3 envelopes active dry yeast
1/3 cup warm water (105 to 115 degrees F)
2 cups lukewarm milk
2/3 cup white sugar
1/4 cup and 3 tablespoons shortening, plus 6 cups for frying
1 1/4 teaspoon kosher salt
3 eggs
6 2/3 cups all-purpose flour
Maple Glaze, recipe follows
1 pound hickory smoked bacon, cooked and finely chopped
2 to 3 cups powdered sugar
1/8 cup dark corn syrup
1/8 cup maple syrup
1 teaspoon maple extract
Pinch salt

Steps:

  • Sprinkle the yeast over the warm water and let stand until foamy, about 5 minutes.
  • In a large bowl of a stand mixer or using an electric mixer, mix together the yeast mixture, milk, sugar, shortening, salt, eggs and 2 cups flour. Mix for a few minutes at low speed, or stirring with a wooden spoon.
  • Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead until smooth and elastic, about 5 minutes Place the dough into a greased bowl and cover. Set in a warm place to rise until doubled in size. The dough is ready if you touch it and the indention remains.
  • Turn the dough out onto a floured surface and gently roll out to 1/2-inch thickness. Cut with a floured donut cutter. Let the donuts sit out to rise again until doubled in size. Cover loosely with a cloth.
  • Heat the shortening in a deep-fryer or large heavy skillet to 370 degrees F. Slide the donuts into the hot oil using a wide spatula. Turn the donuts over as they rise to the surface. Fry on each side until golden brown. Remove from the oil and drain on a wire rack.
  • While hot, dip the donuts into Maple Glaze, then into bacon pieces and set onto wire racks to drain off excess.
  • Mix 2 cups sugar, corn syrup, maple syrup, maple extract and salt into mixer. Mix well, 15 to 20 minutes. Add additional cup of powdered sugar to get to desired thickness. You may also add additional maple extract for desired taste.

4 cups all-purpose flour
1 ⅓ cups white sugar
2 tablespoons baking powder
2 teaspoons baking powder
1 ½ teaspoons salt
1 cup unsalted butter, cubed
1 ½ cups heavy cream
⅓ cup maple syrup
4 slices cooked bacon, chopped
2 cups powdered sugar
2 tablespoons maple syrup
2 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, 2 tablespoons plus 2 teaspoons baking powder, and salt in a bowl. Add butter and cut in with your hands or a pastry blender until crumbly with all pieces of butter smaller than a small bean. (You can use a food processor.) Make a small well in the center of the mixture.
  • Pour cream, maple syrup, and chopped bacon into the well. Combine with your hands, working quickly so butter does not melt, until the dough sticks together. Divide dough into 12 equal portions. Roll and gently press each portion into a scone about the size of your palm; place on a baking sheet.
  • Bake in the preheated oven until tops spring back when lightly touched, 20 to 25 minutes. Remove from the oven and transfer to a wire rack.
  • Mix powdered sugar, maple syrup, and milk for glaze together in a bowl until smooth. Drizzle over scones.

8 slices bacon
2 tablespoons pure maple syrup

Steps:

  • Preheat oven to 400 degrees. On a parchment-lined rimmed baking sheet, arrange bacon in a single layer. Bake until fat is rendered and bacon is beginning to brown, 15 to 18 minutes. Carefully remove from oven and brush with pure maple syrup. Bake until bacon is browned and sticky, 3 to 5 minutes. With tongs, transfer to a wire rack, then set rack on baking sheet and let bacon drain. Serve warm.

½ cup unsalted Gay Lea Butter, softened
2 tablespoons icing sugar
Pinch salt
½ cup chopped, crispy bacon
2 tablespoons finely chopped chives
1 cup all-purpose flour
2 tablespoons rice flour
1 tablespoon pure maple syrup

Steps:

  • Grease an 8-inch (20 cm) square baking pan; reserve. In a large bowl, beat the butter with the sugar and salt using an electric mixer, for 2 minutes or until light and fluffy.
  • Add the bacon and chives; mix until evenly distributed. Combine the all purpose flour with the rice flour. Add the flour mixture to the butter mixture; stir until just combined.
  • Press the dough, in an even layer, into the prepared pan. Cover and chill for 30 minutes or until firm.
  • Preheat oven to 325 degrees F (160 degrees C).
  • Lightly score the dough with a knife into 16 squares (do not cut all the way through the dough). Brush the top with maple syrup.
  • Bake for 25 to 35 minutes or until set and lightly golden. Immediately cut through the scored wedges. Transfer pan to a wire rack and cool completely.
