This is a sweet sauce that goes well with salmon, pork chops, chicken, and probably shrimp, too! The crushed red pepper adds some sweet heat.

¼ cup unsalted butter
2 cloves garlic, minced
⅛ teaspoon crushed red pepper, or more to taste
3 tablespoons bourbon barrel-aged maple syrup
2 tablespoons lemon juice

Steps:

  • Melt butter in a stainless steel skillet over medium heat. Cook, stirring occasionally, until butter turns a golden brown color, 5 to 7 minutes. Butter will foam and then settle down.
  • Add garlic and saute until fragrant, 30 to 60 seconds. Stir in crushed red pepper. Reduce heat to medium-low. Stir in maple syrup and lemon juice until combined.

1 cup Bourbon
1/2 cup cider vinegar
1/2 cup brown sugar
1/2 cup maple syrup
1/4 cup soy sauce
2 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons Frank's red hot sauce
2 teaspoons smoked paprika
2 teaspoons garlic powder
1 teaspoon cumin
1 teaspoon dry mustard

Steps:

  • In medium saucepan over medium-high heat, whisk together all ingredients.
  • Bring to simmer, lower heat to just maintain gentle simmer.
  • Cook until thickened and reduced by half, about 20 minutes.
  • Cool, cover, and refrigerate for up to 2 weeks.

Ice Cream Base
2 quarts heavy cream
1 1/4 egg yolks
1 1/2 cups sugar
Caramel Spice Ice Cream
1 batch Ice Cream Base
2 TB Dulce de Leche
1/2 tsp ground nutmeg
Bourbon Maple Sauce
2 cups Bourbon
1 cup real maple syrup
1/4 cup corn starch
1/2 cup water

Steps:

  • In a large stockpot, heat the cream to 160°, being careful not to boil. While cream heats, in a large bowl whisk your egg yolks and sugar together until smooth. Add a 1/2 cup of the heated cream, while constantly whisking. Continue adding the cream in small increments while whisking until the mixture is smooth and tempered. Run through a fine mesh strainer or chinois to catch any shells or cooked egg pieces. Cool down mixture quickly in an ice bath, and refrigerate for up to 4 days. Ice cream turns out better if this is refrigerated overnight. Over a double boiler, combine the dulce de leche and nutmeg, whisking until the caramel has liquified and is very smooth and without lumps. Slowly whisk in the ice cream base until the mixture is even in color with no caramel chunks. Run the mixture through a strainer and chill before preparing according to your ice cream maker. While ice cream mixes, combine the bourbon and maple syrup in a small saucepan, and bring to a slow boil. Simmer for 2 minutes. In a small bowl, combine the corn starch and water, and mix with a spatula to make a slurry. While bourbon and syrup continue to simmer, slowly drizzle the slurry into the saucepan, while constantly whisking. Turn heat back up and allow mixture to slowly boil until it will coat the back of a spoon. Cool in an ice bath before refrigerating. If mixture ends up runny, make more corn starch/water mixture and boil it into the sauce again. Lightly drizzle sauce over the caramel ice cream for a perfectly spicy and balanced dessert.

Meatloaf With Maple Bourbon BBQ Sauce image

This sweet and savory meatloaf is sure to please. Use the recipe as a base for your own creations. The key is mixing different meats together with vegetables and spices to make a memorable loaf. If the meats listed are too expensive or difficult to get, mix the meats you have available (preferably one fatty and one lean meat at least). Feel free to experiment with spices till you get the right taste for your preferences, but I like mine nice and spicy. You can make it bigger or smaller, just change the amounts of spices and veggies accordingly.

250 g ground pork
250 g ground turkey
250 g extra lean ground beef
250 g ground buffalo meat
1 medium carrot
1 large onion
1/4 cup ground almond meal
1 teaspoon curry powder
1 teaspoon chili powder
1 teaspoon italian seasoning
2 tablespoons garlic powder
2 tablespoons hot sauce
1 cup yellow mustard
2 cups ketchup
1/8 cup maple syrup
1 ounce Bourbon

Steps:

  • Pre-heat oven 425 degrees F.
  • Line a baking pan with tinfoil (to ease clean up). A loaf pan or a roasting pan all work well.
  • Place meats in a large bowl.
  • grate or food process carrot and add it to the bowl with the meat.
  • Finely chop or food process the onion and add it to the bowl with the meat.
  • Add almond meal (finely ground almond flour) to the meat mixture. If this ingredient is not available a finely chopped slice of bread can also suffice. However, the recipe will no longer be gluten free.
  • Add curry powder, chili powder, italian seasoning, garlic powder and hot sauce to the meat mixture.
  • Put a dollop of maple syrup and a dollop of ketchup in the meat mixture (optional).
  • Using your hands, mix the meat mixture together with the spices and vegetables, working it till all the ingredients in the bowl are mixed together. The mixture should be fluffy and wet, but not runny. If the mixture is too loose, add a little more almond meal, but careful not to add too much as it should be moist!
  • Form the meat mixture into a loaf shape in the pan you are using. The loaf should be about a pinky's width away from the sides of the pan, mounded up. If there isn't enough room, use a slightly larger pan. If you fill the pan right up grease will not be able to escape the sides and will overflow from the loaf! It is better to use a too large pan than a too small pan.
  • Put the bowl you mixed the meat in to the side. You can use this later to drain extra grease into.
  • Place loaf into the preheated oven. Set a timer for 40 minutes. Bake uncovered.
  • While the loaf is cooking, whisk together the ketchup, maple syrup, mustard and bourbon to make your BBQ sauce. If you like spicy foods feel free to add some chili flakes or some of your favourite hot sauce.
  • After the meatloaf has baked for 40 minutes, remove it from the oven and carefully drain the liquid from the pan. For ease of not making extra dishes, I suggest using the bowl you mixed the meat into. This liquid will be discarded! Only drain as much as you can safely. Use heat-safe oven mitts while doing this!
  • Pour the BBQ sauce mixture over top of the meatloaf and put it back in the oven for 30 minutes.
  • After 30 minutes insert a meat thermometer into the middle of the thickest part of the loaf. It should read at least 160 degrees F. If it does not, cook it for another 15 minutes and check again.

Pan drippings from meat, about 3 tablespoons (or use bacon fat - mmm)
2 tablespoons flour
1/2 teaspoon chile paste or 1 tsp. Tabasco
1/2 cup water or stock
1/4 cup bourbon or rye
4 tablespoons maple syrup
2 tablespoons heavy cream
Salt to taste

Steps:

  • 1. This sauce starts when you take the meat off to rest. Put the pan over medium heat and add the flour. Stir well to combine and let this cook slowly until it is browned, about 5-8 minutes. Stir often and do not let this burn. 2. Take the pan off the heat and add the bourbon, then return it over medium-high heat. It will thicken and sputter. Stir well, and start adding water, stirring all the way. 3. When the sauce hits a boil, add the chile paste and maple syrup and mix well. Let this simmer down over medium heat for a minute or two. 4. Turn off the heat and let the sauce stop bubbling. Add the heavy cream and stir well. Let this heat up for a minute, then taste it for salt. Serve at once.
