I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

¼ cup maple syrup
2 tablespoons orange juice
2 tablespoons soy sauce
1 teaspoon ground ginger

4 oz salmon fillet, 2 fillets
fresh parsley, for garnish
1 lb broccoli floret
salt, to taste
2 tablespoons butter
1 tablespoon soy sauce
1 clove garlic, minced

Steps:

  • For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
  • For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
  • In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
  • Set aside 2 tablespoons for topping later.
  • Place salmon fillets inside the bowl and make sure each side is covered with sauce.
  • Sear the salmon 2-3 minutes on each side.
  • Brush the tops with the sauce set aside.
  • With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
  • Drain under cold water to stop the cooking.
  • In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
  • On each plate, serve a filet of salmon and scoop of broccoli.
  • Top with reserved marinade and sprinkle parsley for garnish.

3/4 cup maple syrup
1/4 cup soy sauce
4 (6-ounce) salmon fillets, skin removed
1/4 cup coarsely ground black pepper (Grind it yourself, or purchase "cracked" pepper at your grocery store)
1/2 teaspoon peanut (or other vegetable) oil, or a spritz of oil spray

Steps:

  • In a re-sealable bag or a small deep bowl, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers fish. Marinate in the refrigerator for as long possible (a minimum of 4 hours, but ideally 24 hours to do it justice).
  • Preheat oven to 500 degrees F.
  • Rub oil on a 10 by 10-inch sheet of aluminum foil.
  • Place pepper on a small plate. Remove salmon from marinade and pat topside only into cracked pepper to coat. Place fillets, pepper side up, on foil.
  • Bake on the top rack of the oven for approximately 7 minutes. (Syrup may cause fish to smoke when cooking, do not be alarmed.) Salmon can also be grilled directly over hot coals for about 3 minutes per side. But do not even think about using a microwave. Avoid overcooking the fillets. Salmon is best when the color has turned to a pale pink, but the fish is still moist throughout. Serve immediately on warmed plates.

1/4 cup canola oil
4 tablespoons apple cider vinegar

2 tablespoons Dijon mustard

1/2 teaspoon celery salt
Kosher salt and freshly ground black pepper

2 pounds Brussels sprouts, trimmed

Steps:

  • Whisk together 2 cups water, the maple syrup, salt and whole peppercorns in a bowl. Add the salmon, place a piece of plastic wrap over and place a plate on top to keep submerged. Refrigerate for 1 hour.
  • Remove the salmon from the brine. Pat the salmon dry with paper towels and place on a baking rack set over a baking sheet place in a cool, dry place (not the refrigerator) until the surface of the fish is dry and matte-like, 1 to 3 hours depending on humidity. A fan may be used to speed the process.
  • Combine the maple syrup, mustard and crushed pink peppercorns.
  • Prepare the ceramic cooker: Remove the grill grate and ceramic plate from the cooker. Scatter the soaked wood chips over the top. Adjust the cooker to maintain a temperature of 150 to 160 degrees F. This temperature should be maintained throughout the entire smoke. Put on the ceramic plate. Smoke until the thickest part of the fish registers 150 degrees, about 1 hour 30 minutes. Start brushing with the glaze every few minutes for the last 15 minutes of the smoking process.
  • Serve the salmon with the Brussles Sprouts Slaw.
  • Whisk together the oil, vinegar, lemon juice, mustard, maple syrup, celery salt and some salt and pepper in a large bowl.
  • In a food processor with a grater attachment, shred the Brussels sprouts. (If you do not have a food processor you could grate by hand or cut very thinly with a knife.) Transfer to the bowl with the dressing. Add the radicchio and chives and toss to combine. Cover and refrigerate for at least 30 minutes before serving (to allow the sprouts to break down and soften). Add the walnuts before serving.

20 ounces salmon fillets, about 1 inch thick
3 tablespoons pure maple syrup
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 tablespoon shallot, finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons fresh rosemary, snipped

Steps:

  • In a small saucepan, combine maple syrup, vinegar, lemon juice, mustard, shallot, salt and pepper.
  • Heat maple syrup mixture to boiling; reduce heat. Simmer uncovered, about 5 minutes, or until syrupy. Remove from heat ; stir in rosemary.
  • Preheat broiler. Place fish on the greased unheated rack of a broiler pan and brush with half of the glaze. Broil 6-7 inches from heat for 5 minutes. Turn fish over; brush with remaining glaze. Broil for 3 to 5 minutes more, or until fish begins to flake when tested with fork.

1/4 cup ruby red grapefruit juice
2 tablespoons balsamic vinegar
2 tablespoons maple syrup
2 garlic cloves, minced
2 teaspoons olive oil
4 salmon fillets (4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Fresh thyme sprigs, optional

Steps:

  • In a small saucepan, bring the grapefruit juice, vinegar, syrup and garlic to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Transfer 2 tablespoons to a small bowl; add oil. Set remaining glaze aside. , Sprinkle salmon with salt and pepper; place skin side down on grill rack. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4-6 in. from the heat until fish flakes easily with a fork, 10-12 minutes, basting occasionally with maple-oil mixture. Drizzle with reserved 2 Tbsp. glaze. If desired, garnish with fresh thyme sprigs.,

DH saw an advertisement and thought this sounded good. I did some digging and found a recipe that I could modify. Serve with rice to absorb the wonderful sauce.

Number Of Ingredients 10

6 (5 ounce) salmon fillets
1/2 cup dry tart cherries
1/3 cup cherry juice
1 -2 tablespoon olive oil
kosher salt (to taste)
black pepper, freshly cracked (to taste)
1/3 cup maple syrup
1 cinnamon stick
2 cups cherry juice
1/2 teaspoon vanilla

Steps:

  • Make the glaze by bringing the cherry juice to a simmer in a non-reactive saucepan and reduce to 1/2 cup.
  • Add the remaining ingredients; bring to a quick boil, reduce temperature and simmer for 10 minutes. Remove cinnamon stick and stir in vanilla.
  • Cool to room temperature and then chill.
  • Preheat grill on highest setting; rub the salmon with oil; season with salt and black pepper.
  • Divide the glaze using half to baste the salmon while cooking and the other half to drizzle over the salmon when serving.
  • Before cooking the salmon, place the 1/3 cup cherry juice and dry tart cherries in a small saucepan, bring to a boil, turn off heat, cover and allow to stand to reconstitute while the fish cooks.
  • Place the salmon on the grate and turn down the flame to the medium setting; baste the salmon with the glaze and grill for approximately 6 minutes on each side or until it flakes easily.
  • Drizzle the salmon with the cherry glaze and top with reconstituted cherries.
