APPLE-MAPLE BREAKFAST SAUSAGE-HOMEMADE
A little sweet, a little spicy, this breakfast sausage makes great patties, breakfast sandwiches or wraps. This is easy to make, can be tailored to your personal taste, and will cost a fraction of what you will pay for at the grocery store for the same amount.

Steps:
- Cut pork into 2 inch pieces and the fat into 1 inch cubes.
- Grind through a 1/4 inch grinding plate.
- You can use a food processor-pulse in SMALL batches.
- In a small mixing bowl combine the wine, maple syrup, lemon juice and salt/spices.
- Whisk well.
- In a large mixing bowl combine the meat and wine/spice mixture.
- Mix well to combine.
- Cover bowl and place in refrigerator for 2 hours, up to 24 hours.
- The longer the better.
- Package in 1 pound amounts and freeze.

MAPLE SAUSAGE APPLE BREAKFAST CASSEROLE
This is not my recipe but one from Jimmy Dean and it is too good not to share. Best breakfast casserole by far. I have been asked to make this for many potlucks and many dinners served at my home. It's not just for breakfast anymore. If you love sweet and savory, you'll love this recipe. Recipe from Jimmy Dean.

Steps:
- 1. Preheat oven to 325°F. Toss apples with sugar and cinnamon; set aside.
- 2. Beat eggs, milk and vanilla in large bowl with wire whisk until well blended. Add bread cubes, sausage, apple mixture and 1-½ cups cheese; stir gently until evenly coated.
- 3. Spoon into lightly greased 13x9-inch baking dish; top with remaining ½ cup cheese.
- 4. Bake 40-45 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 12 squares to serve. ***Some serve with warm maple syrup, but I think it's over kill on the sweetness scale.***
- 5. ***Cook's Tips: Make-Ahead Maple Breakfast Casserole: Assemble casserole as directed. Refrigerate overnight. When ready to serve, uncover and bake 50-55 minutes or until knife inserted in center comes out clean.***

This is my ex-mother-in-laws recipe. She use to have us over for Brunch on Christmas and New Years and this was the best.I am listing the ingredients as "per person". This can "wait" in the oven on warm for quite a while! This is so easy and soooo delicious!

Steps:
- In large skillet, simmer sausage links in approx 1/2 inch of water for 10 minutes, remove and put sausage in large oven proof dish.
- Melt 1 tblsp of butter in the skillet and stir fry apple chunks.
- Remove apples and mix with sausages.
- Add cinnamon and sugar on top of sausages and apples.
- Dot with remaining butter.
- Cover and bake 30 minutes at 375 degrees.
- Uncover and continue to bake for 15 more minutes.
- You can reduce cooking time if you need to.

SAUSAGE AND PANCAKE CASSEROLE
Steps:
- Preheat oven to 350°. In a large skillet over medium heat, cook and crumble sausage until no longer pink, 5-7 minutes; drain. Mix biscuit mix, milk, eggs and oil until blended; stir in sausage. Transfer biscuit mixture to a greased 13x9-in. baking dish. Top with apples; sprinkle with cinnamon sugar. Bake until set, 30-45 minutes. Serve with syrup., To make ahead: Refrigerate, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator; uncover and let stand while oven heats. Bake as directed, increasing time as necessary until a knife inserted in the center comes out clean.
