2/3 cup low-fat milk (1/2 cup if adding vodka)
2 cups butter pecan light ice cream
2 tablespoons maple syrup
1 teaspoon almond extract
2 shots vanilla vodka, optional

Steps:

  • Combine all ingredients in a blender. Blend for 1 minute, until smooth.
  • Pour into glasses and serve with straws.

1/2 cup whole milk or 1/2 cup low-fat milk, cold
1/2 cup pecans, chopped, toasted
3 tablespoons pure maple syrup
1 quart butter pecan ice cream, softened until just melty at the edges

Steps:

  • Place milk, pecans, and maple syrup in a blender and blend to break down the pecans and mix thoroughly, about 30 seconds.
  • Add the ice cream and pulse several times to begin breaking it up. With the blender motor off, use a flexible spatula to mash the mixture down onto the blender blades.
  • Continue pulsing, stopping, and mashing until the mixture is well blended, thick, and moves easily in the blender jar, roughly 30 to 90 seconds.
  • Pour into a chilled glass or glasses, and serve at once.

Yield Makes two thick 8-ounce shakes.

Number Of Ingredients 11

4 large scoops Vanilla Ice Cream (recipe follows) or store-bought vanilla ice cream
3/4 cup whole milk
1/4 cup smooth speculoos spread, such as Biscoff
2 tablespoons maple syrup
Whipped cream and sprinkles, optional, for serving
5 large egg yolks
1 1/2 cups whole milk
1 1/2 cups heavy cream
2 teaspoons pure vanilla extract (no fake stuff!)
2/3 cup sugar
1/2 teaspoon kosher salt or coarse sea salt

Steps:

  • Add the ice cream, milk, speculoos spread and maple syrup to a blender, cover, and pulse to combine. Continue pulsing in longer increments until you see a whirlpool form - that's when you know it's done. Pour or spoon the shake into two tall glasses. Top with any garnish you'd like - cherries, whipped cream, a drizzle more of maple syrup, Styrofoam packing chips, or something even more delicious. Serve with straws and spoons.
  • Boozy version: Want to booze up this sucker? Reduce the amount of milk to 1/2 cup and add 1/4 cup bourbon.
  • Whisk the egg yolks in a large nonreactive saucepan; set aside. Warm the milk and cream in a small saucepan over medium heat, stirring often to keep the mixture from scorching, for about 5 minutes, until it has begun to steam. Add the mixture to the yolks in a slow, steady stream, whisking continuously.
  • Set the saucepan over medium heat, add the vanilla, sugar, and salt, and stir for about 2 minutes, until the sugar has dissolved. Continue cooking, stirring continuously, for another 5 minutes, or until the mixture begins to thicken; do not allow to boil. Transfer the pan to an ice bath to stop the cooking and stir until the steaming stops.
  • Transfer the mixture to an airtight container, cover, and refrigerate for at least 6 hours, or overnight.
  • Freeze the mixture in an ice cream maker according to the manufacturer's instructions. When it is finished, transfer the ice cream to an airtight container and freeze overnight to harden. The ice cream can be stored in the freezer for up to 5 days. Makes 1 quart

MAPLE PECAN PROTEIN SHAKE

Why not make something decadent healthy? Pecans are healthy, eggs are healthy, and compared to most other sweeteners maple syrup contains a lot of minerals which are good for you, but less sugar (more liquid). Most special protein rich recipes claim egg whites only, but as a matter of fact the egg yolk is higher in protein, and research has shown that the cholesterol in eggs is NOT the problem with high blood cholesterol levels. Mostly it's the carbohydrates which elevate the cholesterol, not butter, eggs or bacon. Prep time does not include soaking time!

1/4 cup pecans
1 tablespoon maple syrup
1 cup water
1 scoop whey protein
2 dates
1 egg

Steps:

  • Soak dates in one cup of water for about two hours.
  • Put soaking water with the dates and pecans in food processor and process until smooth. That may take 2 to 5 minutes.
  • As soon as the nutmilk is smooth, add maple syrup, whey protein and egg. Continue processing until everything is smooth and creamy.
  • Enjoy!
