3 tablespoons unsalted butter, melted
1/4 cup maple syrup
2 tablespoons brown sugar
2 tablespoons brandy
8 ripe pears, either Anjou, Bartlett, or Comice
1/4 cup dried cranberries
2 cups fat-free vanilla frozen yogurt
1/4 cup granola

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 13 by 9-inch baking dish, combine the butter, maple syrup, brown sugar, and brandy. Peel the pears, halve lengthwise, and remove the seeds with a melon baller or teaspoon. Add the pears to the baking dish and coat with the maple mixture. Arrange the pears cut-side down, and bake until tender, about 50 minutes, basting occasionally. Meanwhile, put the cranberries in a small bowl and cover with hot water; set aside until plump. Drain and coarsely chop the cranberries.
  • Transfer the pears to plates. Pour the baking juices into a small bowl, and whisk in 1 or 2 teaspoons of water to blend into a sauce. Top each pear with a small scoop of frozen yogurt, and scatter granola and cranberries over the pears. Drizzle the syrup over the top. Serve immediately.

Simple Maple Vanilla Baked Pears image

4 ingredient super simple maple vanilla baked pears that are cooked until warm and soft, completely infused with maple and vanilla, and topped with crunchy granola.

4 D'Anjou pears (aka Anjou pears)
1/2 cup (120ml) pure maple syrup
1/4 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
optional toppings: maple almond granola, Greek yogurt

Steps:

  • Preheat oven to 375°F (190°C). I don't line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
  • Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. Sprinkle evenly with cinnamon- feel free to add more cinnamon if you'd like.
  • Whisk the maple syrup and vanilla extract together in a small bowl. Drizzle most of it all over the pears, reserving about 2 Tablespoons for after the pears are finished baking.
  • Bake pears for about 25 minutes until soft and lightly browned on the edges. Remove from the oven and immediately drizzle with remaining maple syrup mixture. Serve warm with granola and yogurt. Store leftovers in the refrigerator for up to 5 days.

2 tablespoons butter
4 bosc pears, peeled, halved and cored
3 tablespoons maple syrup
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup apple juice
2 tablespoons brown sugar
1/3 cup dried cranberries
1 pinch salt
1/2 cup toasted pecans

Steps:

  • Preheat oven to 400 degrees. Melt 2 tablespoons butter in an oven-safe skillet over medium heat.
  • Cook pears (cut side down) until beginning to brown, about 5 minutes.
  • Flip pears over and transfer skillet to oven. Bake for 20 minutes, until pears are soft. Transfer pears to serving platter.
  • Meanwhile, in a small bowl, whisk together maple syrup, cinnamon, vanilla, apple juice, brown sugar, cranberries and salt.
  • Pour mixture into skillet and bring to a low bowl. Then reduce and cook over medium-high heat, stirring frequently, until sauce reduces and thickens, 5-7 minutes. Cool slightly.
  • Pour warm sauce over pears. Top with pecans and serve.

3 pears, such as Bartlett or Bosc, peeled, halved, cored, and cut into slices
3 cups (12-ounce bag) cranberries, picked over and rinsed
1 cup maple syrup
2 tablespoons orange juice
1 tablespoon grated orange peel
1/2 teaspoon cinnamon
Freshly grated nutmeg to taste
1 1/2 tablespoons cornstarch dissolved in 3 tablespoons water
2 cups all-purpose flour
1 tablespoon sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 stick (1/2 cup) cold unsalted butter, cut into bits
2 tablespoons cold vegetable shortening
1 cup heavy cream
Egg wash made by beating 1 large egg with 1 teaspoon water

Steps:

  • Preheat the oven to 425 degrees F. In a saucepan combine the pears, cranberries, maple syrup, orange juice, orange peel, cinnamon and nutmeg, bring to a boil and simmer, stirring occasionally, for 3 minutes, or until cranberries have popped. Stir in cornstarch mixture and simmer for 1 minute, or until thickened. Let cool. Transfer mixture to a buttered baking dish.
  • Make the dough: Into a bowl sift together the flour, sugar, baking powder and salt. Add the butter and the shortening and blend the mixture until it resembles coarse meal. Stir in the cream and form the dough into a ball.
  • On a floured surface roll the dough into a round large enough to fit the dish, arrange it over the filling and crimp the edge decoratively. Brush the dough with the egg wash, cut steam vents in the center, and bake for 35 to 40 minutes, or until golden brown.

ROASTED PEARS WITH FRESH CRANBERRIES

Oven baked pears with slightly sweet/spiced pink syrup and whole cranberries. I found this recipe years ago in a news paper and clipped it out. Took me a while to make it, but once I did, I knew it was a keeper. I then washed the jeans I was wearing when cooking and melted the news paper. I did a search on the net, but could not find it there. So I had to quickly write down the recipe before I forgot it. So hear it is for me to always have. Hope you enjoy it as well.

4 firm ripe pears, peeled and split in half
1 1/2 tablespoons butter
2 tablespoons red wine vinegar
1/2 teaspoon ground allspice
1/3 cup sugar
1 dash salt
1 cup water
2 tablespoons water
3/4 cup fresh cranberries

Steps:

  • 1. Heat over to 400F, use a baking dish with 1" sides.
  • 2. Lay peeled, split and cored half pears in baking dish cut side down.
  • 3. Mix together 1 cup water, vinegar, salt, spice and sugar. Pour over pears and drop in pats of butter.
  • 4. Bake for 15mins basting the pears once at 7 minutes time.
  • 5. At 15 minutes cooking time, add 2 tablespoons water and cranberries to baking dish, bast pears again.
  • 6. Bake for another 10 minutes, then bast pears. Check with fork to see if pears are tender.
  • 7. If pears are tender then they are done, if not cook another 10-15 minutes.
  • 8. You can add more water if needed. I also add more then 3/4 cup cranberries.
  • 9. This is very good on it own or with vanilla ice cream.
