These squares are my husband's favorite. We get some real, pure maple syrup from back home in Ontario, Canada, and they are just to die for. Hope you enjoy as much as we do.

1 cup all-purpose flour
⅓ cup packed brown sugar
½ cup softened butter
1 egg
⅓ cup packed brown sugar
3 tablespoons pure maple syrup
½ cup chopped pecans

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Combine the flour and 1/3 cup brown sugar in a mixer. Mix in the softened butter until a dough has formed. Press into an ungreased 8x8-inch baking dish, and prick with a fork.
  • Bake the shortbread in the preheated oven until golden brown, about 20 minutes. While the shortbread is baking, beat the egg in a mixing bowl along with 1/3 cup brown sugar, maple syrup, and pecans. Pour the pecan mixture over the hot crust, and return to the oven. Continue baking until firmed, 12 to 15 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking. Cool completely, then cut into 1-inch squares to serve.

1/4 cup sugar
3 tablespoons cornstarch
1 teaspoon maple flavoring
1-3/4 cups all-purpose flour
GLAZE:
3/4 cup plus 1 tablespoon confectioners' sugar
1/3 cup maple syrup

Steps:

  • In a large bowl, beat butter, sugar and cornstarch until blended. Beat in flavoring. Gradually beat in flour., Shape dough into a disk; cover. Refrigerate until firm enough to roll, about 45 minutes., Preheat oven to 325°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a floured 2-3/4-in. leaf-shaped cookie cutter. Place 1 in. apart on parchment-lined baking sheets., Bake until edges are light brown, 20-25 minutes. Remove from pans to wire racks to cool completely., In a small bowl, mix confectioners' sugar and maple syrup until smooth. Spread over cookies. Let stand until set.

2 sticks (16 tablespoons) unsalted butter, cut into chunks, at room temperature, plus more for pan
1/2 cup sugar
1 large egg yolk
2 tablespoons real maple syrup
1 teaspoon vanilla extract
1 vanilla bean, split and scraped, optional
1 3/4 cups all-purpose flour, plus more for working with dough
1/4 cup rice flour
1/4 teaspoon fine sea salt
1 1/2 cups coarsely chopped toasted walnuts

Steps:

  • Preheat the oven to 325 degrees F. Cut a piece of foil 8 by 16-inches. Butter the corners and sides of an 8-by-8-inch baking pan. Line the pan with the foil, leaving an overhang on two sides.
  • Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Reduce the speed to medium and add the egg yolk, syrup, vanilla extract and vanilla bean seeds if using. Reduce the speed to low, add the flours and salt, all at once, and beat until just combined. Add the walnuts and continue to mix until fully combined.
  • Using your hands, drop the dough in pieces evenly into the prepared pan. Flour your hands lightly and press the dough together and into the corners of the pan. Put a piece of waxed paper on top of the dough and use something square and heavy-another pan, a pound of cold butter-to press the dough into the pan and make a smooth, even top. Chill until firm, about 30 minutes.
  • When it is firm, use a fork to score the dough all over. Bake until deep golden brown and starting to pull away from the sides of the pan, about 45 minutes. Cool completely on a rack, about 2 hours, then wrap with plastic wrap, and let sit at room temperature overnight.
  • Place a lightweight cutting board or a baking rack over the top of the pan. Flip and set on the counter. Gently pull the pan from the foil and the foil from the pan to lift off the pan. Gently peel the foil off the bar. Place another lightweight cutting board on top, and flip the bar right-side-up.
  • Using a sharp, serrated knife, slice the square in half. Then slice each half into 8 bars.

1/3 cup plus 3 tablespoons pure maple syrup
1/4 teaspoon salt, plus a pinch

1 cup walnuts, finely chopped

Steps:

  • Beat the butter, 1/2 cup confectioners' sugar, 1/3 cup maple syrup, 1/4 teaspoon salt and the maple extract in a large bowl with a mixer on medium speed until smooth and creamy, about 2 minutes. Reduce the mixer speed to low; add the flour in 2 batches and beat until just combined.
  • Turn out the dough onto a lightly floured surface and dust with flour. Gently knead a few times until soft but not sticky, lightly dusting the surface with more flour as needed. Pat into an 8-inch square (about 1/2 inch thick). Cut into 1-by-2-inch rectangles, flouring the knife if needed.
  • Spread the walnuts on a plate. Gently press each rectangle in the walnuts to coat. Arrange about 1 1/2 inches apart on 2 baking sheets. Refrigerate until firm, about 30 minutes.
  • Position racks in the upper and lower thirds of the oven; preheat to 325 degrees F. Bake, switching the pans halfway through, until the cookies are firm and lightly browned on the bottom, about 25 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

125g Plain flour
75g Light Brown Muscovado Sugar
115g Softened Unsalted Butter
125g Plain flour
75g Light Brown Muscovado Sugar

1 Large Egg
75g Light Brown Muscovado Sugar
45ml Pure Maple Syrup (as dark as possible)
60g Chopped Pecans

Steps:

  • Preheat an oven to 175 degrees C (350 degrees F)
  • Combine the flour and 75g light brown muscovado sugar in a mixer until well combined.
  • Mix in the softened butter until a dough has formed.
  • Press into a lined 20x20cm baking dish, and prick with a fork. If you don't have an 20x20cm dish you can use any rectangular dish. You may just have to make more shortbread, but that's never a bad thing!
  • Bake the shortbread in the preheated oven for about 20-30 minutes (depending on the amount of shortbread you make). It should look puffy and golden brown when done.
  • While the shortbread is baking, beat the egg in a mixing bowl along with 75g light brown muscovado sugar, maple syrup, and pecans.
  • Pour the pecan mixture over the hot shortbread and return to the oven. Continue baking until firmed, about 20-25 minutes. Remove from the oven, and immediately run a knife around the edges to prevent sticking if the mixture has got past the baking parchment. Cool completely, then cut how ever you like. ENJOY!

Cinnamon Shortbread Crust
1/4 cup sugar
1 cup all purpose flour
1/2 tsp ground cinnamon
1/4 tsp salt
6 tbsp butter, chilled and cut into 4-6 pieces
Walnut Maple Topping
2 cups coarsely chopped walnuts
1/2 cup brown sugar
1/2 cup maple syrup
2 large eggs
2 tbsp butter, melted and cooled
1 tbsp all purpose flour
1/2 tsp vanilla extract

Steps:

  • Preheat oven to 350F. Line a 9×9-inch square pan with aluminum foil. In the bowl of a food processor, combine all of the crust ingredients. Pulse several times until a coarse, sandy mixture forms. Pour into prepared baking dish and press into an even layer. Bake for 13-15 minutes, until crust is very lightly browned around the edges. Spread walnuts in an even layer over the still-warm crust (crust does not need to cool before filling). In a medium bowl, make the rest of the topping. Whisk together sugar, maple syrup, eggs and melted butter until very smooth. Add in flour vanilla and whisk until well combined. Pour over walnuts and put the baking pan back in the oven. Bake for about 30 minutes, or until tart is set and topping is golden brown. Cool bars completely in the pan, then use the aluminum foil to easily lift them out before slicing. Makes 20 bars. Serves 10-12

CANADIAN MAPLE SHORTBREAD



Canadian Maple Shortbread image

This is a variation of Shortbread that has a uniquely Canadian flavour! It is much like the Scottish shortbread with it's rich creamery butter flavour combined with Canada's maple syrup. It requires two separate steps: making the maple butter and making the shortbread. It's an easy recipe to make and I hope you enjoy it.

2/3 cup maple syrup (use the real thing!)
1 cup butter, at room temperature (use butter, not margarine)
3/4 cup maple butter
2 cups flour
1 pinch salt

Steps:

  • Maple butter: In a small saucepan, bring the maple syrup to a boil and reduce by half (this should take about 15 minutes) Remove from heat and let it stand at room temp.
  • When it is cool, add the butter and stir or gently whisk until well blended.
  • Place in frigde until firm.
  • This makes about 3/4 cup.
  • Shortbread: In a food processor or blender, combine the maple butter, flour and salt.
  • Use the pulse setting to combine well the ingredients.
  • Take it out of the blender/food processor and shape it into a ball.
  • Flatten it to a disc shape.
  • Wrap in plastic and refrigerate until well chilled.
  • Preheat oven to 350F and position rack to centre of oven.
  • Remove dough from the fridge and roll it out to about 1/4 inch thickness.
  • Cut dough into desired shapes (I use a maple leaf shaped cookie cutter... very Canadian, eh?) Place cookies on ungreased cookie sheet and bake until slightly golden brown (about 10-15 min, depending on your oven).

½ cup unsalted Gay Lea Butter, softened
2 tablespoons icing sugar
Pinch salt
½ cup chopped, crispy bacon
2 tablespoons finely chopped chives
1 cup all-purpose flour
2 tablespoons rice flour
1 tablespoon pure maple syrup

Steps:

  • Grease an 8-inch (20 cm) square baking pan; reserve. In a large bowl, beat the butter with the sugar and salt using an electric mixer, for 2 minutes or until light and fluffy.
  • Add the bacon and chives; mix until evenly distributed. Combine the all purpose flour with the rice flour. Add the flour mixture to the butter mixture; stir until just combined.
  • Press the dough, in an even layer, into the prepared pan. Cover and chill for 30 minutes or until firm.
  • Preheat oven to 325 degrees F (160 degrees C).
  • Lightly score the dough with a knife into 16 squares (do not cut all the way through the dough). Brush the top with maple syrup.
  • Bake for 25 to 35 minutes or until set and lightly golden. Immediately cut through the scored wedges. Transfer pan to a wire rack and cool completely.

3/4 cup hazelnuts, finely ground
1 cup butter, softened
1/4 cup Splenda brown sugar blend
2 tablespoons maple syrup
1/2 teaspoon maple extract
1 1/2 cups quick-cooking rolled oats (not instant)
1 cup all-purpose flour

Steps:

  • In food processor, finely grind hazelnuts; set aside.
  • In large bowl, beat butter with SPLENDA until light; beat in maple syrup and maple extract.
  • Stir in oats and flour.
  • Roll into balls using 1 Tbsp dough per ball. Roll in ground nuts to coat.
  • Flatten slightly; place, about 1 inch apart on lightly sprayed/greased baking sheets. Refrigerate for 30 minutes.
  • Bake in 350°F oven for about 10 minutes or until puffed and set.
  • Let cool one minute. Transfer to racks; let cool completely.

2 1/4 cups all-purpose flour, plus more for work surface
1/2 cup cake flour (not self-rising)
1/2 teaspoon salt
1/2 cup pecan halves (about 2 1/4 ounces), finely chopped, plus 24 whole pecan halves, for decorating
1 cup (2 sticks) unsalted butter, room temperature
3/4 cup granulated sugar
1/4 cup pure maple syrup, preferably Grade B
1 large egg yolk
1/4 teaspoon pure maple extract
1 large egg, lightly beaten
Turbinado sugar, for sprinkling

Steps:

  • Sift flours and salt into a bowl. Whisk in chopped pecans.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and granulated sugar on medium-high speed until smooth and light, about 1 minute. Add maple syrup, egg yolk, and extract; beat on medium speed until well combined. On low speed, gradually add flour mixture, beating until just combined. Dough should be smooth and pliable. Flatten into a disk. Wrap in plastic; refrigerate until firm, 1 1/2 hours or overnight.
  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • On a lightly floured work surface, roll out dough to 1/4 inch thick. Cut out rounds using a 2-inch cookie cutter; place 1 inch apart on prepared baking sheet. Brush tops with beaten egg; place pecan half in the center of each cookie. Sprinkle the entire surface with turbinado sugar.
  • Bake cookies, rotating sheet halfway through, until golden around the edges, 10 to 12 minutes. Transfer to a wire rack to cool. Cookies can be stored in airtight containers at room temperature up to 4 days.

These little shortbread bars with maple coconut filling look and sound irresistible!! Taken from Zoe Bakes, it was her grandmother's recipe and a family favorite at Christmastime! She uses dried fruit and candied homemade grapefruit peel in hers. I hope you enjoy!

1/2 cup salted butter
1/4 cup granulated sugar
1 1/4 cups sifted flour
2/3 cup maple syrup
1/4 teaspoon salt
1 1/3 cups flaked coconut
1/2 teaspoon pure vanilla extract
2 tablespoons dried cranberries (optional) or 2 tablespoons cherries, very finely chopped (optional)
2 tablespoons candied fruit, very finely chopped (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare a 9″ square baking dish with parchment paper (or use a Rectangular Tart Mold with Removable Bottom).
  • To make the brown butter shortbread:.
  • In a small sauce pot heat the butter on medium heat until it boils and the butter turns a light golden color, about 3-5 minutes. Strain the butter into a medium bowl. Add the sugar and flour and mix with a spoon until well incorporated. The dough will be quite loose. Cover and refrigerate for about 10 minutes. If the dough gets too cold just let it sit out until it is soft and pliable again.
  • Put into the pan and distribute it evenly; cover in plastic wrap and then you can easily spread with your fingers without the dough sticking to you.
  • Bake on a cookie sheet for 20 minutes or until the dough is a nice golden brown. Remove and allow the crust to cool on a rack while you make the maple filling.
  • Maple coconut filling:.
  • In a sauce pot combine the maple syrup, salt, coconut and vanilla, cook over medium heat until boiling. Continue to cook for about a minute, add the dried and candied fruits if using.
  • Pour the coconut mixture over the cooled crust. Bake at 375° for about 15-20 minutes, until the coconut turns golden brown.
  • Cool completely before removing from pan. (If you are using the 9″ pan with parchment you will need to cut around the edges with a knife to loosen and invert onto a plate. Peel off the parchment and invert onto a cutting board.).
  • Cut into rectangular bars or little squares if you want them to last a few extra minutes!

3/4 cup maple sugar
1 cup unsalted butter
1 teaspoon salt
1/4 cup sugar
1 -2 teaspoon maple extract
1 teaspoon vanilla extract
2 1/3 cups unbleached all-purpose flour

Steps:

  • Preheat oven to 300°; lightly grease two 9-inch round cake pans; sprinkle each pan with 1 tablespoon of the maple sugar.
  • In a bowl, cream together the butter, salt, regular sugar, ½ cup maple sugar, maple extract, and vanilla; then beat in the flour.
  • Divide the dough in half and press it into the prepared pans, smoothing surface with your fingers.
  • Sprinkle each round with 1 tablespoon of the remaining maple sugar, pressing it in gently.
  • Prick the dough with a fork in an attractive pattern.
  • Bake for 35-40 minutes, until it is golden brown around the edges.
  • Remove it from the oven and loosen the edges with a heat-resistant plastic knife or table knife.
  • Wait 5 minutes, then carefully turn the shortbread out onto a clean work surface, all in one piece.
  • Using a pizza wheel or sharp knife, cut each round into 12 wedges (do this while the shortbread is still warm; if you wait until it is cool, it will not cut easily).
  • Transfer the wedges to a rack to cool.
