste, 1/4 cup lettuce, 2 to 3 tablespoons cheese, and a generous dollop of sour cream. Refrigerate glasses or bowl after filling. Serve with taco chips.

2/3 cup frozen margarita mix, thawed
1/4 cup orange juice
2 teaspoons lime zest
1 cup fat-free whipped topping
1 whole strawberry
lime juice or orange juice
colored crystal sugar

Steps:

  • In a large mixing bowl, add cream cheese, margarita mix, orange juice, and lime peel.
  • With a hand held electric mixer, beat cream cheese mixture on low until smooth.
  • Fold in whip topping.
  • Cover and refrigerate for 1 hour before serving.
  • To serve, take a large margarita glass.
  • Dip rim of glass into lemon, lime or orange juice and then colored sugar.
  • Spoon in carefully the cream cheese mixture.
  • Serve with whole strawberries.
