MAPLE CINNAMON ALMOND CHEX MIX
I decided to play around with a Chex Mix recipe one day and came up with this. I made the mistake of shipping a batch to my husband and some of his fellow soldiers while he was deployed. I learned all about supply and demand after that. I had to make double and triple batches and they still ate it faster than I could make it! Hope you enjoy it as much as we do! It's a definite keeper!

Steps:
- Mix the Cinnamon Chex, Rice Chex and almonds together in a large plastic bowl.
- In a heavy saucepan over medium heat, bring the sugar, corn syrup, salt and butter to a boil. Stir occasionally until it turns golden and coats the back of a spoon, approximately 4 1/2 - 5 minutes.
- Remove from heat and add the extract, stirring well.
- Immediately pour over the cereal mixture and stir to coat.
- Spread onto parchment paper and let cool. Store tightly covered.
- NOTE: This makes a HUGE batch of Chex mix! It can be halved with no problems. Also, maple extract is pretty potent! If you'd like a stronger maple flavor, you can increase to 3/4 teaspoon.
