1 cup water
1/2 cup long-grain white rice
1 1/2 cups whole milk
1/2 cup pure maple syrup
2 large eggs
1 large egg yolk
1 teaspoon vanilla extract
1/2 teaspoon grated lemon peel
1/8 teaspoon salt
3/4 cup raisins
1/4 teaspoon ground nutmeg
Whipped cream

Steps:

  • Combine water and rice in heavy medium saucepan. Bring to simmer. Reduce heat to low. Cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Uncover and cool.
  • Position rack in center of oven; preheat to 350°F. Butter 6- to 8-cup soufflé dish. Place in roasting pan. Whisk milk and next 6 ingredients in large bowl to blend. Stir in raisins and 1 1/2 cups cooked rice (reserve any remaining rice for another use). Pour into dish. Sprinkle nutmeg over. Add enough hot water to roasting pan to come halfway up sides of dish. Bake until pudding is set in center and brown around edges, about 1 hour 5 minutes.
  • Remove dish from water. Cool pudding at least 15 minutes. Spoon into bowls and serve warm or at room temperature with whipped cream.

16 slices raisin bread, cubed
1/2 cup packed brown sugar
1/2 cup raisins
1/2 teaspoon ground cinnamon
5 large eggs
2 cups 2% milk
1/2 cup maple syrup
1/4 cup butter, melted

Steps:

  • Place bread cubes in a greased 2-qt. microwave-safe dish. Sprinkle with brown sugar, raisins and cinnamon. , In a large bowl, whisk eggs, milk, syrup and butter until smooth. Pour over bread; gently press bread cubes into egg mixture. , Cover and microwave at 50% power until center is soft-set and a knife inserted near the center comes out clean, 10-12 minutes. Let stand 5 minutes. If desired, serve with additional syrup.

2 tablespoons butter, softened
1/4 cup sugar
2 eggs
1-1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup raisins
1 cup milk
1-1/2 cups maple syrup
Whipped cream or ice cream, optional

Steps:

  • In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Combine flour, baking powder, salt and raisins; add alternately with milk to creamed mixture. , In a small saucepan, bring syrup to a boil; pour into a greased 1-1/2-qt. baking dish. Pour batter over hot syrup; do not stir. , Bake, uncovered, at 375° for 30-35 minutes. Serve hot with cream or ice cream if desired.
