Oven Roasted Sweet Potatoes are coated in a tasty maple syrup mixture and roasted until tender, caramelized and slightly golden. These delicious roasted sweet potatoes with maple syrup are easy to make and always a favorite!

2 large sweet potatoes
1/4 cup maple syrup
2 tablespoons brown sugar
1/4 teaspoon cinnamon
2 tablespoons olive oil
Salt to taste

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil for easy clean up.
  • Rinse, peel and cut the sweet potatoes into 3/4 inch cubes.
  • In a small bowl, mix the maple syrup, brown sugar, cinnamon and olive oil.
  • Spread the sweet potatoes in a single layer on the baking sheet and pour the maple syrup mixture over them. Season lightly with salt and toss to coat.
  • Roast in the oven, for 30 to 40 minutes or until tender and the edges are lightly brown, turning them with a spatula once during the cooking process.
  • Remove from the oven and season with salt to taste. Serve warm.

⅓ cup pure maple syrup
2 tablespoons butter, melted

  • Preheat oven to 400 degrees F.
  • Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
  • Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45 to 50 minutes more.

The taste of this recipe is so amazing! Everytime I fix this my family is always commenting on how wonderful it smells and can't wait to eat it! It has the wonderful aroma and taste similar to Pumpkin Pie that you always feel you are getting a special treat, yet this recipe has fruits and nuts which make it a healthier alternative. You can add Mini Marshmallows to the top after uncovering if desired.

1 can (8 ounces) unsweetened pineapple chunks
1/2 cup packed brown sugar
1/4 cup apple cider or unsweetened apple juice
1/4 cup maple syrup
1/4 cup butter, cubed
3/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
3 large sweet potatoes, peeled and cut into 1/4-inch slices
3 medium apples, peeled and cut into 1/4-inch slices
3/4 teaspoon salt
1/3 cup chopped pecans

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small saucepan, combine brown sugar, apple cider, maple syrup, butter and reserved pineapple juice. Bring to a boil; cook until liquid is reduced to 3/4 cup and syrupy, about 20 minutes. Stir in cinnamon and cloves; set aside and keep warm., Preheat oven to 400°. 1/3 cup maple syrup
1/3 cup apple cider

  • To cook the sweet potatoes, wash them and prick all over with a fork. Wrap in foil and bake in a 375-degree oven until very tender. This can take anywhere from 50 minutes to 1 1/2 hours, depending upon the girth of the potato. Thinner ones cook more quickly. Cool. Peel just before using.

I created these candied sweet potatoes with maple syrup to entice my young children to eat sweet potatoes. They didn't like them plain and none of us liked recipes using marshmallows, pineapple, etc. This slightly-sweet version fit the bill. The kids are grown-up now, but still request this be served every Thanksgiving.

2 ½ pounds sweet potatoes, peeled and cubed
butter-flavored nonstick cooking spray
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground nutmeg
½ teaspoon ground allspice
¼ cup pure maple syrup
3 tablespoons salted butter, melted

Steps:

  • Bring a pot of water to a boil; add sweet potatoes. Continue to boil until they are easily pierced with a knife, 15 to 20 minutes. Drain.
  • While potatoes boil, preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray.
  • Mash the potatoes thoroughly in a bowl. Mix cinnamon, salt, pepper, nutmeg, and allspice together and stir into the potatoes. Transfer to the prepared baking pan. Mix maple syrup and butter together and drizzle over top.

4 small sweet potatoes (or 2 large), peeled and cut into 1-inch cubes
1/4 cup grade B maple syrup, divided
1/4 cup extra-virgin olive oil, divided
2 teaspoons kosher salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
4 large shallots, peeled and thinly sliced
2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl add the sweet potatoes, 2 tablespoons of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper. Mix to evenly coat the potatoes and arrange on a sheet tray. Roast until caramelized, golden brown and soft, about 20 to 30 minutes. Be sure to check them after 15 minutes and stir, if needed.
  • Meanwhile, in a large skillet over medium-low heat, add the remaining 2 tablespoons of olive oil and the sliced shallots and saute until they start to caramelize, about 5 minutes Add the remaining 2 tablespoons of maple syrup and balsamic vinegar. Season with salt and pepper, to taste. Lower heat to medium and cook until golden brown and caramelized, about 5 minutes. Add water, 1 tablespoon at a time, if the pan becomes dry.
  • Add the roasted sweet potato cubes to the caramelized shallots and transfer to a warm serving dish.

1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper

Sea salt and freshly grated nutmeg, to taste, for serving

Steps:

  • Preheat the oven to 425 degrees F. Toss the sweet potatoes on a large, foil-lined rimmed baking sheet with the oil; season, to taste, with salt and pepper. Roast the potatoes for 20 minutes.
  • Remove the pan from the oven and toss the potatoes with the syrup.
