LAMB SHOULDER CHOPS WITH APPLES AND PRUNES



Lamb Shoulder Chops with Apples and Prunes image

This quickly braised lamb brings a bit of French country straight into your kitchen.

Number Of Ingredients 11

1/4 cup brandy
1 teaspoon cider vinegar
10 pitted prunes, chopped
1 Turkish or 1/2 California bay leaf
4 (1/2-inch-thick) lamb shoulder chops (about 1/2 pound each)
1 tablespoon olive oil
1 tablespoon unsalted butter
1 Gala apple, peeled and cut into 1/2-inch pieces
1/4 cup finely chopped shallot
2 garlic cloves, finely chopped
1 cup reduced-sodium chicken broth

Steps:

  • Combine brandy, vinegar, prunes, and bay leaf and let stand until ready to use.
  • Pat lamb chops dry and season with 1 teaspoon salt and 1/2 teaspoon pepper. Heat oil in a 12-inch heavy skillet over high heat until it shimmers. Cook lamb, turning once, 6 to 7 minutes total for medium-rare. Transfer to a plate and let stand, loosely covered. Discard fat from skillet.
  • Add butter and apple to skillet and sauté over medium-high heat until beginning to brown, about 3 minutes. Add shallot and garlic and sauté 2 minutes. Remove from heat and add prune mixture. Boil until liquid is reduced to a glaze. Add chicken broth and any meat juices from plate and simmer, crushing prunes with a fork, until slightly thickened, about 2 minutes. Season with salt and pepper and discard bay leaf. Serve over lamb.

1 tablespoon olive oil
4 shoulder lamb chops
1 large sweet onion, cut in half,and each half quartered
3 medium carrots, cut in half inch circles
3 large celery ribs, with leaves,cut in half inch lengths
1/2 lemon, unpeeled,cut in very thin slices
1/2 cup red wine (sherry or port is good) or 1/2 cup beef broth
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
1 (14 ounce) can tomatoes, diced
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon coriander
4 cloves garlic, smashed
1 tablespoon light soy sauce
1/2 cup cold water
1 tablespoon cornstarch
3 -4 sprigs of fresh mint, leaves removed and rolled up,cut in thin strips

Steps:

  • Trim fat from chops.
  • Heat oil in large deep non stick frypan or Dutch oven; brown chops on both sides, about 5 minutes each side; remove from pan, set aside.
  • In the same pan, add onion chunks, saute until soft, about 5 minutes.
  • Add carrots, celery, salt and pepper and lemon slices, saute until caramelized, 15 to 20 minutes.
  • Stir in wine or broth, bring to simmer and deglaze pan.
  • Meanwhile, empty tomatoes, undrained, into a bowl, add curry powder, cumin, coriander, garlic and soy sauce.
  • Stir to mix, pour tomato mixture into pan; stir to mix with caramelized veggies.
  • Return chops to pan and spoon mixture over them.
  • Bring to boil, reduce heat and simmer covered for 1 hour or until chops are fork tender.
  • Make a slurry of cold water and cornstarch, stir into pan and bring to boil, simmer until juices are thickened.
  • Sprinkle with chopped fresh mint.
  • Serve over mashed potatoes or rice or noodles.

1 tablespoon olive oil
2 pounds lamb shoulder chops, or more to taste
salt and ground black pepper to taste
1 small yellow onion, sliced
4 cloves garlic, minced
2 tablespoons chopped fresh rosemary
1 cup beef broth
1 cup red wine
2 tablespoons cornstarch
½ cup water
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat olive oil in a skillet over medium-high heat. Season lamb chops with salt and pepper. Sear lamb in hot oil until browned, 1 to 2 minutes per side. Remove chops to a plate to drain, reserving drippings in the skillet.
  • Saute onion and garlic in reserved drippings until tender, about 5 minutes.
  • Transfer drained lamb chops to a baking dish; add onion mixture. Sprinkle rosemary over the chops. Pour beef broth and red wine into the baking dish. Cover dish with aluminum foil.
  • Bake in preheated oven for 3 hours.
  • Remove lamb to a serving platter. Carefully drain liquid from baking dish into a saucepan and place over medium heat. Beat cornstarch and water together in a bowl using a whisk to assure no lumps remain; stir into the liquid in the saucepan. Add Worcestershire sauce and cook until the liquid thickens into a gravy, about 5 minutes.

4 lamb blade chops, 2 . 5cm thick
1 1/2 cups beef bouillon or 1 1/2 cups beef stock
1 1/2 cups red wine
6 garlic cloves, sliced
2 tablespoons rosemary
1 teaspoon salt, to taste
1 teaspoon pepper, to taste

Steps:

  • Preheat oven to 160°C.
  • Brown chops in frying pan. Remove and place in a roasting pan.
  • Season one side of the chops with salt and pepper. Top with sliced garlic and rosemary.
  • Mix ½ portion of stock with ½ portion of wine.
  • Pour mixture into side of roasting pan (do NOT pour over meat).
  • Seal tightly with foil and place in center of preheated oven.
  • Cook for approximately 1 hour.
  • Remove chops onto serving plates.
  • Good served over roast garlic potato mash.

O.k....dont blame me but my family love this concotion! A hand mixer comes in handy for making the marinade sauce. Servings depend on how many chops per k.g.! My own concotion and tweaks ......Garlic and chives can be added also and both add great flavours. Cook at your own risk!!! lol

1 small onion, finely chopped
1 piece gingerroot, small knob and finely chopped
1/2 cup brown sugar, firmly packed
1 cup apple juice
1/2 cup lemon juice
1/4 cup oil
1 teaspoon mint, fresh finely chooped
1 teaspoon curry powder
seasoning, to your taste
1 1/2 kg lamb chops
1 tablespoon cornflour
1 teaspoon parsley, fresh finely chopped

Steps:

  • Combne the onion, ginger, sugar, fruit juices, oil, mint, curry powder and seasonings in a bowl and mix well to make a marinade.
  • Place the chops into a shallow dish and pour over the mix from the bowl (marinade.) Leave for at least 4 hours, turning occasionally.
  • Remove the chops from marinade and b.b.q, grill or pan fry chops until cooked. (Whilst cooking make the marinade sauce).
  • Blend the 2 tablespoons of marinade and corn flour and mix until no there are no lumps; add remainder of marinade and add to some heat until sauce boils and thickens, simmer sauce for 3 minutes and serve with or over chops.
  • Sprinkle chops with parsley before serving!

2 tablespoons olive oil
6 round bone lamb chops
1 onion, sliced
1 vidalia onion, sliced
3 cloves garlic, sliced
cumin (optional)
salt and pepper
1 tablespoon sage
1/2 teaspoon rosemary
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon parsley
1/2 cup white wine
1 cup water

Steps:

  • heat oil in large pan on stovetop, med hi heat.
  • add onions and garlic, cook to soften.

8 shoulder lamb chops
salt & freshly ground black pepper
1 tablespoon olive oil
1 cup apple juice
1/2 cup chicken stock
1/3 cup maple syrup
2 tablespoons lemon juice or 2 tablespoons cider vinegar
1 large granny smith apple, peeled and thinly sliced
8 seeded prunes, sliced
salt and fresh pepper, to taste

Steps:

  • Trim the chops of external fat and season to taste with salt and pepper.
  • Heat the oil in a large, heavy based pan and saute the chops on a high heat for 2 minutes each side or until browned.
  • Combine the apple juice, stock, maple syrup and lemon juice and add to the pan.
  • Reduce heat, cover and simmer over a low heat for 30-40 minutes or until lamb is very tender.
  • Remove lamb from pan, cover with foil and keep warm.
  • Boil the remaining juices until thick and syrupy.
  • Return the lamb for a few minutes to heat through and coat well with the sauce.
  • Serve the Lamb chops with the mashed potatoes or squash and spoon the sauce, apples and prunes over the chops.
