- In a small saucepan, combine the orange juice, syrup, vinegar, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper. Bring to a boil; cook until liquid is reduced to 1/2 cup, about 5 minutes. Stir in basil and orange zest. Remove from the heat; set aside., Sprinkle chicken with remaining salt and pepper. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165°, basting frequently with orange juice mixture.

- Between sheets of plastic wrap or waxed paper, flatten each chicken breast to 1/4-inch thickness.
- In 12-inch nonstick skillet, melt butter with salt over medium heat. Cook chicken in butter 1 to 2 minutes, turning once, until brown.

- To toast pecan pieces, bake in 375F oven for 4 to 5 minutes.
- Keep oven preheated.
- For chicken: In a shallow bowl, mix together buttermilk and egg.
- Place chicken breasts in buttermilk mixture.
- In a second mixing bowl, combine pecans, cracker crumbs and salt.
- Turn chicken breasts in buttermilk, then coat with pecan mixture.
- Place chicken breasts in a greased shallow baking dish and drizzle with melted butter.
- Bake in preheated oven for 45 to 50 minutes or until chicken is no longer pink inside.
- Serve with Maple Pecan Sauce.
- Maple Pecan Sauce: In a small saucepan, mix sugar, maple syrup, water, soy sauce and cornstarch; bring to a boil, stirring until sugar is dissolved.
- Remove from heat and add lemon juice and orange rind; stir.
- Just before serving, bring sauce to a boil; remove from heat and stir in toasted pecans.
- Makes 1 cup.
MAPLE PECAN CHICKEN
Chicken breaded with panko crumbs, can sub boneless skinless chicken thighs for the breasts, just adjust cooking times.

- Heat oven to 400 degrees F.
- Mix maple syrup, mayo and salt in a shallow dish. In another shallow dish mix panko crumbs and pecans.
- Pound chicken breasts to 1/2-inch thickness.
- Dip chicken into syrup mixture, then into crumbs.
- Place on greased baking sheet (I use a cooling rack placed on a baking sheet so the chicken gets crispy on both sides).
- Spray top of the chicken with cooking spray.
- Bake 15-20 minutes, turning once (do not have to turn if you place on a rack) until thickest part of the chicken is 165 degrees F and the coating is golden brown.

- Pick any visible fat from off the chicken and wash and dry.
- Dredge the pieces of chicken in the seasoned flour, patting to remove excess flour.
- Heat the olive oil in a large skillet.
- Pan fry the chicken, presentation side first, in the hot olive oil until nicely browned on both sides.
- While the chicken is browning, combine the remaining ingredients in a measuring cup.
- Remove the browned chicken from the pan and place in a shallow casserole dish.
- Add the sauce ingredients, scraping to deglaze the pan, then pour over the chicken in the dish.
- Bake in a 350*F oven for 20 minutes until nicely glazed and the chicken is cooked through.

- CHICKEN:.
- In a large skillet brown both sides of chicken (skin side down first) in the butter.
- Add orange juice, honey, onion, pepper, and salt.
- Cover pan allowing steam to vent and simmer for 30 minutes (or just untill chicken is tender).
- Remove chicken from pan and arrange over rice. Keep warm. Return pan to range top.
- SAUCE:.
- Stir wine into flour until well blended. Add to reserved pan drippings stirring constantly untill flour has a chance to cook.
- Add orange peel and sections and pecans and heat thoroughly.
- Serve immediately over chicken and rice.
