I only like cornbread when it's been drowned in maple syrup. This recipe has the syrup in it, so it's less messy! My husband and youngest son love this.

1 1/4 cups all-purpose flour
1 cup cornmeal
2 teaspoons baking powder
1 teaspoon salt
1 egg
3/4 cup nonfat milk
1/2 cup maple syrup
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, cornmeal, baking powder and salt.
  • In a small bowl, whisk together the egg, milk, syrup and butter; stir into dry ingredients just until moistened.
  • Pour into a greased 9 inch square baking pan. Bake at 400°F for 15-20 minutes.
  • Serve warm.

2/3 cup maple syrup
1/3 cup canola oil
1 cup plain soymilk
1 cup whole wheat flour
1 cup fine organic cornmeal
1 tablespoon baking powder
1 teaspoon kosher salt

Steps:

  • Stir wet ingredients together.
  • In another bowl, whisk together dry ingredients.
  • Mix wet and dry together.
  • Pour into a greased 9x9 square pan.
  • Bake for 35 minutes at 350 (or in miniloaf or muffin pans for about 25 minutes), until tester comes out clean.

1 c yellow cornmeal
1 c all purpose flour
1 Tbsp baking powder
1/2 stick butter (melted)
1 c whole milk
1/2 c sugar
1/2 c maple syrup
2 eggs
1 pinch salt
1 Tbsp vanilla extract

Steps:

  • 1. Preheat oven to 400 F. Grease a 9x4 bread tin. Set a side. In a large bowl mix well all the dry ingredients(cornmeal,flour, salt,sugar, baking powder).
  • 2. In another bowl mix well the wet ingredients (eggs, maple sirop, milk, butter and vanilla). Then add the wet ingredients to the dry ingredients and stir until just mix.
  • 3. Pour in to the bread tin or cupcakes tin with paper muffin cups(makes 12). Bake for 25 minutes or until golden top.

Another Cookgirl Original from my youth. Where did I come up with these recipes? The ingredients have been updated; real syrup instead of syrup product, good quality bacon, homemade not boxed cornbread. For success with this recipe, you want a dense, firm textured cornbread not one with a cake-like texture or the bread will fall apart.

4 slices cornbread, DAY OLD, cut into 1/2 " slices (or you can cube the bread into 1 1/2-inch cubes)
2 slices bacon, cooked and crumbled (vegetarian version use facon or tempeh bacon)
maple syrup, warmed

Steps:

  • In a castiron skillet, cook the bacon on medium heat until crisp; reserve fat. Set aside to cool.
  • In same pan, fry the cornbread slices or cubes until golden brown on all sides.
  • Place fried cornbread on a plate and crumble the bacon on top.
  • Pour some warm maple syrup on top. Watch another episode of Land of the Lost.
