1 pound slab bacon, cut into 1-by-1/2-inch pieces
1/4 cup pure maple syrup
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
  • Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
  • Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

Steps:

  • Put 4 thick-cut bacon slices on a rack set on a baking sheet. Place in a cold oven, set the temperature to 400˚ F and bake 35 to 40 minutes, rotating the pan halfway through. Let cool, then cut each slice into 6 pieces.
  • Combine 3 tablespoons mayonnaise, 1 tablespoon yellow mustard, 2 teaspoons relish, 1 teaspoon celery salt, a few dashes of hot sauce and a pinch of pepper in a food processor. Add 2 chopped hard-boiled eggs; puree. Transfer to a piping bag with a star tip.
  • Pipe the egg mixture onto each bacon piece and top with paprika and chopped chives.

1-1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup 2% milk
1 tablespoon butter, melted
Oil for deep-fat frying
GLAZE:
1 cup confectioners' sugar
3 tablespoons maple syrup
1 tablespoon 2% milk
1 teaspoon vanilla extract
7 maple-flavored bacon strips, cooked and crumbled

Steps:

  • In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk egg, milk and melted butter until blended. Add to flour mixture; stir just until moistened., Heat oil to 350° in an electric skillet or deep fryer. Drop tablespoonfuls of batter, a few at a time, into hot oil. Fry 3-4 minutes or until golden brown, turning often. Drain on paper towels., In a small bowl, mix confectioners' sugar, maple syrup, milk and vanilla until smooth.
