1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1/2 cup maple syrup
1 large egg, at room temperature
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 3/4 teaspoons baking powder
3/4 teaspoon fine sea salt
1 1/2 cups finely chopped pecans
Flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl with a hand mixer), cream the butter and brown sugar until light and fluffy, 3 to 4 minutes. With the mixer running on low speed, add the maple syrup in a slow, steady stream and mix to combine.
  • Scrape the bowl well, then add the egg and mix on medium speed until the mixture is well combined. Beat in the vanilla.
  • Add the flour, baking powder and fine salt to the mixer and pulse until it starts to combine, then scrape the bowl well and mix on low speed until uniformly combined. Add the pecans and mix until evenly incorporated.
  • Scoop the dough into 2 tablespoon-size rounds on the prepared baking sheets, staggering the rows and leaving at least 1 1/2 inches between each cookie to allow room to spread. Sprinkle flaky sea salt on the surface of each cookie. Transfer to the oven and bake until the cookies are lightly golden around the edges, 15 to 18 minutes. Transfer to a cooling rack to cool before serving.

2 cups packed brown sugar
2 eggs
1 teaspoon vanilla extract

1/2 cup chopped pecans
FROSTING:
1/4 cup butter, softened
4 cups confectioners' sugar
1 teaspoon maple flavoring
3 to 5 tablespoons 2% milk
1-1/2 cups pecan halves

Steps:

  • In a large bowl, cream the shortening, butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and maple flavoring. Combine flour and baking soda; gradually add to the creamed mixture and mix well. Stir in white chips and pecans., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 9-11 minutes or until golden brown. Cool for 2 minutes before removing to wire racks. , In a large bowl, cream the butter, confectioners' sugar, maple flavoring and enough milk to achieve spreading consistency. Frost each cookie with 1 teaspoon frosting; top with a pecan half.

1 cup plus 2 tablespoons unsalted butter, softened
1/2 cup plus 1 tablespoon light brown sugar
1 teaspoon maple extract
2 1/4 cups self-rising cake flour
35 (approximately 1/2 cup) pecan halves
2 baking sheets, lined with parchment or wax paper or greased

Steps:

  • Preheat the oven to 325 F.
  • Cream the butter and sugar. When you've got a soft, supple mass, add the maple extract and work in the sifted flour. Roll into walnut-sized balls, and press with the base of a glass that you've lightly oiled (and if you've got some in the house, you could use walnut oil) or brushed with melted butter. Press gently onto the lined baking sheets--leaving a 2-inch space round each as they'll spread--and stud each with a pecan half.
  • Cook for 15 minutes. They start off golden so it's hard to tell if they're cooked just by sight, but lift one up to check it's no longer doughy on the bottom. Remove from the oven, leave for a minute or two on the trays, and then transfer to a wire rack to cool.
  • Variation: You can always substitute walnut halves for the pecans, but if you leave them completely nut-free, these are wonderful as cheese biscuits. Yes, they're sweet, but in the same way as digestive biscuits are strangely good with both creamy and hard cheese, so these can pair with a pungent blue quite wonderfully.

1 1/2 teaspoons salt
1 cup melted butter, cooled slightly (no subs!)

2 large eggs
1 egg yolk
3 teaspoons maple extract (can use a teaspoon less)
2 cups chocolate chips
3/4 cup chopped pecans

Steps:

  • Set oven to 375°.
  • Line 2 cookie sheets with parchment or wax paper.
  • In a small bowl whisk together flour, baking soda and salt.
  • In a large bowl using an electric mixer beat melted butter with both sugars on high speed until fluffy (about 5 minutes).
  • Add in eggs one at a time then egg yolk beating until creamy.
  • Beat in the maple extract.
  • Reduce the speed to low and add in the flour mixture until JUST blended.
  • Stir in chocolate chips and pecans.
  • Chill the dough for about 2 hours until semi-firm, or up to 24 hours.
  • You can scoop the dough onto baking sheets and freeze to use later if desired.
  • Scoop about 1/4-cup batter onto cookie sheet, leaving about 3-inches apart.
  • Flatten mounds into 3-inch rounds using moistened palm of your hand.
  • Repeat with remaining cookies (you will have to use two baking sheets for this and bake in two separate batches).
  • Bake 1 sheet at a time for about 13-15 minutes.
  • Transfer the cookies to a rack to cool and continue with remaining cookies.

3/4 c white sugar
1/2 c dark brown sugar
1 large egg
1/2 tsp salt
1 tsp baking soda
1/2 tsp vanilla extract
1/2 tsp maple extract
1/4 c pure maple syrup
2/3 c pecans, chopped
2 1/2 c all purpose flour

Steps:

  • 1. Place all ingredients, except Syrup, Nuts, and Flour in a medium to large mixing bowl and cream together until well mixed with a large wooden spoon.
  • 2. Add the Maple Syrup and mix well.
  • 3. Stir in Pecans and Flour until well mixed.
  • 4. Spoon heaping teaspoonfuls of dough on an ungreased cookie sheet, 12 to a sheet.
  • 5. Bake in a 375 degree in a conventional oven for 9 minutes. 350 degrees in a convection oven for 9 minutes. Ovens can vary. Be careful not to burn.
  • 6. Cool 2-3 minutes before transferring to a rack, using a spatula. Cool completely before storing airtight. Do not stack while cooling.
  • 7. Makes 4 1/2 - 5 dozen satisfying cookies.

50g desiccated coconut
225g plain flour
140g salted pecans , roughly chopped
100g raisins
140g unsalted butter
225g light soft brown sugar
3 tbsp maple syrup
3 tbsp golden syrup
2 tbsp boiling water
1 tsp bicarbonate of soda

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line 3 large baking trays with baking parchment. In a medium bowl mix the oats, coconut, flour, pecans and raisins. Set aside.
  • In a small saucepan, melt the butter and sugar with the syrups, then remove from the heat. Combine the boiling water and bicarb, then add this to the butter mix. Pour over the oat mixture and stir to combine. Form balls using an ice-cream scoop of mixture and place on the lined trays, with lots of space around them, about 6 per tray. Flatten each ball slightly.
  • Bake for 14-16 mins, depending on how chewy you like them. Allow to stand for 1 min then transfer to a wire rack to cool. Keep in an airtight container for up to 1 week, or freeze for up to 3 months.

2 1/4 cups all-purpose white flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup packed light brown sugar
3/4 cup butter, softened
2/3 cup powdered sugar
3 1/2 tablespoons pure maple syrup
1 large egg yolk
2 teaspoons vanilla extract
1/3 cup pure maple syrup
1 cup powdered sugar
6 1/2 tablespoons cold unsalted butter, cut into chunks
1/8 teaspoon vanilla extract
2 tablespoons finely chopped pecans, for topping

Steps:

  • Preheat oven to 350*.
  • Spread the 1 cup of pecans in a small baking pan and toast in the oven, stirring frequently, for 6-9 minutes, or until lightly browned, be careful not to burn. Immediately turn out into a small bowl. Let stand until completely cooled; set aside.
  • In a medium bowl, thoroughly stir together the flour, baking soda, and salt; set aside.
  • In a food processor, process the pecans and brown sugar continuously until the pecans are completely pureed and form a paste, 3-4 minutes -- scraping down sides of processor and bottom several times.
  • Add the butter and process until well blended. Add the powdered sugar, maple syrup, egg yolk, and vanilla and process until very well blended and smooth. Add the flour mixture and process in on/off pulses just until evenly incorporated.
  • Divide the dough into thirds. Place each portion between large sheets of wax paper. Roll out each portion to a generous 1/8" thick; check the underside of dough and smooth out any wrinkles that form. Stack the rolled portions, paper and all on a baking sheet.
  • Freeze for 30 minutes or until chilled and firm.The dough may be frozen for up to 24 hours, let thaw before using.Prehat oven to 350*.Grease several baking sheets or coat with nonstick spray.

  • Heat oven to 350°F.

These are from Penzey's spices. They have just the right amount of maple. I've sub. margarine, Sucanat and w.w. pastry flour and they still turn out good. Preparation time includes chilling time. If you don't want to chill, just drop on sheets and you'll have ball like cookies. They still taste wonderful!

1 cup butter, softened
1/2 cup granulated sugar
1 large egg yolk
3 tablespoons pure maple syrup
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 1/4 cups pecans, coarsely chopped (about 6 oz)

Steps:

  • In a medium bowl, beat the butter with an electric mixer until pale and creamy, about 3 minutes.
  • Gradually beat in the sugar until well blended.
  • Add the maple syrup, egg yolk and vanilla and mix until blended.
  • Add the flour and the pecans and mix well.
  • Divide the dough in half and shape into long logs (using a little flour on your hands if it gets sticky.) The easiest way to get a nice circular shape is to place the dough on the plastic wrap, pull the wrap around the log, and roll with your hands until round. You may have to rewrap the log with a fresh piece of plastic wrap.
  • Refrigerate until firm - at least 2 hours.
  • Preheat oven to 350°.
  • Take the dough out of the refrigerator one roll at a time, unwrap and slice the dough about 1/2 inch thick.

MAPLE PECAN PRESENT COOKIES WITH PENUCHE ICING

Number Of Ingredients 14

2 1/2 cups all-purpose flour, plus more for flouring work surface
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed light brown sugar
1 teaspoon maple extract
2 large eggs
1/2 cup packed light brown sugar
1/4 cup (4 tablespoons) unsalted butter
1/4 cup milk
1 1/2 to 2 cups confectioners' sugar
3/4 cup pecans, chopped, optional
Royal icing, for detailing, optional

Steps:

  • For the cookies: In a medium bowl, whisk together the flour, baking powder and salt. In a separate large bowl using an electric mixer, beat together the butter, granulated sugar and brown sugar, mixing until pale yellow and fluffy, 3 minutes. Add in the maple extract and eggs and mix well. Slowly incorporate the dry ingredients into the wet ingredients and mix well.
  • Transfer the dough to a floured work surface, divide into two disks, wrap in plastic and chill in the refrigerator for about an hour.
  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Working with one disk at a time, roll out the dough to 1/4-inch thickness. Cut out present shapes with the cookie cutter and place the cookies 2 inches apart on the prepared baking sheets. Re-roll the scraps to get as many cookies as possible, returning the dough to the refrigerator to chill if necessary.
  • Bake just until the edges start to brown, 10 to 12 minutes. (Bake one sheet at a time for even cooking and browning.) Transfer the cookies to a wire rack and let cool.
  • For the penuche icing: In a small saucepan , combine the brown sugar and butter and set over medium-high heat. Bring to a boil and cook until slightly thickened, about 1 minute. Let cool for 10 minutes. Slowly add the milk and whisk until smooth. Slowly whisk in the confectioners' sugar until the frosting reaches the desired consistency.
  • Spread the penuche icing over the cookies and sprinkle with the chopped pecans if using. Add royal icing detailing, such as a bow, if desired.

MAPLE CRANBERRY PECAN COOKIES

This is a wonderful cookie! With Oatmeal, Pecans, Craisins or Dried Cherries and Maple Syrup...I feel it qualifies as a breakfast cookie...lol I found the original recipe on Relish...I've tweaked it to my liking and here you have a wonderfully yummy cookie! My families new favorite!!! :o)

2 c dried cranberries or cherries
1 1/2 c water (you can use a complimentry flavor of liquor instead of the water)
3 c oatmeal, uncooked (quick or old fashioned work)
1 c coconut
2 2/3 c flour
2 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 c brown sugar
1 c butter
3/4 c pure maple syrup
1-2 tsp vanilla
1-2 tsp maple flavoring
2 c toasted pecans, coursely chopped

Steps:

  • 1. Place cranberries or cherries in a microwave safe bowl, pour water or liquor over top and microwave 2-3 minutes. Let stand at least 15 minutes then drain and set aside. Discard water. (If using dried cherries, they might need a little chop)
  • 2. Preheat oven to 350. Line cookie sheets with parchment or spray them. If you don't, these cookies WILL stick!
  • 3. In a large bowl, combine oatmeal, coconut, flour, salt, baking soda, cinnamon and brown sugar until mixed well together. In a saucepan, combine butter and syrup, heat over medium heat until butter is melted, stirring occasionally. Remove from heat. Add vanilla and maple extract.
  • 4. Stir butter mixture into dry ingredients stirring to combine then mix in pecans and cranberries. I use a 1/4c cookie scoop, and place balls onto prepared cookie sheets at least 3" apart. (I get 8 cookies on my air bake pan.) Flatten slightly. Bake at 350 for 15-18 minutes or until golden brown. Cool on cookie sheets 10 minutes then transfer to wire racks to cool completely. And ENJOY!!!
  • 5. Helpful tips or thoughts... I have made this with 4 c oatmeal and no coconut before and they were still great! I have added white chocolate chips to these...wonderful! I have used 2 tsp pumpkin pie spice in place of the cinnamon...wonderful!
  • 6. Since this recipe makes a lot, I like to bake 2 pans and freeze the dough for later use, to do this: Place cookie dough balls onto a lined pan, place in freezer and freeze until firm. Place frozen dough balls into a freezer zip lock bag. Keep in freezer for up to 3 months. Take out what you need when you need it. Place frozen dough balls on prepared cookie sheet, allow to thaw, flatten slightly then bake per instructions.

1/2 teaspoon cinnamon
1/4 teaspoon allspice
pinch cloves
generous grate fresh nutmeg
1/4 teaspoon salt
3/4 cup packed brown sugar
1/4 cup butter softened
2 tablespoons maple syrup
1 large egg
1/2 cup pecans toasted and chopped finely
1/2 cup raw sugar
1 tablespoon maple syrup

Steps:

  • Preheat the oven to 350 F. In a medium bowl combine the dry ingredients (flour, baking soda, spices and salt). In a separate bowl beat butter and sugar until blended. Add maple syrup and egg, beat until fully combined. Stir in the dry ingredients and then fold in the chopped pecans. In a small bowl combine the raw sugar and 1 tablespoon of maple syrup. Mix until it has the consistency of brown sugar. Shape the dough into balls about the size of small walnuts and roll in the maple syrup/sugar mixture. Place the balls onto a parchment lined baking sheet and squash lightly. Bake approximately 10 minutes or until lightly browned around the edges.

1/4 cup butter, cubed
3 tablespoons maple syrup
2/3 cup confectioners' sugar
1/2 cup chopped pecans
2 large egg whites

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in maple syrup and egg yolks. Beat in flour. Wrap dough in plastic wrap; refrigerate 2 hours or until firm. Meanwhile, in a small saucepan, combine butter, maple syrup and confectioners' sugar. Cook over medium heat until mixture reaches a rolling boil, stirring occasionally. Remove from heat; fold in pecans. Cool slightly; refrigerate until cooled completely., Preheat oven to 350°. In a small bowl, whisk egg whites. Shape dough into 1-in. balls. Press a 1-inch wide indentation in the center of each ball, leaving a 1/4-in. shell. Dip in egg whites; place 2 in. apart on greased baking sheets. Bake 6 minutes. Press 1 rounded teaspoon pecan filling into center of each cookie. Bake 7-9 minutes longer or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool.

2 cups (12-ounce package) Nestle Toll House Premier White Morsels
1/2 cup chopped pecans
60 pecan halves
4 cups powdered sugar
4 to 6 tablespoons milk
1/4 cup softened butter
1 teaspoon maple flavoring

Steps:

  • Combine flour and baking soda in medium bowl. Beat brown sugar, shortening, butter, eggs, maple flavoring and vanilla extract in large mixer bowl until creamy. Gradually beat in flour mixture. Stir in morsels and chopped pecans. Drop by rounded tablespoon onto ungreased baking sheets. Bake in preheated 350 degree F oven for 9-12 minutes or until light golden brown. 2 cups all-purpose flour, spooned in and leveled
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 cup pure maple syrup
1 large egg
2 tablespoons orange juice
1 teaspoon imitation maple extract
1 teaspoon pure vanilla extract
2/3 cup superfine sugar
1/2 cup lightly packed dark brown sugar
1 1/2 cups coarsely chopped toasted pecans

Steps:

  • Position oven racks in the upper and lower thirds of the oven; preheat oven to 350°; moderately butter cookie sheets.
  • In a 3-quart saucepan, melt the butter and set aside to cool to tepid.
  • Strain together the flour, salt, and baking soda; set aside.
  • Using a wooden spoon, add the maple syrup to the butter, mixing well.
  • Blend in the egg, orange juice, and maple and vanilla extracts.
  • Whisk in the sugars, stirring until well combined and free of lumps.
  • Stir in the dry ingredients in three additions, then fold in the nuts with a large rubber spatula.
  • Using the tip of a teaspoon, drop mounds of dough the size of large walnuts onto the cookie sheets, placing them 2 inches apart.

  • *Rustic Maple Pecan Date Cookies--reduced chopped pecans to 3/4 cup; measure 1 cup loosely packed dates cut into 1/4 inch dice and toss them into 1 teaspoon flour to prevent them from sticking together; mix dates with the pecans and proceed as directed.
